1/3 cup plus 1 tablespoon granulated sugar
3 extra-large eggs, at room temperature
6 tablespoons all-purpose flour
1 1/2 cups heavy cream
2 teaspoons pure vanilla extract
1 teaspoon grated lemon zest (2 lemons)
1/4 teaspoon kosher salt
2 tablespoons pear brandy (recommended: Poire William)
2 to 3 firm but ripe Bartlett pears
Confectioners' sugar
Creme fraiche

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a 10 x 3 x 1 1/2-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.
  • Beat the eggs and the 1/3 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.
  • Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top is golden brown and the custard is firm, 35 to 40 minutes. Serve warm or at room temperature, sprinkled with confectioners' sugar, and creme fraiche.

¼ pound ripe Brie cheese, cut into 24 small chunks
1 ripe pear, cut into small dice
2 sprigs fresh thyme
2 tablespoons honey, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a jelly roll pan with parchment paper.
  • Arrange tart shells onto prepared pan. Put a piece of Brie cheese into each shell. Sprinkle diced pear and a couple thyme leaves into each shell and drizzle with honey.
  • Bake in preheated oven until cheese is melted and tarts are golden, 12 to 15 minutes.

1 1/4 cups all purpose flour
1/3 cup sugar
3/4 teaspoon grated lemon peel
1/4 teaspoon salt
6 tablespoons (3/4 stick) unsalted butter, room temperature
1 large egg, beaten to blend
For pastry cream
2 large egg yolks
1/4 cup sugar
3 tablespoons all purpose flour
1 cup whole milk
2 3-inch-long strips lemon peel (yellow part only)
1/2 teaspoon vanilla extract
1/2 cup (about) sour cherry jam
Powdered sugar

Steps:

  • Make pastry:
  • Mix first 4 ingredients in medium bowl. Add butter. Rub in with fingers until butter is size of small peas. Add egg; mix until dough comes together. Gather into ball. Shape into 5-inch-long log. Wrap in waxed paper; chill 1 hour.
  • Make pastry cream:
  • Whisk yolks and 1/4 cup sugar in heavy small saucepan. Whisk in flour, then milk. Add lemon peel. Bring to boil over medium-high heat, whisking constantly. Remove from heat. Whisk in vanilla. Transfer to bowl. Press plastic wrap onto surface. Chill until cold, about 1 hour. (Pastry and pastry cream can be made 1 day ahead. Keep chilled.)
  • Preheat oven to 375°F. Cut dough into twenty 1/4-inch-thick slices. Roll out 1 dough slice between sheets of floured plastic wrap to 3 1/2-inch round. Transfer to 3-inch-diameter tartlet pan with 1/2-inch-high sides. Repeat with 9 more dough pieces and tartlet pans.
  • Remove lemon peel from pastry cream. Spoon 1 tablespoon pastry cream into each crust. Top each with 2 teaspoons jam. Roll remaining 10 dough pieces out between sheets of floured plastic wrap to 3 1/2-inch rounds. Place 1 round atop each tartlet. Pinch dough edges together to seal.
  • Place tartlets on baking sheet. Bake until pastry is golden on top, about 30 minutes. Using small knife, loosen tartlets from pans. Remove from pans. Transfer to rack; cool. Sift powdered sugar over.

1 1/2 cups dried tart cherries
1/2 cup packed light brown sugar
1 teaspoon finely chopped fresh rosemary
2 tablespoons fresh lemon juice
1 tablespoon cornstarch
Frozen-butter pastry dough
1 large egg, lightly beaten

a 2-inch leaf-shaped cookie cutter

Steps:

  • Make filling:
  • Peel pears and cut into 1/2-inch pieces. Cook pears, cherries, brown sugar, and rosemary in a 4- to 5-quart heavy pot over moderate heat, stirring, until pears are tender, about 20 minutes.
  • Stir together lemon juice and cornstarch in a small cup and stir into pear mixture. Cook, stirring, 1 minute, or until thickened. Transfer filling to a bowl and cool completely.
  • Prepare shell while filling cooks and cools:
  • Roll out larger disk of pastry dough into a 13-inch round on a lightly floured surface, keeping remaining disk chilled, and fit into a 10-inch round tart pan (1 inch deep) with a removable fluted rim. Roll rolling pin over top of pan to trim dough flush with rim, then lightly prick bottom all over with a fork. Chill shell 30 minutes.
  • Preheat oven to 425°F and place a large baking sheet in middle of oven.
  • Roll out remaining dough into a 12-inch round on a lightly floured surface and with leaf-shaped cutter cut out as many leaves as possible.
  • Fill and bake tart:
  • Spoon filling into tart shell, smoothing top, and decorate with pastry leaves. Brush leaves and pastry rim with some beaten egg.
  • Bake tart on preheated baking sheet in middle of oven until pastry leaves are golden, about 50 minutes. (If pastry rim gets too brown, tent rim with foil or a pie shield.)
  • Cool tart in pan on a rack at least 1 hour.

