SCRAMBLED EGG BISCUIT CUPS
Marry scrambled eggs and biscuits in a 30-minute, start-to-finish breakfast treat.

Steps:
- Heat oven to 425°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray. In medium bowl, mix Bisquick mix, cheese and 1/2 cup of the milk until soft dough forms.
- Place dough on surface sprinkled with Bisquick mix. Shape into a ball; knead 4 or 5 times. Shape into 10-inch-long roll. Cut roll into 12 pieces. Press each piece in bottom and up side of muffin cup, forming edge at rim.
- Bake 8 to 10 minutes or until golden brown. Remove from oven. With back of spoon, press puffed crust in each cup to make indentation.
- In large bowl, beat eggs, remaining 1/4 cup milk and the pepper until well blended. In 10-inch nonstick skillet, melt butter over medium heat. Add egg mixture; cook 3 to 4 minutes, stirring occasionally, until firm but still moist. Fold in pasta sauce and bacon until blended.
- To remove biscuit cups from pan, run knife around edge of cups. Spoon egg mixture into biscuit cups. Sprinkle chives and additional bacon bits over tops.

BREAKFAST BISCUIT CUPS
Steps:
- In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the flour, salt and 1/4 teaspoon pepper until blended; gradually add 3/4 cup milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat and set aside., In another large skillet over medium heat, cook potatoes in butter until tender. Whisk the eggs, garlic salt and remaining milk and pepper; add to skillet. Cook and stir until almost set., Press each biscuit onto the bottom and up the sides of 8 ungreased muffin cups. Spoon the egg mixture, half the cheese, and sausage into cups; sprinkle with remaining cheese., Bake at 375° for 18-22 minutes or until golden brown. Cool 5 minutes before removing from pan. Freeze option: Freeze cooled biscuit cups in a freezer container, separating layers with waxed paper. To use, microwave 1 frozen biscuit cup on high for 50-60 seconds or until heated through.

- Preheat oven to 375°F. Spray 2 (10-ounce) custard cups or soufflé dishes with cooking spray. In small bowl, beat eggs and water. Set aside. In each cup, place 1 tablespoon bacon bits. Top with 1 frozen biscuit, 2 tablespoons cheese and half of the egg mixture. Sprinkle with pepper. Place custard cups on cookie sheet with sides. Bake 24 to 27 minutes or until biscuits are golden brown. Sprinkle with remaining bacon. Serve immediately with salsa, if desired.

Add milk, tossing with a fork until a ball forms. , Turn onto a lightly floured surface; knead 5-6 times. Roll or pat to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. - Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble or chop into small pieces.
- Separate 6 biscuits into 2 rounds each. Press rounds into 12 cups of a muffin tin, pressing up sides to form biscuit dough cups.

Steps:
- 1. Measure self rising flour and sugar. Mix with a fork.
- 2. Using a pastry blender, cut the cold butter into the flour mix until it resembles a coarse meal.
- 3. Add 4 Tbsp milk and blend with a fork just until blended. If too dry, add the other half a tablespoonful.
- 4. Sprinkle the all purpose flour on a board and turn out biscuit dough on top. Knead 12 times incorporating flour with each turn.
- 5. With your fingers, pat in to a 5 - 6 inch square. Cut in 4 and place biscuits on a baking sheet.
- 6. Bake in a 425 degree oven 10 - 12 minutes. Serve hot from the oven. Makes 4 biscuits.

Steps:
- Preheat oven to 400 degrees.
- In a medium non-stick skillet, cook the sausage and onion over medium heat, about 5 minutes or until meat is done. Drain any excess grease.
- Cook the scrambled eggs.
- Add the cheese and sausage/onion mixture to the eggs.
- Divide each biscuit in half by pulling apart the layers. Press each half into non-stick muffin tins coated with non-stick cooking spray. Divide the meat evenly into the prepared muffin tins. Bake for 10 minute.
- To Freeze: cool baked cups to room temperature Freeze on baking sheet, then transfer to zip-top freezer bags.
- To Prepare after Freezing: Preheat oven to 350. Defrost cups or place them frozen on a nonstick baking sheet. Bake for 10-15 min or until heated through OR.
- Reheat in microwave approximately 1 minute.

- Preheat oven to 400 degrees F (200 degrees C). Grease 18 muffin cups with cooking spray.
