INSTANT POT® MUSHROOM BROTH

This is a basic mushroom broth used for flavoring soup, pasta, and rice. Any combination of mushrooms can be used, but I find the baby bellas make the richest, most flavorful broth. Fresh herbs add a lot of flavor but since I do not know the specifics of what you will be using this for, I kept this basic and left them out. Store in the refrigerate up to 5 days or freeze up to 3 months.

2 (8 ounce) packages baby portobello mushrooms, sliced
1 large onion, halved
1 large carrot, halved
1 stalk celery, halved
1 teaspoon salt
1 bay leaf
10 cups water

Steps:

  • Combine mushrooms, onion, carrot, celery, salt, bay leaf, and water in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 30 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 30 minutes.
  • Unlock and remove the lid. Let broth sit for 20 minutes to cool. Pour liquid through a strainer and discard all solids.

WILD MUSHROOM BROTH

1 ounce dried porcini
1 cup warm water
2 tablespoons minced shallots
1 tablespoon olive oil
1/4 pound mixed wild and domestic mushrooms or one or the other, all but 2 domestic mushroom caps cut into thin slices
2 cups chicken broth
Salt and pepper

Steps:

  • Set porcini and warm water in a skillet and bring to a simmer; let mushrooms soak for 20 minutes or until tender. (Take advantage of this time to make your scallop and raddichio salad.)
  • Drain the soaked porcini and rinse them to remove any grit and chop. Strain soaking liquid through a paper lined sieve to remove any grit; reserve.
  • Saute shallots in 1 tablespoon olive oil. Add all but the reserved mushroom caps, cover and cook over low heat or until mushrooms are tender. Add minced soaked porcini, reserved liquid and broth; bring to a simmer and season to taste; garnish with sliced raw mushroom.

When I am transforming a meat dish into vegetarian, there are certain shortcuts I know: I can use Quorn® or TVP for chicken, and vegetable stock for chicken stock. And, I can use organic mushrooms in place of stewing beef. But for a long time, I didn't have a replacement for beef stock. Sure, I could use vegetable stock, but it wasn't earthy enough, it was too light. So, I invented the stock below for a rich earthy stock for vegan use!

12 cups water
3 pounds earthy mushrooms
3 stalks celery, roughly chopped
2 large onions, roughly chopped
2 carrots, roughly chopped
1 bouquet garni
3 cloves garlic
2 bay leaves
salt and ground black pepper to taste

Steps:

  • Combine water, mushrooms, celery, onions, carrots, bouquet garni, garlic, bay leaves, salt, and pepper in a large soup pot and bring to a boil, about 5 minutes. Reduce to a gentle simmer and cook until reduced by 1/2, 45 to 50 minutes.
  • Strain stock into a jar, discard vegetables, and your stock is good to go.

Stems from 6 pounds of mushrooms
1 small white onion
1 teaspoon soy sauce
4 black peppercorns
1/2 teaspoon dried thyme
1 bay leaf

Steps:

  • Place all the ingredients in a soup pot. Cover with half a gallon of cold water, place over low heat and simmer for 2 hours, until the liquid has reduced by half. Strain, cool and refrigerate.

6 spring onions, white plus 1 inch of greens,sliced
1 fresh ginger, 1 inch,peeled and thinly sliced
2 cloves garlic, sliced
1 onion, sliced
1 leek, white plus 1 inch of greens,washed and sliced
4 dried porcini mushrooms

Steps:

  • Combine everything in a stockpot,& bring to a boil on high heat.
  • Cover, turning heat to medium-low, to simmer for one hour.
  • Strain through sieve lined with cheesecloth.
  • Discard the vegetables.
  • Save broth in refridgerator for up to four days, or in the freezer for up to 6 months.
