ULTIMATE TOFU BREAKFAST BURRITO BOWLS

Ultimate Tofu Breakfast Burrito Bowls image

Tofu scrambles up just like eggs, and with some clever spices, even non-vegans will barely notice the difference. Try setting out toppings to let family or guests assemble their own burrito bowls.

Time 45m

Yield 3

Number Of Ingredients 23

3 tablespoons olive oil, divided
1 (14 ounce) package extra-firm tofu, drained
½ teaspoon salt
black pepper to taste
1 ½ teaspoons onion powder
1 ½ teaspoons garlic powder
½ teaspoon ground turmeric
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 cup finely diced red onion
2 jalapeno peppers, seeded and chopped
½ teaspoon salt
3 cloves garlic, minced
2 cups chopped tomatoes
1 ½ teaspoons cumin
¼ cup chopped fresh cilantro
1 tablespoon fresh lemon juice
1 (15.5 ounce) can no-salt-added black beans, drained and rinsed
1 ½ cups cooked hash brown potatoes
1 avocado - peeled, pitted and sliced
1 teaspoon fresh lemon juice
¼ cup chopped fresh cilantro
1 teaspoon hot sauce, or to taste

Steps:

  • Preheat a large, heavy skillet over medium-high heat. Add 2 tablespoons oil. Break tofu apart over skillet into bite-size pieces, sprinkle with salt and pepper, then cook, stirring frequently with a thin metal spatula, until liquid cooks out and tofu browns, about 10 minutes. (If you notice liquid collecting in pan, increase heat to evaporate water.) Be sure to get under the tofu when you stir, scraping the bottom of the pan where the good, crispy stuff is and keeping it from sticking.
  • Add onion and garlic powders, turmeric, juice, and remaining tablespoon oil and toss to coat. Cook 5 minutes more.
  • Preheat a heavy-bottomed saucepan over medium-high heat. Add oil. Cook onion and jalapenos with a pinch of salt, stirring, until translucent, about 5 minutes, Add garlic and cook, stirring, until fragrant, about 30 seconds. Add tomatoes, cumin, and remaining salt, and cook, stirring, until tomatoes become saucy, about 5 minutes. Add cilantro and lemon juice. Let cilantro wilt in. Add beans and heat through, stirring occasionally, about 2 minutes. Taste for salt and seasoning.
  • Spoon some hash browns into each bowl, followed by a scoop of beans and a scoop of scramble. Top with avocado, a squeeze of fresh lemon juice, and a sprinkle of cilantro. Serve with hot sauce.

BREAKFAST-FOR-DINNER BURRITOS

Breakfast-for-Dinner Burritos image

Having a cheesy scrambled egg-filled burrito for dinner is the antidote to a busy morning when there often just isn't time to make or enjoy one. This version has some salsa-spiked refried beans, Canadian bacon and avocado in it to add extra heft, but like any burrito, it's also easy to customize and make your own.

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

12 ounces seasoned curly fries
3/4 cup refried beans
3 tablespoons salsa, plus more for serving
1 tablespoon extra-virgin olive oil
4 pieces Canadian bacon, chopped
2 scallions, thinly sliced
1/4 teaspoon ancho chile powder
8 large eggs, lightly beaten
Kosher salt and freshly ground pepper
3/4 cup shredded Mexican cheese blend
4 large flour tortillas
1 avocado, sliced

Steps:

  • Preheat the oven to 450˚ F. Spread the curly fries on a large rimmed baking sheet and bake as the label directs. Meanwhile, put the beans in a medium bowl and microwave until hot, 1 to 2 minutes; stir in the salsa.
  • Heat the olive oil in a large nonstick skillet over medium heat. Add the Canadian bacon; cook until lightly browned, 2 to 3 minutes. Add the scallions and chile powder; cook just until softened, about 1 minute. Reduce the heat to medium low and pour in the eggs. Season with salt and pepper and cook, stirring, until fluffy and just slightly wet in spots, 4 to 5 minutes. Remove from the heat and add the cheese. Let stand 1 minute, then stir until the cheese is melted and the eggs are very creamy.
  • Warm the tortillas as the label directs. Spread the bean mixture over the bottom third of the tortillas. Top with the avocado slices and eggs. Roll up tightly. Serve with the fries and more salsa.

TOFU SCRAMBLE BREAKFAST BURRITO RECIPE BY TASTY

Tofu Scramble Breakfast Burrito Recipe by Tasty image

Here's what you need: medium yukon potatoes, olive oil, smoked paprika, dried oregano, garlic powder, kosher salt, pepper, extra firm tofu, low sodium soy sauce, nutritional yeast, onion powder, ground turmeric, grape tomatoes, fresh spinach, large flour tortillas, avocado, hot sauce

Provided by Rachel Gaewski

Categories     Lunch

Yield 4 servings

Number Of Ingredients 17

3 medium yukon potatoes, peeled and cubed
olive oil, to taste
½ teaspoon smoked paprika
½ teaspoon dried oregano
3 teaspoons garlic powder, divided
kosher salt, to taste
pepper, to taste
14 oz extra firm tofu, 1 block
3 tablespoons low sodium soy sauce
3 tablespoons nutritional yeast
1 teaspoon onion powder
½ teaspoon ground turmeric
1 cup grape tomatoes, halved
3 cups fresh spinach
4 large flour tortillas
1 avocado, for serving, diced
hot sauce, for serving

