Jerusalem Artichoke Puree image

Jerusalem artichokes (sometimes marketed as "sunchokes") are a hardy fall root vegetable. Their appealingly offbeat flavor and texture, something of a cross between potatoes and water chestnuts, will appeal to adventurous soup-makers. Barley or Rice Triangles (page 152) complement this soup nicely.

Yield 6 to 8 servings

Number Of Ingredients 13

2 1/2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1 1/2 pounds Jerusalem artichokes, scrubbed, dark knobs trimmed away, and diced
2 medium potatoes, peeled and diced
1/4 cup dry white wine
1 teaspoon good-quality curry powder
One 32-ounce carton low-sodium vegetable broth, or other stock option (page 9)
1 cup rice milk, more or less as needed
2 large leeks, white and palest green parts only
Juice of 1/2 to 1 lemon, to taste
Salt and freshly ground pepper to taste
1/4 cup minced fresh parsley, or more to taste

Steps:

  • Heat 1 tablespoon of the oil in a large soup pot. Add the onion and sauté over medium-low heat until translucent. Add the garlic and continue to sauté until both are golden.
  • Reserve and set aside about one-third of the diced Jerusalem artichokes. Place the rest in a soup pot along with the potatoes, wine, curry powder, and broth. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the vegetables are tender, about 20 minutes.
  • With a slotted spoon, transfer the solid ingredients to a food processor and puree, in batches if necessary, until smooth. Return the puree to the soup pot. Or simply insert an immersion blender into the pot and puree until smooth.
  • Add enough rice milk to give the soup a medium-thick consistency. Return to low heat and simmer very gently.
  • Meanwhile, cut the leeks in half, then into 1/4-inch slices. Separate the rings of the leeks and rinse well to remove grit. Heat the remaining oil in a skillet. Add the leeks and about 2 tablespoons water. Sauté over medium-low heat until limp.
  • Add the reserved artichoke dice to the skillet. Raise the heat to medium and sauté with the leeks, stirring frequently, until both are just beginning to brown lightly. Remove from the heat, then stir the leeks and artichokes into the soup.
  • Season with lemon juice, salt, and pepper. If time allows, let the soup stand for an hour or so before serving, then heat through. Garnish each serving with a sprinkling of parsley.

1 1/2 pounds Jerusalem artichokes, peeled, cut into 1/2-inch chunks
1/2 pound white potatoes, peeled, cut into 1/2-inch chunks
Sea salt
1/2 cup milk
3 tablespoons butter

Steps:

  • Put the artichokes and potatoes in a medium saucepan and cover with cold water by 1 inch. Season with salt and bring to a boil. Lower the heat and simmer until the artichokes and potatoes are tender, about 15 minutes. Drain.
  • Pass the artichokes and potatoes through a ricer or fine sieve back into the saucepan. Stir in the milk. Season to taste with salt and place over low heat. Melt the butter in a small pan over medium heat. Cook, occasionally swirling the pan, until the butter is brown and has a nutty aroma. Stir into the artichokes.

Easy, Crispy Brioche-Crusted Salmon image

For easy, crispy salmon on a weeknight, take a page out of chef Adrienne Cheatham's book and top your fish with a slice of brioche.

4 skinless salmon fillets (8 oz. each)
1½ tsp. kosher salt
1 loaf brioche, unsliced
2 Tbsp. vegetable oil
4 Tbsp. (½ stick) unsalted butter
1 garlic clove, crushed
2 or 3 sprigs of thyme

Steps:

  • Preheat the oven to 350°F with a rack in the center position.
  • Season the salmon fillets with the salt and set aside.
  • Using a serrated knife, trim away the crust from the sides of the brioche loaf, then make four long lengthwise slices that are about ⅛ to ¼ inch thick. Lay a slice of brioche on a cutting board and place a salmon fillet lengthwise in the center; it should fall within the border of the crust. Use your knife to trim away the bread around the salmon. It's best to hold the knife flat against the edges of the salmon and press straight down (using the same motion as with a cookie cutter) to get an even cutout around the fish. Repeat with the remaining fillets and brioche slices, setting the finished fillets brioche-side down on a plate or tray.
  • Heat a large oven-safe skillet over medium heat. Put in the oil and butter; when the butter begins to bubble and foam, gently place the salmon, brioche-side down, in the pan. Work in batches if you can't fit all the fillets in the pan at once. Shake the pan a little to make sure the brioche is not sticking, then scatter the garlic and thyme sprigs around the fish. Cook, swirling the pan occasionally and basting the oil-butter mixture over the fish with a spoon until the bread is golden brown, about 1 minute.
  • Flip the fillets brioche-side up, transfer the pan to the center oven rack, and bake for 3 to 4 minutes, or until the salmon is cooked through but still has a touch of dark pink inside (about 145°F). Keep in mind, it will continue cooking a little even after you remove it from the oven!
  • Blot the fish with a paper towel and transfer to plates, brioche-side up. Serve immediately.

2 cups heavy whipping cream
Coarse kosher salt
1/2 cup (1 stick) unsalted butter, room temperature
3 tablespoons minced fresh Italian parsley
2 tablespoons minced fresh chives
1 1/2 tablespoons minced fresh tarragon
1 teaspoon finely minced lemon peel
1/2 teaspoon coarse kosher salt
1/4 teaspoon ground black pepper
21/2 cups fine breadcrumbs from fresh crustless brioche or other egg bread
1 tablespoon fresh lemon juice
6 6- to 8-ounce turbot or tilapia fillets
Jerusalem Artichoke Pickles

Steps:

  • Working with 1 artichoke at a time, peel and cut into 1/2-inch cubes. Immediately place in bowl of water to prevent browning. Place cream in large saucepan. Drain artichokes; add to pan. Bring to boil, reduce heat to mediumlow, and simmer covered until artichokes are tender and almost all liquid is absorbed, adding water by tablespoonfuls if dry and artichokes are not yet tender, about 25 minutes. Puree in processor. Season with coarse salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover; chill. Serve warm.
  • Combine first 7 ingredients in processor and blend well. Add breadcrumbs; process until ball forms. Add lemon juice; process to blend. Transfer to parchment paper. Spread out to 6- to 7-inch square. Top with second sheet of parchment. Roll out to 10-inch square. Freeze crust in paper until set, at least 15 minutes and up to 8 hours. Remove paper.
  • Preheat oven to 400°F. Cut crust into 6 pieces about the same size as fish fillets. Arrange fish in single layer on rimmed baking sheet. Sprinkle with salt and pepper. Place 1 piece of crust atop each fillet. Roast until fish is cooked through and crust is browned around edges, about 7 minutes.
  • Divide fish among plates. Serve with Jerusalem Artichoke Pickles and warm Jerusalem Artichoke Puree.
  • Tubers of a variety of sunflower; available in the produce section of some supermarkets and at farmers' markets.
