BACON-CHEESE BISCUITS

Number Of Ingredients 9

4 slices thick-cut bacon
2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon chopped fresh chives
6 tablespoons cold unsalted butter, cut into small pieces, plus melted butter for brushing
1 cup grated Colby or cheddar cheese
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
  • Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
  • Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

This breakfast casserole with biscuits and bacon is a great way to stay ahead of the holiday rush and madness. Throw it together and toss it in the oven for 30 minutes.

1 tablespoon olive oil, or as needed
4 large potatoes, peeled and cubed
salt and ground black pepper to taste
1 ½ pounds bacon
1 (16.3 ounce) can refrigerated biscuit dough
nonstick cooking spray
5 cups shredded Cheddar cheese, divided
11 large eggs
¼ cup milk

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Add potatoes, season with salt and pepper, and saute until golden brown, about 10 minutes. Remove from the skillet.
  • Add bacon to the same skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with nonstick spray.
  • Cut each biscuit into 4 pieces and spread evenly across the bottom of the prepared baking pan. Layer evenly with potatoes, then bacon, then 2 cups Cheddar cheese. Whip eggs and milk together in a bowl and pour evenly over the Cheddar cheese.
  • Bake in the preheated oven for 20 minutes. Sprinkle with remaining 3 cups Cheddar and return to the oven until a toothpick inserted into the center comes out clean, about 10 minutes.

Nonstick vegetable oil spray or unsalted butter (for pan)
4½ cups (563 g) all-purpose flour
2 Tbsp. baking powder
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
½ cup (1 stick) chilled unsalted butter
8 oz. Gruyère, Comté cheese, and/or aged white cheddar, coarsely grated
2 oz. Parmesan, finely grated
¼ tsp. crushed red pepper flakes
1 10-oz. package frozen chopped spinach, thawed
1 cup buttermilk
1 cup sour cream (not low-fat)

Steps:

  • Preheat oven to 425°F. Lightly coat a 13x9" baking pan or dish with nonstick spray. Whisk flour, baking powder, and salt in a large bowl to combine. Grate butter into dry ingredients on the large holes of a box grater, then lightly toss to coat. Freeze 10 minutes.
  • Scatter about three-quarters of Gruyère and Parmesan over flour mixture, then add crushed red pepper flakes. Squeeze as much liquid out of spinach as possible, pull into shreds, and strew over flour mixture.
  • Whisk buttermilk and sour cream in a large measuring glass or small bowl. Pour into bowl with flour mixture and mix with a fork just until combined. Knead in bowl with your hands until a soft cohesive dough forms (do not overmix).
  • Scrape dough into prepared pan and press into an even layer. Using a bench scraper or knife, deeply score into 12 portions (cut down almost to pan beneath). Scatter reserved Gruyère and Parmesan over.
  • Bake biscuits until puffed and golden, 30-35 minutes. Transfer pan to a wire rack and let cool 10 minutes before serving.

1/2 cup shortening
1 cup buttermilk
3/4 pound sliced bacon, cooked and crumbled
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine the flour, sugar and baking soda. Cut in shortening until mixture resembles coarse crumbs. Stir in buttermilk just until combined. Fold in the bacon and cheese., Turn onto a lightly floured surface; knead 4-5 times. Roll out to 1/2-in. thickness. Cut with a floured 2-1/2-in. biscuit cutter. Place 1 in. apart on a greased baking sheet. Bake at 425° for 12-15 minutes or until golden brown. Remove from pan to a wire rack. Serve warm.

4 cups biscuit mix
1 1/3 cups milk
1 cup shredded sharp cheddar cheese (4 oz)
4 cups fresh spinach leaves (4 oz)
6 slices bacon, cut into 1 inch pieces or 3 tablespoons bacon bits
1 tablespoon butter
6 eggs, lightly beaten
2 plum tomatoes, seeded & diced
salt & pepper
6 slices swiss cheese (6 oz)

Steps:

  • Preheat oven 450°F.
  • Prepare biscuit mix according to directions, adding milk & Cheddar cheese to the mix.
  • Cut out 6 biscuits using a (4 inch) round cutter.
  • Bake according to package.
  • Place spinach in microwavable bowl>Microwave on high until spinach is lightly wilted, (1 min 3o sec). Set aside.
  • Cook bacon in skillet until crisp. Drain fat & set aside.
  • In same skillet ,heat butter until hot.
  • Stir in eggs, tomatoes, salt, pepper & cooked bacon.
  • Cook until eggs are set.
  • In skillet divide the egg mixture in to 6 sections.
  • Top each section with a slice of Swiss cheese.
  • Cover & heat until cheese has melted.
  • Split hot biscuits.
  • Divide spinach among bottoms haves.
  • Top with scrambled egg mixture.
  • Top with biscuit tops. Serve immediately.

This is a simple meal yet it is one of my favorites and it is perfect with some good coffee.

slices of crisp bacon
slice of cheese
an egg prepared your favorite way
for the biscuits:
2 cups of self-rising flour
1 tsp. sugar
5 tablespoons shortening (unsalted butter or margarine)
1 cup sour milk (this is achieved by adding 1 tsp. vinegar to the milk and letting it sit for a few minutes)

Steps:

  • 1. In a bowl combine the flour and sugar. Add the shorting and crumble with your fingers to incorporate into the flour. Make a well in the center and gradually add the milk, combining it into the flour as you pour. Gently form the dough. Do Not Overwork the dough or the biscuits will not be fluffy. Flour a clean surface to roll the dough to about ¾ inch thickness. Cut out biscuits to desired size (a coffee cup works well as the biscuit cutter). Butter a cast iron pan and place biscuits in the pan. Bake for about 18-20 minutes.
