This is one of my favorite cookie recipes that has been passed down to me from my Grandmother. Friends and family love them-- they are so addictive!

½ cup butter
¾ cup white sugar
1 egg, beaten
1 cup quick cooking oats (such as Quaker™)
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, and baking powder.
  • Drop teaspoonfuls of dough onto the prepared baking sheet.
  • Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from foil.

1/4 cup sugar
1/4 cup margarine
1/4 cup Karo light corn syrup or 1/4 cup dark corn syrup
1/2 cup flour
1/4 cup very finely chopped pecans or 1/4 cup very finely chopped walnuts
2 tablespoons brandy
melted white chocolate (optional) or melted semisweet chocolate (optional)

Steps:

  • Preheat oven to 350°f.
  • Lightly grease and flour cookie sheets.
  • In small saucepan combine sugar, margarine, and corn syrup.
  • Bring to boil over medium heat.
  • ,stirring constantly.
  • Remove fom heat.
  • Stir in flour, pecans and brandy.
  • Drop 12 evenly spaced half teaspoonfuls of batter onto prepared cookie sheets.
  • Bake 6 minutes or until golden.
  • Cool 1 to 2 minutes until cookies can be lifted but are still warm and pliable; remove with spatula.
  • Curl around handle of a wooden spoon;slide off when crisp.
  • If cookies harden before curling, return to oven to soften.
  • If desired, drizzle with melted chocolate.
  • If time is limited, curling of the cookies is optional.

My grandmother had two cookies she was famous for...this is one of them. they are crunchy, rich, fancy and almost a bit like brittle candy. These are sandwich cookies and great for parties and having with tea.

Number Of Ingredients 7

1/2 cup butter
1/4 cup shortening
2/3 cup light brown sugar
1/2 cup light corn syrup
1 cup sifted flour
1 cup finely chopped walnuts
1 cup semi-sweet chocolate chips

Steps:

  • Place butter, shortening, syrup and sugar in the top of a double boiler and bring to a boil over direct heat. Remove from heat and blend in flour and nuts.
  • Drop by teaspoonfuls on a greased, foiled line cookie sheet.
  • Bake at 325 degrees for 8-10 minutes. Cool slightly before removing from sheet.
  • Place chocolate in new pan and melt over double boiler. When almost melted, remove from heat and stir until melted.
  • Brush one cookie with chocolate and cover with another.
  • Refrigerate til set.

  • Melt butter in a medium saucepan on low heat. Once melted, add the brown sugar, almond flour, salt, and milk/corn syrup. Cook and whisk until sugar has dissolved and ingredients are completely combined, around 3-4 minutes. (Note: If melted butter is separating from the mixture, remove the pan from heat and vigorously whisk until it is all combined again. It will eventually come back together.)
  • Remove from heat and whisk in vanilla extract. Mixture will be grainy and shiny. Allow cookie dough to sit and thicken for about 5-10 minutes as the oven preheats. The mixture will thicken as it cools down.
  • Preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats.
  • Drop scant teaspoonfuls of mixture 3 inches apart onto prepared baking sheets. Bake for 6-8 minutes until golden brown around the edges. The edges and centers will sizzle and bubble as the cookies bake!
