Pour on the holiday spirit with a splash of brandy and three kinds of cheese. Pumpkin seeds, or pepitas, are a crunchy topping for the smooth spread. -T.B. England, San Antonio, Texas

Number Of Ingredients 11

1 package (8 ounces) cream cheese, softened
1 package (4 ounces) garlic-herb spreadable cheese
3/4 cup crumbled blue cheese
2 tablespoons brandy
1 shallot, finely chopped
1 tablespoon minced fresh parsley
1 tablespoon honey
1/8 teaspoon salt
Dash pepper
1/4 cup salted pumpkin seeds or pepitas
Assorted crackers

Steps:

  • In a small bowl, mix the first 9 ingredients until blended. Transfer to a serving dish; sprinkle with pumpkin seeds., Refrigerate, covered, 2 hours before serving. Serve with crackers.

5 ounces blue cheese (may use the other British variety of Stilton)
3 ounces cream cheese
1 teaspoon brandy
1 teaspoon fresh chives (chopped)
4 dates (pitted)
25 water crackers
fresh parsley sprig (to garnish, or use dry parsley flakes)

Steps:

  • Beat cheeses, brandy & chives in a sml bowl w/an electric mixer till well-combined.
  • Slice dates into very fine strips.
  • Just b4 serving, spread or pipe cheese mixture onto crackers & top w/date strips & parsley.
  • NOTE: Cheese mix can be prepared 2 dys ahead of need, covered & stored in refrigerator.

I made this little appetizer up in a pinch one day (when I was out of eggs and Mean Chef was coming to dinner). Most people do not see dates sliced like this, but they look so artful and the sweetness of the dates matches well with the tart cheese.

1 box water crackers
6 ounces goat cheese
20 pitted dates, approximately

Steps:

  • Spread a light to medium coating of goat cheese on the crackers.
  • Slice the dates into little 1/4 inch"O"s.
  • Place 3 slices of dates on each cracker.
  • Be sure to let everything come to room temperature before serving so you get the full flavor of the cheese and the dates.

4 ounces blue cheese, crumbled
4 tablespoons Worcestershire sauce
1 1/2 tablespoons brandy
1/2 cup chopped walnuts

Steps:

  • Mash together or beat with mixer the butter and cheeses. Add all ingredients excpet nuts. Beat till smooth and fluffy. Fold in walnuts. Dip may be covered and stored in fridge, serve only slightly cool so you can spread it. More nuts may be added if desired.
