OTORO'S ULTIMATE SAUSAGE GRAVY

Otoro's Ultimate Sausage Gravy image

This is classic Southern-style sausage gravy; two thumbs up from my relatives in Tennessee and Kentucky. I'm very proud. It's quick, easy and delicious. Besides the sausage, all other measurements in this recipe are approximate, I don't measure the flour or milk. And a note on the milk: do not use skim, it won't come out right. Spoon this gravy over biscuits, toast or just about anything.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 lb bulk breakfast sausage
1 small onion, small diced
4 tablespoons all-purpose flour
3 1/2 cups milk
1 -2 dash hot pepper sauce (optional)
fresh coarse ground black pepper

Steps:

  • Heat a 10" to 12" skillet over medium high heat and add sausage.
  • Break up sausage with a wooden spoon. Add onion after a minute or two.
  • Once the sausage is cooked, use a teaspoon to heavily dust the sausage with flour.
  • Stir to incorporate the flour, you want it to coat the sausage and soak up the grease.
  • Once the flour has turned a very light brown (about 2-3 minutes) add the milk and bring to a boil.
  • Turn the heat down to medium and continue to stir, it should thicken up quite quickly. If the gravy seems to thick, add more milk.
  • Add the hot pepper sauce (I like Frank's) and 8-10 grinds of coarse black pepper. Stir and serve immediately. Bon Appetito.

BREWED COFFEE SAUSAGE GRAVY

Brewed Coffee Sausage Gravy image

I received this recipe from an elderly Southern Lady that worked for me 20 years ago, long before Sausage Gravy became popular around here. I have received many compliments when I serve this. I would definitely use a sage sausage. We like Bob Evans the best.

Time 12h5m

Yield 8 Cups, 8 serving(s)

Number Of Ingredients 2

1 1/2 cups of finely ground coffee
4 cups filtered water

Steps:

  • Mix the coffee and water in a large covered jar or pitcher.
  • After 4 hours or so, the coffee grounds will separate and float to the top. Stir to remix them.
  • Cover the jar/pitcher and leave at room temperature overnight.
  • Strain into another jar/pitcher through triple fold of muslin. Dump the grounds in the muslin and give that a good squeeze.
  • Refrigerate.
  • Serve using a 1 to 2 ratio (one third coffee concentrate to two thirds cold water).
  • I would also suggest mixing up some and freezing it into ice cubes, so you don't water down your beverage.
  • It will keep at least a week.

SOUTHERN SAUSAGE GRAVY

Southern Sausage Gravy image

I love Sausage gravy and biscuits! DH was not a big fan until I made this. True Southern Comfort food! Serve this wonderful Southern-style gravy over hot split and buttered buttermilk biscuits. Biscuits with gravy make a great breakfast with fresh or spiced fruit, Fresh sliced Tomatoes or serve along with a complete breakfast. This recipe is courtesy of Paula Deen.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 6

8 ounces breakfast sausage
2 tablespoons shortening or 2 tablespoons lard
3 tablespoons flour
1 1/2-1 3/4 cups milk
salt and pepper, to taste
1 dash cayenne pepper, option

Steps:

  • Cook sausage in a medium skillet over medium-low heat, stirring and breaking up with a spatula. With a slotted spoon, removed the browned crumbled sausage to a paper towel.
  • Add flour, stirring until blended and bubbling. Gradually add 1 1/2 cups milk; continue stirring and cooking until thickened and bubbly. Add the crumbled sausage. If too thick, add a little more milk. Taste and add salt and pepper. Stir in a dash of cayenne pepper, if desired.

AWESOME SAUSAGE GRAVY

Awesome Sausage Gravy image

I've been fiddling around trying to make a perfect sausage gravy for years and I think I finally hit on it with this one. My spices and seasonings are never actually "measured," so play around with them until it suits you! Just a disclaimer: this gravy is NOT for the health conscious! I use fat-free milk to kind of counteract the creams and sausage, but this definitely isn't a "diet-friendly" food!

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 9

1/2 lb mild sausage (you can use less, but more is more, I say)
3 tablespoons cornstarch (heaping)
2 1/2 cups nonfat milk
1/2 cup heavy cream
1 tablespoon sour cream, room temperature
1 -2 teaspoon black pepper
1/2 teaspoon salt
1 1/2 teaspoons seasoning salt
1/4 teaspoon cayenne pepper (optional)

Steps:

  • Brown and crumble sausage until its crispy. I like to burn mine just a little. Don't worry, it re-hydrates when you add the milk and creams.
  • While browning, mix 1 1/2 cup milk with the cornstarch. Add in the softened sour cream and mix thoroughly. Combine the remaining milk and heavy cream.
  • Once sausage is browned (don't drain off all of the fat, leave at least a few teaspoons), reduce heat to medium-low and pour in the milk/cornstarch/sour cream mixture. Stir constantly until it just begins to thicken. Add spices.
  • Once the mixture has begun to thicken, add the milk and cream and increase temperature to medium high, stirring constantly, until it begins to bubble. Once it has started bubbling, reduce again to medium low. It needs a lot of attention, so keep stirring until it has reached your desired consistency. Make sure you keep tasting it too! Add more salt and pepper as needed.
  • Serve over hot biscuits or grits or eggs or whatever you like your sausage gravy on!
