This rich and fruity sauce is a perfect holiday gift idea, and goes well served over ice cream or used in cocktails.

3/4 cup sugar
3/4 cup water
1 tablespoon fresh lemon juice
1 cup brandy
1 lb fresh dark sweet cherries, pitted
1 (1-quart) heatproof jar with tight-fitting lid

Steps:

  • In 2-quart saucepan, mix sugar, water and lemon juice. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes or until mixture slightly reduces and thickens. Remove from heat. Stir in brandy and pitted cherries.
  • Transfer cherries and liquid to jar (liquid should cover cherries completely). Cover with lid; seal tightly. Cool completely, about 3 hours.
  • Store in refrigerator 4 to 6 weeks before serving.

1/2 cup dried cherries, finely chopped
1/2 cup cherry brandy
3 ounces cream cheese, softened
1 tablespoon butter, softened
3-3/4 cups confectioners' sugar
6 ounces dark chocolate candy coating, chopped
1 tablespoon shortening
DRIZZLE:
White candy coating, chopped
Pink paste food coloring

Steps:

  • Place cherries in a small bowl. Cover with brandy; refrigerate overnight., In a large bowl, beat cream cheese and butter until smooth. Add confectioners' sugar; beat until crumbly. Drain cherries, reserving 2 teaspoons brandy. Add cherries and reserved brandy to cream cheese mixture. , Roll into 1-1/2-in. balls. Place balls on a waxed paper-lined baking sheet. Cover loosely and refrigerate for 1 hour., In a microwave, melt dark chocolate candy coating and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Return to the baking sheet., For drizzle, melt a small amount of white candy coating in a microwave; stir in food coloring until smooth. Drizzle over candies. Chill until set.

42 maraschino cherries
1/2 cup graham wafer crumbs
1/2 cup butter (softened)
1 3/4 cups icing sugar (sifted)
1 tablespoon orange juice
1 1/2 cups coconut (finely shredded or grated)

Steps:

  • Dry the cherries on paper towel.
  • Cream the butter and gradually mix in the icing sugar and orange juice.
  • Add coconut and mix well.
  • Note: this mixture will be soft.
  • Roll a small portion of the coconut mixture evenly around each cherry and then roll in graham wafer crumbs.
  • Place on wax paper and keep cool.

  • Whisk the room-temperature syrup with brandy, and pour it over the cherries. Seal the jar, and place it in a cool, dark cupboard or store it in the fridge. Allow the cherries to age at least six weeks before serving, and shake the jar periodically.