Steps:

  • Preheat the oven to 400°F (200°C).
  • Add the potatoes to a baking sheet with a drizzle of olive oil, the paprika, oregano, ½ teaspoon of garlic powder, salt, and pepper and toss until well coated.
  • Bake for 20 minutes, flipping halfway through, until the potatoes are tender.
  • Heat a drizzle of olive oil in a large saucepan over medium heat. Once the oil begins to shimmer, crumble the block of tofu into the pan until it resembles the consistency of scrambled eggs, being careful not to over-crumble because it will continue to break apart as you cook. Cook for 4-5 minutes, until the tofu is slightly golden.
  • Add the soy sauce, nutritional yeast, the remaining 2½ teaspoons garlic powder, the onion powder, turmeric, salt, and pepper and stir until well combined. Add the tomatoes and cook for 4-5 minutes, until the tomatoes become slightly wrinkled. Add the spinach and cook until wilted, 3-4 minutes.
  • To assemble a burrito, add ¼ of the tofu scramble, ¼ of the potatoes, some avocado, and hot sauce to the center of a tortilla. Fold in the sides and roll up, keeping the filling tucked in place. Repeat with the remaining ingredients. Cut in half and serve.
  • Enjoy!

BREAKFAST BURRITOS

Breakfast Burritos image

A delightful breakfast, these burritos filled with soft scrambled eggs, scallion-flecked refried beans and buttery avocado slices are also great any time of the day. Cilantro adds freshness, and a few drops of your favorite hot sauce will deliver a nice zing. The nontraditional open-ended rolling technique used here will tightly encase the filling in the smaller-sized tortillas while ensuring the optimal tortilla-to-stuffing ratio. To seal completely, wrap each tortilla in a strip of foil and twist both ends. For convenience, the little wraps can be made ahead of time, stored in the refrigerator or freezer and reheated in an oven.

Time 20m

Yield 4 servings

Number Of Ingredients 11

8 medium (soft taco-sized) flour tortillas
5 ounces Monterey Jack cheese, coarsely grated (1 1/4 cups)
2 tablespoons neutral oil, such as grapeseed or canola
2 scallions, thinly sliced
1/2 teaspoon ground cumin
1 cup refried black beans (from a 16-ounce can)
6 large eggs, beaten
Kosher salt
Hot sauce, for drizzling (optional)
1 small ripe avocado, pitted, peeled and sliced
1/4 cup fresh cilantro leaves

Steps:

  • Heat broiler to high and line two sheet pans with foil.
  • Place the tortillas on the sheet pans. Sprinkle half of the cheese over the tortillas. Broil, one pan at a time, until the cheese is just beginning to melt, about 20 seconds.
  • In a medium nonstick skillet, heat 1 tablespoon oil over medium. Add the scallions and cumin and cook, stirring, until fragrant, about 1 minute. Add the refried beans, stir to combine and cook until the beans are warmed through, about 2 minutes. Divide the beans among the tortillas, spooning in even lines down the centers.
  • Wipe out the skillet and set over to medium-low heat. Pour in the remaining 1 tablespoon oil, add the whisked eggs and season lightly with salt. Cook, stirring occasionally, until the eggs are just set, about 3 minutes. Divide the eggs evenly among the tortillas, in lines over the beans. Drizzle on hot sauce, if using.
  • Sprinkle the remaining cheese over the eggs and top with avocado and cilantro. To roll, fold one side over the filling to enclose it, then tightly roll away from you, leaving the ends open. Serve immediately, or wrap in foil and refrigerate for up to 24 hours. Reheat in a 400-degree oven or toaster oven until warm, about 8 minutes.

  • Preheat oven to 400 degrees F (204 C) and line a baking sheet with parchment paper (use more baking sheets if increasing batch size). In the meantime, also wrap tofu in a clean towel and set something heavy on top - such as a cast-iron skillet - to press out excess moisture. Then crumble with a fork into fine pieces. Set aside.
  • Add potatoes and red pepper to the baking sheet, drizzle with oil (or water) and spices, and toss to combine. Bake for 15-22 minutes or until fork tender and slightly browned. Add kale in the last 5 minutes of baking to wilt, tossing with the other vegetables to combine seasonings.
  • In the meantime, heat a large skillet over medium heat. Once hot, add oil (or water), garlic, and tofu and sauté for 7-10 minutes, stirring frequently, to slightly brown.
  • In the meantime, to a small mixing bowl, add the hummus, chili powder, cumin, nutritional yeast, salt, and cayenne (optional). Stir to combine. Then add water until a pourable sauce is formed (1-3 Tbsp as original recipe is written // adjust if altering batch size). Then add parsley and stir. Add the spice mixture to the tofu and continue cooking over medium heat until slightly browned - ~3-5 minutes. Set aside.
