SHRIMP IN MANGO CHILI SAUCE

3/4 cup frozen mango chunks
3/4 cup chili sauce
1/4 cup orange marmalade
3 tablespoons coconut milk
1 tablespoon lime juice
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 green onions, chopped
1/3 cup coarsely chopped fresh cilantro
1/4 cup chopped cashews
Additional cilantro
Warm cornbread, optional

Steps:

  • Place first 5 ingredients in a large skillet; bring to a boil over medium heat, stirring frequently. Add shrimp and green onions; return to a boil. Reduce heat; simmer, uncovered, until shrimp turn pink, 6-8 minutes, stirring occasionally. Stir in 1/3 cup cilantro., Sprinkle with cashews and additional cilantro. If desired, serve with cornbread.

Number Of Ingredients 8

8-10 corn tortillas
3 tbsp vegetable oil
100g small shelled prawns
juice 1 lime
½ mango , peeled, deseeded and finely diced
2 tbsp finely diced red onion
1 red chilli , finely diced
handful coriander , finely chopped and some whole leaves reserved

Steps:

  • Heat oven to 200C/180C fan/gas 6. Using a 6cm pastry cutter, cut out circles from the tortillas. Heat the tortilla circles from the tortillas. Heat the tortilla circles for 5 secs in a microwave, then press into a mini muffin tin. Brush with the oil and bake for 8-10 mins until golden and crisp. Remove and leave to cool completely.
  • Chop the prawns into small pieces and marinate in the lime juice for 5 mins. Put the prawns and lime juice in a bowl with the mango, red onion, chilli and coriander. Season, mix together and use to fill the corn cups just before serving. Top with coriander leaves.

6 tablespoons (3/4 stick) unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup all-purpose flour
1/2 cup cornmeal
Pinch of salt
Classic Mexican Guacamole, for filling
Spicy Pulled Pork, for filling
Citrus Salsa, for filling

Steps:

  • Preheat oven to 350 degrees with rack in center. In the bowl of an electric mixer fitted with the paddle attachment, mix together butter and cream cheese. Combine flour, cornmeal, and salt in a small bowl. Add gradually to butter mixture, mixing constantly until well incorporated.
  • Divide dough into 1-inch balls and press into small muffin tins, using your thumbs to form cups inside the mold. Dough cups should be as even as possible and come up to the top of the tins.
  • Bake until golden brown, about 20 minutes. Spoon desired filling into cups, and serve.

4 chicory heads
2 x 150g packs cooked and peeled king prawns
2 x 300g packs freshly prepared mango pieces
a few sprigs of salad cress
4 tbsp olive oil
juice 2 lemons
2 tsp finely chopped coriander

Steps:

  • Separate the chicory heads into leaves, then divide the king prawns, mango pieces and a few sprigs of salad cress between them.
  • Assemble a few hours ahead and chill. Whisk together the olive oil, lemon juice and finely chopped coriander and drizzle a little over each filled chicory leaf.

Healthy prawn and mango party nibbles, salsa-spiked for a little kick

3 Little Gem lettuces , broken into individual leaves
1 ripe mango
1 finely chopped red onion
1 chopped mild red chilli
juice 1 lime
4 tbsp light olive oil
225g pack cooked, peeled tiger prawn
handful chopped coriander

Steps:

  • Break the lettuces into individual leaves. Peel and dice the mango and mix with the finely chopped red onion, chopped mild red chilli, the juice 1 lime and the light olive oil. Mix well and set aside at room temperature, covered with cling film. Just before serving, take a the peeled tiger prawns and cut them in half horizontally. Mix into the mango mixture with a handful chopped coriander. To serve, spoon the mixture on to the Little Gem leaves and arrange on a large platter or plate.

King prawns on the bbq with mango salad...yumm! This recipe yields five prawns per person....if serving as an appetizer then 2 prawns per person would be plenty.

20 king prawns (green)
3 mangoes, peeled and diced
1 cup coriander leaves
2 limes, cut into wedges
3 chilies, deveined, deseeded and finely chopped
1 tablespoon olive oil
4 limes, juice of
1/3 cup palm sugar, grated
2 tablespoons fish sauce
2 garlic cloves, crushed and chopped
20 bamboo skewers

Steps:

  • Soak skewers in cold water.
  • Peal and devein prawns leaving the the tails intact.
  • Mix the chillies, olive oil, lime juice, palm sugar, fish sauce and garlic well and pour half into a ziplock bag.
  • Add the prawns and refrigerate for 30 minutes.
  • Put the mangoes and coriander in a bowl and add the remaining marinade, toss and refrigerate.
  • Thread prawns onto skewers.
  • Preheat your barbecue on medium high heat. Barbecue prawns, turning and basting for about 3 minutes until the flesh is pink.
  • Serve with mango salad and lime wedges.
