I know this sounds a little different, I thought so too when my friend had me over for breakfast. You won't be disappointed...my DH even loves them! I have also used egg beaters for a lighter touch. This is now my favorite way to eat eggs!

4 eggs, large
1 cup broccoli florets, fresh broccoli or 1 cup frozen broccoli
1 tablespoon water or 1 tablespoon vegetable oil
salt & pepper
ketchup
shredded cheese (optional)

Steps:

  • Heat oil or water over medium heat in a frying pan (this tastes just as good without the oil, if using frozen broccoli you don't need as much water, spray the pan with cooking spray)
  • In a small bowl beat eggs
  • Add broccoli to the warm frying pan and cover for 2-3 min or until broccoli starts getting soft.
  • Stir occasionally.
  • Pour eggs over broccoli, add S & P to taste and cook until eggs are fluffy and cooked through, stirring occasionally.
  • You don't want the broccoli too soft.
  • Add cheese if you like and cover until melted.
  • Serve with ketchup.

  • Add broccoli with cheese sauce; cook 1 minute, stirring constantly.

1 (10 ounce) package frozen broccoli florets, thawed
3 tablespoons butter, melted
salt and pepper to taste
½ cup shredded Cheddar cheese

Steps:

  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and transfer to a microwave safe casserole dish.
  • Pour melted butter over broccoli (use more or less, to taste) and season with salt and pepper. Sprinkle cheese over the top and microwave, on high, for 1 minute, or until cheese is melted.

Broccoli is simmered in a cheesy sauce before being baked with a crunchy topping for a flavorful side dish even your kids will enjoy.

½ cup all-purpose flour
¼ cup bread crumbs
¼ cup grated Parmigiano-Reggiano cheese
1 teaspoon Chinese five-spice powder
1 ½ tablespoons cold butter
1 head broccoli
3 tablespoons butter
1 small onion, sliced
1 clove garlic, minced
2 tablespoons cornstarch
½ teaspoon ground black pepper
¼ teaspoon ground nutmeg
1 ¼ cups milk
½ cup grated Cheddar cheese, divided

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix flour, bread crumbs, Parmigiano-Reggiano cheese, and five-spice powder together in a bowl. Cut in 1 1/2 tablespoons butter using your fingers until mixture resembles pebbles. Cover and refrigerate until needed.
  • Cut the stem off the broccoli and use a spiralizer to cut into ribbons. Cut the head into florets.
  • Melt 3 tablespoons butter in a large saucepan over medium heat. Add onion and garlic; saute until translucent, about 4 minutes. Add cornstarch, pepper, and nutmeg; mix well until roux begins to brown, 3 to 4 minutes. Add milk, stirring continuously, and continue to cook until sauce begins to thicken, 3 to 4 minutes more. Mix in 1/4 cup Cheddar cheese. Stir in broccoli until thickened, 2 to 3 minutes. Pour mixture into a baking dish.
  • Top mixture with remaining Cheddar cheese. Sprinkle crumble mixture evenly over the top. Reduce the oven temperature to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until the crumble has browned and sauce is bubbling, about 20 minutes.
