This broccoli swiss cheese casserole side dish is not only easy to prepare, but so delicious, they'll come back for seconds.

Number Of Ingredients 8

3 10 oz. frozen chopped broccoli, thawed
1 small onion (finely chopped)
1 10.75 oz. cream of mushroom soup
1 egg
1/2 cup mayonnaise
1-2 cups shredded swiss cheese
1/2 cup plain bread crumbs
2 tbsp butter

Steps:

  • Preheat oven to 350 degrees F. Lightly spray or grease a 1.5 quart baking dish.
  • Drain chopped broccoli well. Set aside.
  • In a large bowl, lightly beat the egg. Add the soup, onion and mayonnaise. Whisk together well.
  • Add the drained chopped broccoli and the cheese. Spoon mixture into prepared baking dish.
  • Mix the bread crumbs with the melted butter, mixing well to make sure they are all coated with butter. Sprinkle buttered crumbs on top of casserole.
  • Bake at 350 degrees F for 35-40 minutes or until casserole is bubbly.
  • Serves 4.

Editor's Note: Broccoli and cheese casseroles are just about as American as apple pie. This simple combination of ingredients is one of the most popular casseroles out there. This classic dish is perfect for the family on a weekday night. The best thing about Addie's broccoli cheese bake is that in addition to the typical cheddar cheese, it calls for swiss cheese, as well. This extra cheese adds an extra savory taste to the meal. Did you know that broccoli is an invented vegetable? It was actually bred by Italian farmers in the 1700s from several different kinds of cabbage! A member of the cruciferous veggie group along with cauliflower and turnips, this veggie made its way over to America in colonial times. It wasn't until the 1920s that it really gained in popularity, leading us to discovering dishes like Broccoli Casserole that have become staples in the American diet to this day.

1 1/2 pound fresh broccoli (about 8 cups)
1/2 cup (1 stick) unsalted butter
1/2 cup all-purpose flour
1 (12-ounce) can evaporated milk
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 cup grated Swiss cheese
1 cup sour cream
1/2 cup grated cheddar cheese
1/2 teaspoon paprika
1 (4-ounce) sleeve butter crackers, crushed

Steps:

  • Preheat the oven to 350°F. Coat a 9 x 13-inch baking dish with cooking spray.
  • Cut the broccoli florets into bite-size pieces and the tender stems into small dice. Place in a large microwaveable bowl, add 1/2 cup water, cover with plastic wrap, and microwave for about 5 minutes, until the broccoli is tender. Drain well and place in the prepared baking dish.
  • In a small saucepan, melt the butter over medium heat. Add the flour and whisk until the flour has been absorbed and the mixture turns light yellow with large dry bubbles. Add the evaporated milk, salt, and pepper and cook, whisking, until the sauce is thick and coats the back of a spoon, about 3 minutes. Add the Swiss cheese and sour cream and stir until the cheese has melted.
  • Pour the sauce over the broccoli in the baking dish and stir gently. Mix the cheddar cheese, paprika, and crackers and top the casserole in an even layer. Bake for about 40 minutes, until bubbling and the top is golden brown. Slice and serve.

5 cups fresh broccoli, cut into small florets
1 1/2 cups cottage cheese
3 eggs
1/4 cup butter or 1/4 cup margarine, melted
1/3 cup flour
1 (8 3/4 ounce) can whole kernel corn, drained
2 cups shredded swiss cheese
1/4 cup finely chopped onion
salt and pepper
4 drops hot sauce or 1/4 teaspoon cayenne pepper (optional)
2 tablespoons grated parmesan cheese (optional)
8 -10 slices bacon, cooked and crumbled

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-ich baking pan.
  • Cook the broccoli florets, covered in a small amount of boiling water for 7-8 minutes, or until firm-tender (don't overcook); drain well.
  • In a food processor, or an electric blender, combine the cottage cheese, eggs, butter and flour until smooth; set aside.
  • Combine the broccoli, corn, Swiss cheese, chopped onion, salt, pepper, hot sauce (if using); mix well to combine.
  • Stir in the cottage cheese mixture and the 2 Tbsp grated Parmesan cheese (if using).
  • Transfer into prepared baking dish.
  • Sprinkle with the crumbled bacon.
  • Bake for 40-45 minutes.
  • **NOTE**1/8- 1/4 tsp cayenne pepper may be subsituted for the hot sauce, but the hot sauce is definately better!

My brother is a bachelor and even though he cooks for just one, he makes awesome full course meals. He got this recipe from a friend and I had to have it! I have taken this to potluck dinners and have been asked for the recipe. Simple comfort food.

6 tablespoons butter
3 -4 boneless skinless chicken breasts
1 tablespoon onion, minced
1 teaspoon lemon juice
1 cup sliced mushrooms
3 tablespoons flour
2 cups milk
1/2 teaspoon thyme
1/4 teaspoon basil
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup swiss cheese, shredded
2 cups broccoli, blanched 2 minutes
4 cups egg noodles or 4 cups penne pasta

Steps:

  • Cook pasta according to package.Drain well and butter lightly to prevent sticking. Set aside.
  • Cut chicken into bite size pieces.
  • In large frying pan, heat 6 tbsp butter. Add onions and chicken pieces. Cook just until turning white, turn and cook other side.
  • Sprinkle with lemon juice. Add mushrooms and cook over medium heat for about six minutes, turning once. Remove chicken and mushrooms and keep warm.
  • To the juices left in the frying pan, add flour. Cook and stir about 2 minutes.
  • Using whisk, stir in milk and bring to a boil. Lower heat and simmer to thicken.
  • Add spices and half of the cheese. Simmer gently for 5 minutes.
  • Using the same pot that you cooked your noodles in, add the cream sauce and gently stir to coat noodles. Add broccoli, chicken and mushrooms. Fold into the noodles gently.
  • Transfer to a greased 2L baking pan and top with remainder of Swiss cheese.
  • Bake covered at 350F 35-40 minutes.
