Steps:
- Cut croissants in half horizontally. Place equal amounts of brie cheese, caramelized onion and thyme on bottom half of croissant. Top with remaining croissant and place on baking sheet.
- Bake at 350 until cheese is melted and surface of croissant is golden and crispy, about 10 minutes. Transfer to a cutting board and cut in thirds.

MELTED BRIE AND APRICOT PETITE CROISSANTS

- SLICE and lay the croissants open. Cover each croissant bottom with slices of brie to cover. Spread with 1/2 tablespoon preserves, sprinkle with 1/2 tablespoon chopped glazed pecans and 1/2 teaspoon brown sugar. Cover with top of croissant.
- HEAT large skillet over medium heat. Spray sandwiches with no-stick cooking spray. Place sandwiches, sprayed side down, in heated skillet. Cover skillet and brown sandwiches 4 to 5 minutes or until golden brown. Spray tops of sandwiches before turning to brown second side.
- REMOVE sandwiches from skillet. Allow to rest covered, about 3 minutes. Cut diagonally, sprinkle with cinnamon sugar, if desired, and serve warm.
- *Glazed pecans can be found in the nut section of your grocer's snack aisle.

- Preheat the oven to 350ºF.
- Melt butter in a medium pan over medium heat. Add onion and salt and cook until onion is golden brown, about 10 minutes. Add in the sprig of thyme and cook for another 2 minutes.
- Slice croissants in half and place on a parchment-lined baking sheet, cut side up. Spread apricot preserves on the top half and place 3 pieces of brie cheese. On the bottom croissant half, place caramelized onions and folded slices of Castle Wood Reserve® Uncured Honey Ham. Repeat with the other croissant.
- Bake open-face for 10 minutes.
- Remove from the oven and add arugula. Close the sandwiches and serve with a skewered strawberry for a garnish.

- Heat ½ a tablespoon of olive oil in a pan.Add the half the mushrooms and cook until browned. Push those mushrooms to one side of the pan then add the remaining mushrooms and cook until brown. Toss all the mushrooms together then add ½ a tablespoon of butter to the pan.Add the thyme leaves and a minced clove of garlic. Cook for a moment then toss the mushrooms. Season with ¼ teaspoon each of sea salt and freshly cracked black pepper. Set the mushrooms aside for now but keep them warm. I do this by popping a plate or a lid on the pan.
- Using a bread knife cut the croissants lengthwise through the side of the croissants. Slice all the way through to separate the top from the bottom.Set the tops of the croissants aside for now.Spread about ½ a tablespoon on the flat side of each croissant. Then place the croissants on a large baking tray.Place a couple of slices of brie on top of the cranberry sauce on each croissant.Then divide the mushrooms between the four croissants.Place the tops of the croissants on top of the mushrooms then pop the tray in the preheated oven and bake for 10 minutes.The cheese should be just melted and the croissants will be warm.Serve immediately with extra cranberry sauce if you wish.
