BLUEBERRY BAKED BRIE
Blueberry Baked Brie -a quick and simple appetizer recipe for savory gooey melted cheese and sweet blueberries.

- BRIE: Preheat oven to 350 degrees F. Cut the top off of your brie wheel (about 1/4' off the top) and place on a baking dish. Bake for 12-15 minutes or until the center is soft.
- BLUEBERRY SAUCE: Combine blueberries, honey, water and lemon zest in a medium sized saucepan. Bring to a boil, reduce heat and simmer for 10 minutes. Pour over the baked brie and serve immediately with your choice of crackers, fruits and bread.

- Preheat oven to 450. Lightly coat a baking sheet with cooking spray.
- In a small bowl, combine blueberry preserves, honey and thyme. Set aside.
- Cut brie into 6 wedges. Place wedges close together on baking sheet. Sprinkle with chopped walnuts.
- Bake for 4 minutes or until cheese begins to soften in the center.
- Meanwhile, microwave preserves on high for 20 seconds or until heated.
- Carefully remove Brie from baking sheet, and place on a serving platter. Spoon melted preserves over Brie and serve hot.

BLUE BRIE (BAKED BRIE WITH BLUEBERRIES)
I like having a baked brie at parties, always nice to find a new way to do it. This came via a demo table at my local grocery store a few years back. Dried blueberries can be quite expensive, I wonder if you could just dry your own in the oven. They should be easy enough to find in the bulk section and they do 'make' the dish so you can't leave them out. Nice for a special occassion (when calories don't count!). Serve with a selection of crackers or sliced baguette.

Steps:
- Preheat the oven to 375 degrees.
- Combine the brown sugar, pecans and blueberries in a bowl. Sprinkle the mixture with just enough water to moisten.
- Cut the top off the brie and score lightly in a criss-cross pattern. Place the brie in an oven safe shallow dish or bowl.
- Place the blueberry mixture over the top of the brie. Bake uncovered for about 30 minutes until the cheese is bubbly and heated through (test in teh middle as you would a cake, it 'should' come out gooey.
- Serve right out of the oven, lifting the brie onto a serving platter and surrounding it with crackers or bread.
- Microwave option: microwave on high for 3 minutes, reheat as necessary.
BAKED BRIE WITH BERRY RHUBARB COMPOTE

- Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
- In 8-inch skillet, melt butter over medium-high heat. Add rhubarb, onion and sugar; cook until rhubarb and onion are softened, juices evaporate and mixture thickens. Stir in preserves, thyme, ginger and cinnamon.
- Spoon rhubarb mixture on top of Brie cheese.
- Unroll crescent dough onto cookie sheet; press perforations to seal. Place rhubarb-topped cheese in center of dough. Gather edges of dough up and around cheese; pinch edges and top to seal.
- With pastry brush, spread beaten egg over dough.
- Bake 17 to 20 minutes or until dough is golden brown. Serve immediately.

- Combine all ingredients (except brie) in a large saucepan. Bring to a boil over medium heat, and cook 2 minutes. Remove cinnamon stick. Cover and chill blueberry mixture until ready to use (or let sit, covered, at room temperature for up to one hour).
- Place brie round on baking sheet or in a baking dish. With a sharp knife, cut through rind around the top edge of the brie (just make a cut into the top layer of the brie all the way around, but don't remove it). Bake 15 minutes, or until cheese is soft and melted. Carefully move hot brie to a serving plate. With a sharp knife, carefully cut under the top of the brie (under the rind) and remove. Top the brie with the blueberry mixture, and serve with baguette slices or crackers.