1/2 cup dried sour cherries (about 3 ounces)
1/3 cup golden raisins
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon salt
3/4 cup walnuts, toasted lightly and chopped fine
2 tablespoons brandy

Steps:

  • Peel, quarter, and core pears. Chop pears coarse and in a bowl toss with lemon juice.
  • In a dry 3 1/2- to 4-quart heavy saucepan cook 1/3 cup sugar over moderate heat, stirring with a fork, until melted and cook, without stirring, swirling pan, until a golden caramel. Remove pan from heat and carefully add water down side of pan (caramel will steam and harden). Return pan to heat and simmer mixture, stirring, until caramel is dissolved. Add pears, remaining 1/3 cup sugar, cherries, raisins, spices, and salt and simmer, stirring occasionally at beginning of cooking and frequently toward end to prevent sticking, until thickened, about 50 minutes.
  • Stir in walnuts and brandy and cook, stirring, 1 minute. Cool mincemeat. Mincemeat may be used immediately but will improve in flavor if kept, covered and chilled, at least 1 day and up to 1 week.

PEAR AND SOUR CHERRY BROWN BETTY WITH BRANDY HARD SAUCE

Most brown betties are made with sweetened apple slices. To mix things up a bit, I made mine with pears, and threw in some brandy-soaked dried cherries to accentuate the brandy I'd used to season the hard sauce. As soon as the pear betty emerges from the oven, spooned out a portion and cover it with lumps of hard sauce. The sauce melts on contact, dripping goodness into the fruit and soaking into the crevices of the toasted bread topping.

12 tablespoons unsalted butter, softened
1 1/4 cups confectioners' sugar
1/4 cup Cognac or brandy
Pinch of grated nutmeg
3 tablespoons Cognac or brandy
2/3 cup dried cherries
1/2 cup sugar
1 teaspoon grated nutmeg
1/2 teaspoon ground cinnamon
3 1/2 cups white bread or challah, cut into 1/2-inch cubes
7 tablespoons unsalted butter, melted
Grated zest of 1 lemon
2 pounds ripe pears about 5 pears, peeled, cored and thinly sliced
3 tablespoons hard cider or apple cider

Steps:

  • To make the hard sauce, in a medium bowl set an electric mixer on high and beat the butter until fluffy. Reduce speed to low and add confectioners' sugar. When the sugar is incorporated, set the speed back to high. Add the brandy 1 tablespoon at a time and beat until combined. Beat in the nutmeg. Transfer the sauce to a ramekin or bowl, cover and refrigerate. Hard sauce can be made at least a week ahead, but allow it to come to room temperature before serving (about 20 minutes).
  • To make the brown betty, heat the Cognac or brandy in a small saucepan over medium heat. When the liquid has come to a simmer, turn off the heat and add the cherries. Allow them to absorb most of the liquid, about 20 minutes.
  • While cherries are standing, heat oven to 375 degrees. In a large bowl, whisk together the sugar, nutmeg and cinnamon. Set aside 2 tablespoons of the sugar mixture for sprinkling. Add bread, butter and lemon zest. Toss until sugar has dissolved and bread is completely coated.
  • In a shallow 1 1/2-quart gratin dish (or a 9-by-9-inch pan), scatter a little under half the bread cubes. Layer half the pear slices and half the cherries (along with any liquid) on top. Cover with a cup of bread crumbs and sprinkle with 1 1/2 tablespoons cider. Layer remaining pears, cherries and bread. Sprinkle top with remaining cider and reserved sugar-and-spice mixture.
  • Cover dish with aluminum foil and bake for 40 minutes. Take off foil and continue baking, until crumbs are golden brown and pears are very soft, about 15 minutes more. Serve warm with dollops of hard sauce.

5 cups unsweetened apple juice
3 tablespoons (packed) golden brown sugar
2 tablespoons mild-flavored (light) molasses
3 tablespoons finely chopped crystallized ginger
3 cinnamon sticks, broken in half
1/4 teaspoon ground nutmeg
1 17 1/4-ounce package frozen puff pastry, thawed in refrigerator
1 large egg, beaten to blend (for glaze)
4 teaspoons sugar
4 large egg yolks
2 tablespoons brandy

Steps:

  • Trace outline of 1 pear half onto a piece of parchment paper. Cut out pear template. Set template aside.
  • Mix 5 cups apple juice, brown sugar, molasses, ginger, cinnamon and nutmeg in heavy large saucepan. Cover and bring to simmer. Add pears and return mixture to simmer. Reduce heat. Cover and simmer slowly until pears are tender when pierced with knife, about 20 minutes. Using slotted spoon, transfer pears to plate. Boil poaching liquid in saucepan until reduced to generous 1 cup, about 25 minutes. Set aside.
  • Preheat oven to 375°F. Line baking sheet with parchment paper. Place cold pastry on work surface. Using template as guide, cut 8 pear shapes from pastry. Place pastry cutouts on prepared baking sheet. Brush with egg glaze; sprinkle each with 1/2 teaspoon sugar. Bake until pastry is golden, about 15 minutes. Cool on baking sheet.
  • Transfer 1/2 cup pear poaching liquid to large metal bowl. Whisk in egg yolks and 2 tablespoons brandy. Set bowl over saucepan of simmering water (do not allow bowl to touch water). Using handheld electric mixer, beat until sabayon is thick and foamy and thermometer registers 160°F, about 4 minutes. Remove bowl from over water. (Pears, poaching liquid, pastries and sabayon can be prepared 1 day ahead. Store pastries in airtight container. Cover pears, poaching liquid and sabayon separately and refrigerate. Before serving, bring poaching liquid to room temperature. Rewarm sabayon in glass bowl in microwave on high for about 1 minute, whisking every 10 seconds.)
  • Preheat oven to 350°F. Rewarm pastries in oven for 5 minutes. Place 1 pastry on each plate. Arrange 1 poached pear half off-center atop each pastry. Spoon reduced poaching liquid around pastries. Spoon sabayon atop pears.
