Number Of Ingredients 6

1 large russet potato, peeled and cut into 1-inch chunks
1 pound broccoli florets
1/2 cup chicken broth
4 ounces cream cheese
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Fill a large pot with enough water to come 2 inches up the sides of the pot. Set a steamer rack in the pot, cover, and bring the water to a boil over high heat. Add the potato chunks and cook until they are very tender, about 18 minutes. Transfer the potatoes to a medium bowl and mash until smooth.
  • Place broccoli into steamer rack and steam over medium heat until the broccoli is very tender, about 12 minutes. Transfer the broccoli to the bowl of a food processor. Add the broth, cream cheese, and Parmesan. Process until the broccoli is pureed and almost smooth.
  • Stir the broccoli puree into the mashed potato and blend well. Season the puree to taste with salt and pepper, and serve.

20 ounces broccoli stems, thawed
1/4 cup onion, grated
10 1/2 ounces condensed cream of mushroom soup
1 cup sour cream
1/3 cup parmesan cheese
1/4 cup herb seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees.
  • Place UNCOOKED broccoli in a 1 1/2 qt casserole.
  • Mix onion, soup, sour cream and Parmesan cheese.
  • Spread over broccoli.
  • Top with bread crumbs.
  • Bake for 35 minutes or until broccoli is just tender.

Salt to taste
3 tablespoons butter
1/2 teaspoon finely minced garlic
Freshly ground pepper to taste
1/4 teaspoon freshly grated nutmeg
2 tablespoons freshly grated Parmesan chees

Steps:

  • Trim and cut the broccoli into florets. If the stems are large, trim and cut them into large bite-size pieces. There should be about 6 cups.
  • Put the broccoli pieces in a saucepan with water to cover and salt. Bring to a boil and simmer about 10 minutes or until tender but not mushy. Drain.
  • Put the broccoli in a food processor and puree it. Or, preferably, put it in a conical food mill and press it through into a saucepan.
  • Heat the puree gently while stirring in the butter, garlic, salt, pepper, nutmeg and cheese. When piping hot serve immediately.

Admit it. Broccoli, that ubiquitous vegetable side dish, gets old. This take, which Pierre Franey brought to The Times in 1987 as part of his 60-Minute Gourmet column, will not. It is not much different - and no more difficult - than your standard broccoli sauté except for the addition of anchovies. If that word normally frightens you, fear not. Here, they are barely detectable as such, but provide a complex salinity that salt alone cannot. You'll never eat boring broccoli again.

1 bunch of broccoli, about 1 1/4 pounds
Salt to taste
3 tablespoons olive oil
1 teaspoon finely minced garlic
1/4 teaspoon dried hot red pepper flakes
1 teaspoon anchovy paste or 4 anchovies, smashed into a paste

Steps:

  • Cut off the broccoli tops into individual florets. Cut the stems crosswise into 2-inch lengths. Trim off the outside of the stems and cut the trimmed pieces diagonally into 1/4-inch slices. There should be about 6 cups in all.
  • Bring enough water to a boil to cover the broccoli when it is added. Add salt and the broccoli pieces and cook 3 minutes. Drain.
  • Heat the oil in a skillet and add the broccoli pieces. Cook, stirring, over relatively high heat, and add the garlic, pepper flakes and anchovy paste. Cook, tossing and stirring the ingredients together, about 1 minute. Serve.

Everyone seems to enjoy pie for dessert. But I surprised my family the first time I brought this pie to the table as the main course! They loved it and asked for it again and again.

1 large onion, chopped
3 tablespoons vegetable oil
4 large eggs, lightly beaten
4 cups chopped fresh broccoli, cooked
2 cups shredded mozzarella cheese
1 carton (15 ounces) ricotta cheese
1/3 cup grated Parmesan cheese
1/4 teaspoon salt
Dash ground nutmeg
1 unbaked pie pastry (9 inches)

Steps:

  • In a skillet, saute onion in oil until tender, about 5 minutes. Transfer to a large bowl; add eggs, broccoli, cheeses, salt and nutmeg. Pour into pie shell. Bake at 350° for 50-55 minutes or until a knife inserted in the center comes out clean.

  • Cut and trim broccoli into florets. If stems are large, trim them and cut them into fairly large bite-size pieces. There should be about six cups.
  • Put broccoli pieces in saucepan and add cold water to cover and salt to taste. Bring to boil and let simmer about 10 minutes or until tender but not mushy. Drain.
  • Put broccoli into the container of food processor and process or, preferably, into conical food mill and press through into a saucepan.
  • Heat gently while stirring in butter, garlic, salt, pepper and cheese. When piping hot, serve immediately.

  • In a pot large enough to hold all of the broccoli, melt half of the butter over medium heat. Add the onions and cook, stirring frequently, until soft, 3 to 4 minutes. Add the water, salt, and pepper and stir with a wooden spoon to combine. Add the broccoli and bring the liquid to a boil; cover the pot tightly and reduce the heat to low. Cook until the broccoli is tender, about 15 minutes.
  • Transfer all of the contents of the pot, including the liquid, to a food processor fitted with the steel blade. Add the remaining butter and the thyme and process until broken down but not completely smooth. Add the sour cream and process again until smooth. Taste and adjust the salt, if necessary (I usually add up to 3/4 teaspoon more salt). Transfer to a serving bowl, and top with a pad of butter, if using, and chives. (Note: if your food processor is small, you may need to work in batches.)
  • Make-Ahead Instructions: The purée can be made up to 3 days ahead of time and refrigerated. Reheat in the microwave or on the stovetop.
