What's more fun than pizza for breakfast? Delegate tasks to your youngest helpers like brushing the oil on the crust, layering it up with toppings and tearing the basil. When you sit down for breakfast, everyone can enjoy a job well done.

3 slices thick-cut bacon, sliced into 1/2-inch pieces
1 small red onion, sliced
Kosher salt and freshly ground black pepper
1/4 cup sun-dried tomatoes packed in oil, chopped
1 tablespoon fresh oregano leaves, chopped
1 clove garlic, minced
One 9- by 11-inch flatbread, such as lavash or four 6-inch round flatbreads
1/2 cup shredded provolone
1/2 cup whole milk ricotta
1 tablespoon vegetable oil
4 large eggs
Fresh basil leaves, torn

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a large nonstick skillet over medium heat until the fat is rendered and the bacon is crisp, about 8 minutes. Remove using a slotted spoon to a paper-towel-lined plate. Add the onions to the bacon drippings and cook until very soft, about 10 minutes. Add the sun dried tomatoes, oregano and garlic. Cook until fragrant, about 2 minutes.
  • Brush the flatbread with some of the sun-dried tomato oil, and then spread the onion mixture on the flatbread. Sprinkle with the bacon and provolone and spoon the ricotta in large dollops over the surface. Place the pizza in the oven and bake until the edges of the flatbread are crisp and the cheese is melted and lightly browned, about 10 minutes.
  • Meanwhile, wipe out the skillet used to cook the onions. Heat the skillet over medium heat and add the oil. Carefully break the eggs into the skillet, sprinkle with salt and pepper and cook until the whites are set, 4 to 5 minutes.
  • If using lavash, cut the pizza into 4 pieces. Place a fried egg on each piece. Scatter the torn basil leaves over the top and serve immediately.

2 packages crescent rolls
1 package Jimmy Dean cooked sausage crumbles
1 envelope country gravy mix
6 eggs
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
8 ounces shredded cheddar cheese
4 ounces shredded pepper Jack cheese

Steps:

  • Heat oven to 375°F. Separate crescent dough into 16 triangles and place on a greased, round pizza pan with points toward the center. Press onto the bottom and up the sides of pan to form a crust; seal seams. Bake for 11 to 13 minutes or until golden brown. Meanwhile, prepare gravy according to package directions in a medium saucepan. Stir sausage crumbles into thickened gravy; set aside. In a small bowl, whisk together the eggs, milk, salt and pepper. In a large skillet, heat butter over medium heat. Add egg mixture; cook and stir until almost set. Spread sausage gravy mixture over the crust. Top with eggs and cheeses. Bake 5 to 10 minutes longer or until eggs are set and cheese is melted. Cut into wedges.

This is one of those { use what you have } breakfast pizzas. The poblano pepper adds much flavor to this dish but not any heat. The jalapeno adds just that right amount of kick that takes this over the top. The onion & pepper mixture and crumbled sausage can be made the day ahead. It would not need to be reheated because it will get hot in the oven. I should add that the reason I put a second sheet of parchment and a second baking sheet on top of the crust before I pre-bake it, is so the dough does not rise. If you like a little thicker crust omit this part.

- 1 medium/large onion sliced thin
- 2 medium poblano peppers, seeded and sliced thin
- 1 tablespoon turbinado sugar
- 3 tablespoons unsalted butter
- 1 cup kraft three cheese blend
- 1 - 16 ounce roll breakfast sausage { any flavor you like }
- 5 large eggs
- 1 jalapeno pepper chopped fine { leave some seeds and a small amount of veins in }
- 2 tablespoon water
- 2 tablespoons unsalted butter
- ½ teaspoon sea salt
- ½ teaspoon fresh ground pepper
- 1 - 11 ounce roll pillsbury thin pizza crust
- ½ of a 11 ounce roll of goat cheese { 5.5 ounces }
- parchment paper
- baking sheet

Steps:

  • Add the 3 tablespoons butter to a pan and slice the onion thin and sauté with the Turbinado sugar. Slice the poblano and add to the onion and sugar mixture, sauté this till the onions caramelized slightly and the peppers are soft, remove and set aside.
  • In the same pan cook the sausage and as it starts to cook crumble it, and cook it till it is fully cooked. Remove from the pan and set aside.
  • Crack the eggs into a large bowl and add the jalapeno pepper, water, salt and pepper. Whip the eggs till they are all mixed.
  • In the same pan from the onions/peppers and sausage, add the 2 tablespoons butter and loosely scramble the eggs. They will continue to cook on top of the pizza.
  • Pre heat the oven to 325, line a baking sheet with the parchment paper "trimming off the excess around the outside of the pan { neatness does not count ha ha ha } and unroll the pizza crust and poke some holes in it with a fork, put more parchment paper on the top and place another baking sheet on top of it, and pre-bake the crust for 10 to 15 minutes.
  • Remove from the oven "removing the extra parchment and pan" sprinkle with the three cheese blend dry cheese.
  • Then spread the onion and peppers on top.
  • Spread the cooked sausage on top of the onions.
  • Top with the soft/loose scrambled eggs.
  • Dot the goat cheese on the top of the eggs.
  • Bake at 325 for 25 minutes { depending on your oven } till the crust starts to brown.
