A creamy side dish that is baked in a delicious cheese sauce. This is the best broccoli rice casserole you will ever eat!

2 (10 ounce) packages frozen chopped broccoli
3 cups instant rice
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 ¼ cups water
1 (16 ounce) package processed American cheese, cubed
1 tablespoon butter
1 bunch celery, chopped
1 large onion, chopped
salt and pepper to taste

Steps:

  • Cook broccoli and rice according to package directions. Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over low heat, mix cream of mushroom soup, cream of chicken soup, and 1 1/4 cups water. Gradually stir in cheese until melted. Be careful that the cheese doesn't burn.
  • Melt butter in a large skillet over medium-high heat, and cook and stir celery and onion until soft.
  • In a large mixing bowl, combine broccoli, rice, soup and cheese mixture, celery and onion. Season with salt and pepper. Pour mixture into a 9x13 inch baking dish.
  • Bake in the preheated oven for 45 minutes, until bubbly and lightly brown.

1 cup cheese dip
½ cup fresh bread cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cook and stir onion in 1 tablespoon of the butter in large skillet on medium heat until tender.
  • Add rice, soup, broccoli and cheese dip; mix lightly. Spoon into 1-1/2-quart casserole. Toss together remaining 1 tablespoon butter, melted, and bread cubes; sprinkle over casserole.
  • Bake 30 to 35 minutes or until heated through.

1 can (10.75 oz) condensed cream of mushroom soup
1 pkg (10 oz) frozen chopped broccoli, cooked, well drained
1 cup cheese dip
1/2 cup bread cubes
1/2 cup shredded Cheddar cheese

Steps:

  • Prepare rice according to package directions. Step 2
  • Preheat oven to 350°F. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add onion and sauté until tender, about 3 to 5 minutes. Step 3
  • Add rice, soup, broccoli and cheese dip to skillet. Stir to combine. Spoon into a greased, 1 1/2-quart casserole dish. Step 4
  • In a medium, microwave-safe bowl, microwave remaining butter on HIGH for 30 seconds, or until melted. Add bread cubes and mix well. Sprinkle on top of casserole and finish with shredded cheese. Step 5
  • Bake for 30 to 35 minutes, or until heated through. Recipe Tips For a more filling meal, mix 2 cups of shredded, cooked chicken or shrimp into the skillet before adding to the casserole dish. Or, serve this side dish with a lean cut of cooked meat, fish or poultry and a mixed green salad tossed with your favorite dressing. To enhance the flavor even more, sauté 1 package (8 oz) sliced mushrooms along with the onion.

3 cups cooked rice

Steps:

  • Preheat oven to 325°. In a large skillet, melt butter over medium-high heat. Add onion, celery and broccoli; cook and stir until crisp-tender, 3-5 minutes.
