HEALTHIER BROCCOLI POTATO CASSEROLE
This healthy broccoli potato casserole with light cheese sauce makes a perfect light main meal or a side dish for other main courses.

- Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
- Precook vegetables: Peel the potatoes and cut them into cubes. Bring a large pot of water to a boil, add some salt and cook the potatoes for about 5 minutes. In the meantime, divide the broccoli head into florets and chop the stem into cubes. Add to the potatoes and cook everything for another 5 minutes. Drain well and place the vegetables into a casserole dish of about 32x23 cm/ 12x9 inches.
- Sauce: Warm the vegetable stock in a small pot, remove from the heat and whisk in the cream cheese until completely melted. In a small bowl, mix the milk and the flour until smooth, add it to the vegetable stock-cream cheese mixture and bring everything to a boil while stirring all the time. Remove from the heat, add the chives, salt, pepper, and curry powder to taste.
- Bake: Pour the sauce over the vegetables, sprinkle the casserole with the grated cheese, and bake for about 20 minutes until bubbling and golden.

- Whip together first 5 ingredients, salt and pepper, and 1/2 cup onions.
- Spread potatoes over bottom and up sides of 8 x 12 inch baking dish to make shell.
- Bake uncovered, for 25 minutes at 350*.
- Cook broccoli and drain.
- Arrange in potato shell.
- Sprinkle with cheese and the rest of the french fried onions.
- Bake 5 minutes longer.

Got this recipe from my cousin (CrystalB -- chef #139350), who got it from a Company's Coming cookbook. A perfect side-dish for an Oriental meal -- mildly flavoured, slightly sweet.... just a great way to serve broccoli!!

- Cook onion and broccoli in boiling water for 8 minutes. Drain and put in a large casserole dish.
- Melt 2 tbsp butter over low heat. Add flour, salt & pepper. Add milk, stirring until thick and bubbly. Add the cream cheese, stirring until melted. Pour sauce over veggies. Sprinkle grated cheese over top.
- Cover and bake at 350 degrees for 30 minutes. While cooking, melt 2 tbsp butter and mix with the breadcrumbs.
- After 30 minutes, add the breadcrumbs to the casserole and bake uncovered for another 30 minutes.
