VIENNESE ICED COFFEE

4 scoops vanilla or coffee ice cream
Unsweetened cocoa powder, such as Pernigotti
6 (1-ounce) shots of espresso, regular or decaf
3 tablespoons sugar
1 teaspoon pure vanilla extract
1/4 cup hot water
2 cups ice
Short straws, for serving

Steps:

  • Combine the espresso, sugar, vanilla, and hot water in a blender and stir until the sugar dissolves. Put the ice in the blender and process on high until the mixture is almost completely smooth. Divide the mixture among 4 short glasses.
  • Place the ice cream in a microwave on high for 15 seconds, until softened. Scoop one ball of ice cream into each glass. With a small sifter, sprinkle each drink lightly with cocoa powder. Serve with a short straw and a teaspoon.

3 tablespoons chocolate syrup
1 teaspoon sugar
1/3 cup heavy whipping cream
1/4 cup creme de cacao or Irish cream liqueur
Whipped cream and chocolate curls, optional

Steps:

  • In a 1-1/2-qt. slow cooker, combine the coffee, chocolate syrup and sugar. Cover and cook on low for 2-1/2 hours. , Stir in heavy cream and creme de cacao. Cover and cook 30 minutes longer or until heated through. , Ladle coffee into mugs. Garnish with whipped cream and chocolate curls if desired.

½ cup dark roast ground coffee beans
½ cup sweetened condensed milk
16 ice cubes

Steps:

  • Brew coffee with water using your preferred method to make brewed coffee. Spoon 2 tablespoons of sweetened condensed milk into each of 4 coffee cups. Pour 1 cup of fresh hot coffee into each cup, and stir to dissolve the milk.
  • Serve guests cups of coffee, and give each one a tall glass with 4 ice cubes, and a long handled spoon. Guests pour hot coffee over the ice cubes and stir briskly with the long handled spoon, making an agreeable clatter with the ice cubes to chill the coffee.

150ml freshly brewed black coffee
50ml Irish whiskey
½ - 1 tsp brown sugar
pinch freshly grated nutmeg

Steps:

  • Lightly whip the cream just so it's very slightly thickened, then set aside.
  • Pour the hot coffee into a mug or heatproof glass, then add the whiskey and sugar. Stir until the sugar has dissolved. Gently float the cream on the top and sprinkle the nutmeg over the cream. Serve hot.

4 egg yolks
150ml condensed milk
1 tsp vanilla extract
200ml strong espresso (approx 4 x double espressos)
dark chocolate , grated (optional)

Steps:

  • Put the egg yolks, condensed milk and vanilla extract in a large mixing bowl. Whisk with electric beaters for at least 5 mins or until pale and foamy.
  • Put 4 heatproof glasses or ramekins into slightly larger bowls that have been half-filled with boiling water (this will keep the coffee in the glasses hot for longer).
  • Pour the freshly brewed coffee into the glasses, reserving 2 tbsp, then top with scoops of the egg mixture. Drizzle the remaining coffee on top so that it stains the topping and sinks in. Scatter over a pinch of the grated dark chocolate, if you like. Serve immediately, with spoons.
