No need to boil or drain the pasta in this dish. Just stir the uncooked pasta right into your saucy chicken mixture and simmer away. The pasta is extra delicious from absorbing all of the fabulous flavours.

Steps:
- Heat oil in a large saucepan over medium-high heat. Add chicken and cook for 5 minutes, stirring occasionally, until browned. Add garlic; cook and stir for 30 seconds.
- Stir in the soup and broth; mix well. Stir in the penne and bring to boil. Reduce heat to medium. Cook, uncovered, stirring occasionally, for 15 minutes.
- Stir in peas. Cook 3 minutes or until the penne is tender and the chicken is cooked through. Sprinkle with cheese and basil.

SIMPLY PARMESAN CHICKEN
This is a favorite around our house; it's quick, easy and tastes great! This is a recipe that I came up with; measurements can be varied depending on your taste, i.e. if you want more cheese add more cheese, if you want less use less, you really can't hurt it. And you really can't mess it up as long as you use this recipe as a foundation.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl mix together the bread crumbs, Italian seasoning and Parmesan cheese. Dip chicken breasts in egg, then in bread crumb mixture to coat. Place coated chicken in a 9x13 inch baking dish.
- Bake in the preheated oven for 30 to 35 minutes or until juices run clear, turning over chicken 5 minutes before removing from oven.

Instead of frying, these breaded chicken thighs are baked in the oven. Chicken thighs are more juicy than chicken breasts, and more forgiving, if they stay in the oven a minute too long. It's always best to rely on a meat thermometer, though. Nearly any vegetable or salad will work as a side. I pulled out some leftovers and hardly anyone noticed because of the tasty chicken.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or roasting dish with avocado oil.
- Stir egg, garlic, salt, and pepper together in a wide shallow bowl until well combined. Combine panko and Parmesan cheese on a plate.
- Pat chicken thighs dry with paper towels. Dip each thigh into the egg mixture, then place on the panko mixture and cover both sides with crumbs, shaking off any excess. Transfer to the prepared pan in a single layer, and spray the tops lightly with avocado oil.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, 25 to 35 minutes. An instant-read thermometer inserted into the thickest part of each thigh should read at least 165 degrees F (74 degrees C).

- Slice the chicken breast into ½ inch (1 ¼ cm) thick strips.
- Place the flour, eggs, and bread crumbs into 3 separate bowls.
- Roll a chicken strip in the flour, dusting off excess. Dip the strip into the egg, then place into the bread crumbs, coating it completely.
- Repeat with the remaining chicken.
- Heat the oil in a pan over medium heat to 350˚F (180˚C).
- Preheat oven to 350°F (180˚C).
- Fry the breaded chicken strips until both sides are golden brown.
- Remove from heat and drain on a paper towel.
- Slice the baguette into thirds or fourths (each baguette piece should be roughly the same length of the fried chicken strips).
- Hollow out the insides of the baguette pieces with a knife.
- Lay two slices of mozzarella on top of each other with a 1 inch (2 ½ cm) overlap. Place a chicken strip on the overlapping region, then fold the mozzarella tightly around the chicken.
- Push the rolled chicken strips into a baguette piece.
- Slice the stuffed baguette pieces into 1 inch (2 ½ cm) slices, then place them tightly side-by-side on a baking sheet lined with foil.
- In a small bowl, mix together ingredients for garlic butter.
- Brush the garlic butter evenly over the baguette slices, making sure some drips in between the slices.
- Wrap the foil over the re-assembled baguette and bake for 20-25 minutes, until cheese is melted and the top is starting to brown.
- Remove the foil and serve with marinara!

Just something I whipped up one night when everyone else wanted pizza. They were eating bits of this in 10 minutes. Alter what you want to fit your needs, I made it up as I went along.

- SAUCE:
- ~~NOTE: Before you start the sauce, put your breasts on a griddle and cook them, be sure to keep an eye on them.~~.
- Put the garlic, basil and olive oil in the food processor and whirl it up until it is mixed well throughout. A blender or just slicing by knife works fine if you do not own a food processor. Set aside.
- In a small saucepan: combine cornstarch, milk, and cheese. Mixture should be kind of runny, if not add some milk until desired consistency.
- Once you have reached a desired consistency, add the garlic mixture to the cause and bring to a low boil.
- After the sauce has boiled put it through a small wire sift to get any clumps of starch out. Set aside
- CHICKEN:
- ~~NOTE: Before you start the chicken, start the water for your pasta~~.
- Cut your cooked chicken breasts into 2-3 inch pieces and put into a frying pan on low heat.
- Add the cheese, breading, and garlic and turn the heat to Medium-High so that the cheese can melt and the breading will stick.
- ~~Check your water, if it is boiling, add the pasta.~~.
- When all the cheese is melted and the chicken pieces are covered, remove them from the heat.
- FINISHING:.
- Drain the pasta and then re-sift the sauce onto the noodles.
- Mix the sauce and noodles and then add the chicken.
- Mix all together in a pot and serve warm.
