CRANBERRY BEEF BRISKET
"My mother-in-law gave me the recipe for this tender brisket," relates Annette Bartle of Lees Summit, Missouri. It yields a lot, so the leftover beef can be used in the two comforting recipes that follow.

- Preheat oven to 350°. In a large skillet, heat oil over medium heat. Brown brisket on both sides. Transfer to a greased roasting pan. Combine remaining ingredients; pour over beef., Roast, covered, until meat is tender, 3-4 hours. Cut diagonally across the grain into thin slices. If desired, strain cooking juices and serve with brisket.

Adapted from a recipe by Nina Hall at allrecipes.com. Jellied cranberry sauce can be substituted for the whole-berry, but I think the whole-berry makes a much nicer sauce. Note this recipe calls for a fresh beef brisket, not a "corned beef brisket"

Steps:
- Rub brisket with salt and pepper; place in a slow cooker.
- Combine the cranberry sauce, tomato sauce, onion and mustard; pour over brisket.
- Cover and cook on low for 8-10 hours or until meat is tender.
- Remove brisket; thinly slice across the grain.
- Skim fat from cooking juices; serve with brisket. (Reduce sauce in a saucepan if too thin.).

BRISKET WITH CRANBERRY GRAVY
The cranberry gravy is different than we are use to using with brisket. Normally I want to barbeque it, or smoke it, but this makes a nice change. Be sure to slice the brisket ACROSS the grain or it will loose the juices and be dry and tough. The grain does not go through the brisket straight, so be sure to keep turning the beef when the grain changes direction. That is an important secret!

- Rub surface of beef with salt and pepper, and place brisket in 3 1/2 quart or larger crockpot.
- Mix remaining ingredients and pour over beef.
