Brandied cranberry sauce is a holiday side dish bursting with warm spice, zesty oranges with sweetness from brown sugar and brandy.

12 ounces cranberries ((1 bag), fresh, rinsed)
½ cup water
1 teaspoon orange zest
½ cup freshly squeezed orange juice
¼ cup granulated sugar
½ cup light brown sugar
2 cinnamon sticks
2 tablespoons brandy ((optional))
½ teaspoon pure vanilla extract

Steps:

  • Rinse the cranberries before use. Sort cranberries and discard anything that looks odd.
  • In a medium saucepan over medium heat, combine the cranberries, water, orange zest, orange juice, both sugars, and cinnamon sticks.
  • Bring the mixture to a boil, then reduce the heat to simmer. Be careful! Watch the cranberries closely. They can bubble up and could possibly boil over if you are not watching them.
  • Simmer the cranberry mixture for 5 minutes, stirring occasionally.
  • Stir in the brandy and continue to simmer until cranberries begin to burst and the sauce reduces slightly; about 5 more minutes.
  • Turn off the heat. Remove the cinnamon sticks from the cranberry sauce.
  • Stir in the vanilla extract and pour the sauce into a serving dish or storage container. Allow the sauce to cool and thicken up; 30 minutes.

I changed Millicent's recipe a smidge feeling adding some orange liqueur would be perfect with the brandy and cranberries. The original recipe called for 1 cup brandy only. She also calls to 'serve in a pretty dish' but I had trouble imagining eating them solo.

1 pound fresh cranberries
2 cups granulated sugar
3/4 cup brandy
1/4 cup orange liqueur (I used Citronage (Grand Marnier is another option))
1 small dining spoon Brandied Cranberries
1 1/2-2 ounces bourbon
Bitter Lemon or Ginger ale
Orange slice (garnish)

Steps:

  • Preheat oven to 350 degrees.
  • Combine cranberries and sugar in a shallow baking pan allowing a single layer only. Bake for 1 hour. NOTE: Check every 15 minutes for sticking. During the last 30 minutes use a spatula to move cranberries around, mixing them with the melted sugar. Any patches of melted sugar can burn or harden.
  • Remove from oven and pour in brandy and orange liqueur. Stir to completely combine as the mixture sizzles.
  • Can be served at any temperature. Store in a sealed glass container in the refrigerator.
  • Place all ingredients in a small cocktail glass in the order listed using the Bitter Lemon or Ginger ale to fill glass to desirable level.
  • Make a quarter slice on the orange slice, twist and add to cocktail for flavor and garnish.

2 (12-ounce) packages fresh cranberries
1½ cups firmly packed brown sugar
1 cup water
½ cup fresh orange juice
½ teaspoon cinnamon
⅛ teaspoon ground mace
⅛ teaspoon ground cardamom
2 tablespoons brandy* (optional)

Steps:

  • In a medium saucepan, combine cranberries, next 6 ingredients, and if desired, brandy. Bring to a boil over medium-high heat. Reduce heat, and simmer, stirring occasionally, for 25 to 30 minutes or until berries burst and sauce thickens. Store in an airtight container in refrigerator up to 3 days.

BRANDIED ORANGE AND CRANBERRY SAUCE

This is the best cranberry sauce you will ever eat!

⅔ cup orange zest
2 cups water
2 cups white sugar
⅔ cup orange juice
1 tablespoon lemon juice
3 cups cranberries
1 tablespoon brandy

Steps:

  • In a small pan over medium heat, combine the orange zest and water. Cover and bring to boil. Reduce heat and simmer for 15 minutes. Drain, reserving zest and 1/3 cup liquid.
  • To the reserved liquid, add the sugar, orange juice and lemon juice. Bring to boil; reduce heat and simmer for 3 minutes uncovered, stirring often.
  • Add cranberries; increase heat to medium-high and boil for about 10 minutes or until the cranberries have popped and a small spoonful of sauce sets on a cold plate.
  • Remove from heat, stir in brandy. Pour into 4 1/2 pint jars leaving 1/2 inch space from top. Place lids onto jars, and store in the refrigerator for up to two weeks.

