- 1. Grease 2 baking sheets or you can use parchment paper in place of greasing the sheets.
- 2. Select the dough cycle and loaf size for 2 lbs.
- 3. Add ingredient (except cornmeal) to your pan in order listed. Start the machine and let it run through dough cycle.
- 4. Once dough cycle completes; divide dough into 8 equal pieces. Flatten into a 6-inch cirle. Fold the top each toward you cover about 2/3 of the circle. Flap other side over (envelope style) and pinch seam together to seal. Form into a football shape, tapering the ends.
- 5. Dip each roll (seam side only) in the cornmeal. Place seam side down on baking sheets. Cover lightly and let rise until double, about 45 minutes to an hour or until an impression remains in dough when lightly pressed with your finger. NOTE: I put these in my oven with the oven light on to rise. About 5 minutes before I bake, I remove from oven and preheat oven for baking. The warmth from the light in the oven helps with rising the dough.
- 6. Preheat over to 375 degrees. With a sharp thin blade knife, make a lengthwise cut (about 1/2-inch deep) on top of each roll. Bake 20 to 25 minutes until they are lightly browned and sound hollow when tapped.
- 7. Cool on rack. Best served on day they are baked, or they can be frozen up to 3 months in freezer bags.

BREAD MACHINE CONDENSED MILK SWEET BREAD
This is my family's favorite bread machine recipe. You can bake it in your bread machine but I prefer to do it the way the recipe reads. I don't care for the way my machine bakes bread. Make sure all of your ingredients are at room temperature before starting.

Steps:
- Put ingredients in bread machine according to your machine's manufacturing directions and set the dough cycle.
- When done, remove and seperate into 3 sections.
- Roll each section out like snakes and mesh ends together.
- Braid and press ends together.
- Place in baking dish and allow to rise for 25-30 minutes.
- Brush melted butter or egg white on top after rising.
- Bake at 340 degrees for 30-45 minutes, until top is golden brown.
- If a better crust is wanted: Heat some water in an oven proof container in the microwave until near boiling. Then place water in the oven beside the bread.

SWEET BREAD (FOR BREAD MACHINES)
Years ago when I lived in Colorado, a neighbor, Pat gave me a loaf of bread for an early Christmas present. It was so lucious that I asked for the recipe, and then discovered it was made in a Bread Machine...so asked for one for a Christmas gift from my husband. I have been making this recipe ever since. It is the favorite of all breads I make. I usually use the dough cycle and bake in a conventional oven since I prefer the crust texture that way.

- Depending on the type of machine you have put the wet and dry ingredients in your machine as per it's instructions. (mine says wet first, then dry-- making a well in the flour to put in the yeast last.).
- Set the machine to it's bread setting.
- Start the machine and remove the cooked bread when the cycle is finished.
- ***If you wish you can set the unmixed dough to the 'dough' setting and dough removed at the end of the dough cycle so it can also be made by hand and baked in a 375 degree oven for about 35-40 minutes, or until golden brown and sounds hollow when tapped.
- Special note**A inexpensive way to purchase your bread flour is at one of the warehouse markets.
- I buy 25 pound bags at Sam's for less than$5.
- 00 a bag.

100% SPELT BREAD (BREAD MACHINE) 2LB LOAF

Personally, I make a 1 lb loaf in a Black & Decker bread machine designed for a 1-1/2 lb loaf. For a slightly different loaf, use 3 1/2 cups spelt flour and 1/2 cup quinoa flour. Note: The rapid bake cycle on my bread machine is approx. 2 hours long. I have noticed that some bread machines have a super rapid cycle of approx. 1 hour. I doubt this recipe would work on a super rapid cycle. (Note on nutrition values: the nutrition values for the spelt flour and almond milk are not included in the nutrition table. It appears Food.com does not have spelt flour and almond milk in their database.)
