BROCCOFLOWER COUSCOUS

1/2 head broccoflower or 1 head Romanesca, broken into tiny florets the size of couscous (about 1 1/2 cups)
1/3 cup fine-brunoise-cut carrots
1/3 cup finely diced grapes
2 tablespoons finely diced apricots
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh cilantro
1 1/2 teaspoons freshly ground coriander seeds
1 teaspoon fresh lavender
1/3 cup extra-virgin olive oil
1/3 cup freshly squeezed orange juice
2 tablespoons champagne or rice vinegar
Celtic sea salt and freshly ground pepper
4 teaspoons Curry Oil
4 teaspoons 25-year-old Villa Manodori balsamic vinegar
Freshly ground pepper
1 tablespoon fresh tiny chervil leaves
2 teaspoons fresh tiny tarragon leaves
2 teaspoons fresh micro basil or flat-leaf parsley leaves

Steps:

  • In a large bowl, combine broccoflower, carrots, grapes, apricots, parsley, tarragon, cilantro, coriander, lavender, oil, orange juice, and vinegar. Season with salt and pepper.
  • Place a shallow 5-inch ring mold in the center of each plate. Fill it to a depth of 1/2 inch with the couscous. Gently press on the couscous with the back of a spoon. Remove the ring mold. Drizzle 1 teaspoon of the curry oil and 1 teaspoon of the vinegar around each plate. Sprinkle with pepper, chervil, tarragon, and basil.

I was looking for recipes with broccoflower on Zaar and only 2 were available. So I found this one on Epicurious. And it looks delicious and I want to share with my Zaar Friends :) The recipe comes from Gary Archer: San Jose, California

1 garlic clove, minced
1/2 teaspoon hot red pepper flakes (to taste)
2 teaspoons olive oil
1 head broccoflower, trimmed (about 2 pounds) or 1 head broccoli, cut into 1-inch flowerets
1 cup water
2 teaspoons balsamic vinegar
1 tablespoon unsalted butter
5 large fresh basil leaves, cut into thin strips
1 tablespoon parmesan cheese, freshly grated

Steps:

  • In a large skillet cook garlic and red pepper flakes in oil over moderate heat, stirring, 1 minute. Add broccoflower and sauté over moderately high heat, stirring frequently, until it begins to brown, about 2 minutes.
  • Add water and cook, covered, 5 minutes, or until broccoflower is just tender. Add vinegar, butter, and salt and pepper to taste and gently toss until butter is melted.
  • Transfer mixture to a serving bowl and sprinkle with basil and Parmesan.

1 head broccoflower or cauliflower (1 1/2 pounds), cut into 2-inch-wide florets
1/4 cup olive oil
3 garlic cloves, thinly sliced
21/2 teaspoons chopped canned anchovies, or to taste
1/4 teaspoon dried hot red pepper flakes
1/4 cuppine nuts, toasted
1/4 cup golden raisins
2 tablespoons chopped fresh parsley

Steps:

  • Cook broccoflower in 2 batches in a 5- to 6-quart pot of boiling salted water< > until crisp-tender, about 5 minutes, then transfer with a slotted spoon to a large bowl of ice and cold water to stop cooking. Drain florets and pat dry with paper towels.
  • Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté garlic, stirring, until golden, about 1 minute. Add anchovies and red pepper flakes and sauté, stirring, until anchovies are dissolved, about 1 minute, then add florets and toss to coat. Add pine nuts, raisins, and salt to taste and sauté, stirring, until heated through, about 2 minutes. Remove from heat and stir in parsley.

This is a recipe I make when I find broccoflower in the stores which isn't too often. I have used cauliflower as a replacement and it comes out just as good.

1 broccoflower or 1 cauliflower
1 cup Bisquick
1/2 cup parmesan cheese, grated
4 eggs, beaten
2 teaspoons chopped fresh parsley
1/2 teaspoon salt
1/2 cup grated onion
1/2 cup vegetable oil

Steps:

  • Preheat oven to 350.
  • Soak broccoflower for 20 minutes in lightly salted water.
  • Cut into flowerets cutting away thick stems.
  • Boil flowerets until soft.
  • Drain and mash throughly.
  • Blend in remainder of ingredients.
  • Spread in greased 9x13 pan.
  • Bake at 350 for about 50-60 minutes.

It is cold out and we had half of recipe #258128 (made with broccoli) and a chicken breast left from last night so what to do but make soup. While I used what was left from recipe #258128 ***you could substitute 1/2 pound broccoli and 1 to 2 teaspoons balsamic vinegar.***

1 1/2 teaspoons olive oil
1/2 large onion, chopped
1 garlic clove, minced
1/2 broccoflower, from Broccoflower Archer (made using broccoli-see note in description for using broccoli in place of Broccoflower Archer)
14 1/2 ounces diced fire-roasted tomatoes
15 ounces chicken broth
1/2 cooked chicken breast, chopped
1/4 teaspoon crushed red pepper flakes (optional depending on your taste)
salt & fresh ground pepper
parmesan cheese (to garnish)
fresh bay leaf (to garnish)

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes.
  • Stir garlic through the onion; cook and stir until garlic is fragrant and slightly soft, another 1 to 2 minutes.
  • Place broccoli, diced tomatoes, chicken broth, chopped chicken and crushed red pepper if using into the stockpot. Reduce heat to medium-low, bring the mixture to a simmer, and cook 20-30 minutes till heated through.
  • Season to taste with salt and pepper, garnish with just a bit of parmesan cheese and one or two fresh bay leafs.

Steps:
