Grilled Ham-and-Broccoli-Rabe Sandwiches image

A few tweaks transform the old-school grilled ham and cheese.

1 bunch broccoli rabe, trimmed
Coarse salt
1 tablespoon extra-virgin olive oil
1 clove garlic, thinly sliced
2 tablespoons plus 2 teaspoons fig jam
8 slices best-quality white bread
1 tablespoon plus 1 teaspoon Dijon mustard
8 ounces fontina, thinly sliced
8 ounces sliced ham
Unsalted butter, room temperature, for brushing

Steps:

  • Blanch broccoli rabe in batches in a pot of salted boiling water until just tender, about 2 minutes. Drain.
  • Heat oil in a large skillet over medium heat. Add garlic; cook, stirring, 30 seconds. Add broccoli rabe; cook, stirring, 2 minutes. Season with salt. Let cool slightly, then finely chop.
  • For each sandwich, spread 2 teaspoons jam on one bread slice and 1 teaspoon mustard on another. Layer one slice with cheese, broccoli rabe, and ham, dividing evenly. Close sandwich; brush each side with butter.
  • Heat a large cast-iron skillet over medium heat. Cook sandwiches in batches until golden brown, flipping once, about 3 minutes a side. Serve immediately.

An idea of mine that stemmed from wanting a grilled cheese sandwich and then later thinking about broccoli and cheese and deciding to put them together, which came out very good!

3 tablespoons butter, divided
¾ cup frozen chopped broccoli, thawed
¼ cup finely chopped sweet onion (such as Vidalia®)
4 slices whole grain sliced bread
4 slices sharp Cheddar cheese
¼ teaspoon garlic powder

Steps:

  • Melt 1 tablespoon butter in a skillet over medium heat. Add broccoli and onion and cook until softened, about 5 minutes. Remove from heat and let cool.
  • Distribute sauteed vegetables evenly on 2 slices of bread. Place 2 slices Cheddar cheese over the vegetables, season with garlic powder, and top with remaining 2 slices of bread.
  • Melt 1 tablespoon butter in a nonstick skillet over medium-high heat, tilting the skillet to distribute the butter evenly as it melts. Place the sandwiches into the skillet and cook until the bottom piece of bread is golden brown, about 5 minutes.
  • Melt remaining butter in the skillet. Carefully flip each sandwich, evenly coating the bread with melted butter. Cook until each sandwich is golden brown, 2 to 5 minutes more.

This quiche has great flavor and can be used for breakfast, lunch, or dinner. It tastes just as great the next day for leftovers! Use your favorite cheese!

1 (9 inch) unbaked pie crust
1 (10 ounce) package frozen broccoli florets
2 tablespoons butter
1 onion, minced
1 teaspoon garlic, minced
1 ½ cups diced cooked ham
1 ½ cups shredded Cheddar cheese
1 cup milk
4 eggs, beaten
½ teaspoon ground black pepper
1 teaspoon smoked paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Press the pie crust ito a 9-inch pie plate; set aside.
  • Place broccoli in a glass bowl. Cover bowl with plastic wrap. Cook broccoli in microwave in 1-minute intervals until evenly heated through, about 5 minutes total; set aside.
  • Melt butter in a large saucepan over medium heat. Saute onion and garlic in melted butter until slightly translucent, about 5 minutes.
  • Stir ham and broccoli into the onion mixture and transfer to the pie crust.
  • Beat Cheddar cheese, milk, eggs, and black pepper together in a bowl; pour over the ham mixture. Sprinkle paprika over the entire quiche.
  • Bake in the preheated oven until a knife inserted into the center of the quiche comes out clean, 30 to 45 minutes.

I love making this easy grilled ham and cheese sandwich on a cool night with a cup of tomato soup.

2 slices whole grain bread
2 teaspoons butter
2 slices Swiss cheese
2 thin slices deli ham
1 teaspoon mayonnaise
1 teaspoon whole grain mustard

Steps:

  • Preheat a skillet over medium-high heat.
  • Spread one side of each slice of bread with 1 teaspoon butter. Place one slice, butter-side down in the hot skillet. Top with Swiss cheese and ham. Spread the unbuttered side of the second slice of bread with mayonnaise and mustard; place it, butter-side up on top of the sandwich. Cook until the sandwich is golden brown and the cheese is melted, about 3 minutes per side.

I had the broccoli, ham and cheese, but no cream soup, so I took a couple existing recipes and improvised. Also, I used Jarlsberg cheese, but Swiss or any favorite cheese could be used.

Number Of Ingredients 13

1 medium onion, chopped
1 garlic clove, minced
3 tablespoons butter or 3 tablespoons olive oil
3 tablespoons flour
1 cup milk
salt
pepper
1 cup brown rice, cooked
1 cup ham, diced (can use more)
3 cups broccoli florets, steamed
1 cup broth, chicken (or vegetarian)
1 cup cheese (shredded or cubed, I use Jarlsberg, your choice)
1 cup onion rings, french fried

Steps:

  • Preheat oven to 350 degrees F.
  • Cook onions in butter until almost soft, add garlic and cook all until soft.
  • Sprinkle flour over butter/onion mixture, stir to form a roux.
  • Slowly pour in milk and broth. Stir until somewhat thickened. Add cheese, salt and pepper. Continue to stir until thickened.
  • Spread ham, broccoli and rice in 9x9 glass casserole pan (or similar).
  • Pour cheese mixture over top.
  • Bake for 15 minutes.
  • Sprinkle fried onions on top. Bake for another 15 min until cheese is bubbling but not burnt!
  • Note: I was out of milk and didn't want to cook rice or broccoli ahead of time. I did the onion - flour steps the same, then upped the liquid (3 Cups broth) and just added the raw rice and broccoli to the pan, let the mixture of stuff come to a boil, then simmered for a few minutes; stirred in the cheese; sprinkled the onions on top; baked for 20min. Yum!

  • If desired, spread a small amount of mayonnaise on the bread. Top your sandwich with this last piece of bread.
  • Make the second sandwich, then cook both over low-medium heat with avocado or olive oil. Cook until the bread is browned on one side, then flip and cook until the other side is done to your preference and the cheese is beginning to melt.