2 cups granulated sugar
1/4 cup brandy
1/3 cup granulated sugar

Steps:

  • Place the cranberries in a glass 13x9x2-inch baking dish.
  • Cover the cranberries with the 2 cups of sugar, but do not stir.
  • Cover baking dish tightly with aluminum foil.
  • Bake 50-55 minutes in a 350º oven; until the cranberries burst.
  • Remove baking dish from the oven.
  • Remove the foil and stir.
  • Let stand 10 minutes, then drizzle with the brandy.
  • Stir in the 1/3 cup of sugar.
  • Cool to room temperature; then refrigerate.

1 pastry for double-crust 9-inch pie
1 small seedless orange, finely chopped (including peel)
2 tablespoons lemon juice
1 (21-ounce) can peach pie filling
1 cup dried cranberries (recommended: Craisins brand)
1/2 cup raisins
1/2 cup sugar
2 tablespoons minute tapioca
1/3 cup brandy plus 1 1/2 teaspoons
1/3 cup confectioners' sugar
1 1/2 tablespoons butter, softened

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a 9-inch pie pan with your favorite pastry. In a large bowl, combine orange, lemon juice, peach pie filling, cranberries, raisins, sugar, tapioca, and 1/3 cup brandy. Mix well. Spoon filling mixture into pie crust. Top the pie with another crust and seal and flute the edges. Cut slits into the top crust. Cover the edge of the pie with aluminum foil to prevent excessive browning. Bake for 40 minutes. Remove the foil and bake an additional 20 minutes until the crust is browned. Place pie on rack to cool.
  • Icing: Mix the confectioners' sugar, butter, and remaining 1 1/2 teaspoons brandy in a small bowl until smooth. Gently drizzle or spread over cooled pie.

BRANDIED DRIED FRUIT

The complex layers of flavor that develop from combining dried fruit, citrus, spices and brandy are the reward for an investment of time. And time does most of the work in this recipe, which produces brandied fruit that you can use in an array of dishes and drinks: A two-day soak will get you a fine infusion, but go for the full 14 to extract notes from each component. The spices need time to bloom, and the dried fruit skins plump as they are infused, absorbing the citrus's bite and the brandy's warmth. Use the fruit mixture in scones, cocktails and braised lamb. Or stir the drained fruit into muffin or cake batter, toss with bulkier fruit like apples or pears for use as a filling for hand pies, or serve as a relish to accompany lamb, pork or chicken. As an added bonus, the fruit mixture keeps in the refrigerator for months. Store in an airtight container and avoid adding any moisture to the jar by using only dry utensils to serve.

4 ounces/110 grams dried cherries
2 ounces/55 grams dried pears, finely chopped
2 ounces/55 grams dried apricots, thinly sliced
1 orange
1 lemon, sliced thin and seeds removed, chopped
2 tablespoons fresh grated ginger (from about a 2-inch piece)
1 teaspoon anise seeds
1 teaspoon freshly ground black pepper
1/2 teaspoon grated nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
About 1 cup/250 milliliters brandy

Steps:

  • In a large bowl, combine the currants, cranberries, cherries, pears and apricots. Zest the orange and add the zest to the bowl. Add the lemon, ginger, anise seeds, black pepper, nutmeg, cinnamon and cardamom.
  • Juice the orange and add the liquid to the bowl. Add the brandy and stir to combine. Transfer the mixture to a jar, cover and refrigerate. (If you don't have a jar that's large enough, keep the mixture in the bowl and cover with plastic wrap.) Allow the fruit to sit in the liquid for 2 to 14 days before using. The flavor of the fruit, spices and brandy will improve with time. At least once a day, turn the jar upside-down (or thoroughly stir the mixture if it's in a bowl) to make sure all the dried fruit gets coated in the brandied liquid. The mixture keeps in the refrigerator for months, stored in an airtight container.
