- Cook Simply Potatoes according to package directions.
- Meanwhile, in a small bowl, combine chipotle with mayo.
- Scramble the eggs: heat a non-stick pan over medium-low heat. Whisk eggs in a bowl. Add eggs to pan; allow to set for a minute, then slightly lift eggs with a spatula, allowing the liquid to run under the cooked portion. Repeat until eggs are completely cooked. Season with salt and pepepr and remove to a bowl.
- Spread chipotle mayo on each tortilla.
- Pile the eggs and potatoes on top of the mayo.
- Wrap up and enjoy!

- Preheat oven to 350 degrees and grease a 9x13 baking pan. Mix together the eggs, diced green chilis and the cheese. Spread the hashbrowns in the bottom of the baking pan and pour the eggs mixture over them. Top with the chopped tomatoes. Bake for 45 minutes or until a knife inserted in the center comes out clean.

- Preheat the oven to 375 degrees. Grease a 9 x 13 casserole.
- Pour in the Simply Potatoes for the 1st layer, then top with bacon or ham, then sprinkle on all the cheese.
- Whisk 9 eggs together in a large bowl, then whisk in the sour cream.
- Pour the egg mixture over the cheese.
- Bake for about 35 minutes. or until light brown on top.
- Let rest 5 minute before cutting into squares.
- My favorite condiment is salsa to serve with it!
