This is a wonderful Bundt Cake published in my Southern Living Magazine I received a few days ago. It is a delicious Holiday cake and it will stay fresh on the counter in the cake plate with the top on. It also looks great. Add some Candied Orange Slices around the bottom. Yummy smell while it cooks !!

1 c butter, room temperature
1/2 c shortening, butter flavor
16 oz package of light brown sugar
5 large eggs
1 can(s) 5 ounces evaporated milk
1/2 c bourbon
3 c all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 Tbsp vanilla bean paste
2 Tbsp powdered sugar
GARNISH: CANDIED ORANGE SLICES, CANDIED LIME SLICES AND CLEAN AND SHINNY MAGNOLIA LEAVES.

Steps:

  • 1. Preheat oven to 325 degrees F. Beat butter and shortening at medium speed with a heavy duty electric stand mixture until creamy. Gradually add brown sugar, beating at medium speed until light and creamy. Add eggs, one at a time, beating just until blended after each addition.
  • 2. Stir together evaporated milk and bourbon in a bowl, Sift together flour, baking powder,and salt in another bowl. Add flour mixture to butter mixture alternately with milk mixture, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in vanilla bean paste. Pour batter into into a greased and floured 10 inch, 12 cup Bundt pan.
  • 3. Bake at 325 degrees F for one hour and 5 to 10 minutes. OR...until a long wooden pick inserted in center comes out clean. Cool 10 to 15 minutes in pan on wire rack; remove from pan to wire rack. Cool completely (about one hour). Dust lightly with powdered sugar. GARNISH AROUND BOTTOM OF CAKE WITH CANDIED ORANGE AND LIME SLICES...(MY RECIPE IS POSTED) ALSO DECORATE WITH CLEAN AND SHINNY MAGNOLIA LEAVES. THIS CAKE IS PRETTY COOKED IN THE NEW RIPPLED DESIGNED BUNDT PANS.

3 cups flour
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup whole milk
2 teaspoons vanilla extract
4 tablespoons Bourbon
1 1/2 cups dark brown sugar, packed
1/2 cup sugar
1 cup butter, softened (2 sticks)
5 eggs
2 tablespoons orange juice
1/3 cup sugar
2 tablespoons Bourbon
strawberry (to garnish)
blueberries (to garnish)

Steps:

  • Preheat oven to 325°F.
  • Grease and flour a 12-cup bundt pan.
  • In a medium bowl, combine flour, salt, baking powder, and baking soda.
  • Combine the milk, vanilla, and 4 tablespoons bourbon.
  • In large bowl, with mixer at medium speed, beat brown sugar and 1/2 cup sugar until lump free.
  • Add butter and beat at high speed until light and creamy, about 5 minutes.
  • Add the eggs, one at a time, beating well after each addition.
  • At low speed, alternately add flour mixture and milk mixture, beginning and ending with flour mixture.
  • Pour batter into prepared pan.
  • Bake 1 hour and 20 minutes or until cake springs back when toothpick inserted in center comes out clean.
  • Cool cake in pan on a wire rack for 10 minutes.
  • Remove cake from pan.
  • Frosting:.
  • In small bowl, combine orange juice, 1/3 cup sugar, and 2 tablespoons bourbon.
  • Brush mixture all over warm cake.
  • Cool cake completely.
  • Garnish with berries or other fruit for a pretty presentation.

My mom passed this recipe along to me. It is easy to make and has been a big hit at home and at the office. I get frequent requests for the recipe. It is very moist and delicious and makes a good breakfast cake as well as a dessert. Increase nuts by another 1/3 cup if you like nuts!

1 (18 ounce) box yellow cake mix
1 (3 1/2 ounce) box instant vanilla flavor pudding and pie filling
4 eggs
1 cup vegetable oil
1 cup water
1 cup brown sugar
1 cup chopped pecans

Steps:

  • Grease a 10-inch bundt pan well and sprinkle pan with granulated sugar (even if using non-stick pan).
  • Preheat oven to 350 degrees F.
  • Combine cake mix, pudding mix, eggs, oil and water in large bowl and beat on medium speed until well mixed, about 4 minutes.
  • (Shorten to 2-3 minutes if using stand mixer).
  • Add brown sugar and pecans and mix to combine well.
  • Pour batter evenly into prepared bundt pan and bake for 1 hour or until cake tester comes out clean.
  • Place bundt pan on wire rack and cool 15 minutes.
  • Invert cake onto rack and slip pan off cake.
  • Let cool on rack.
  • Can be stored covered at room temperature.

Plus, a bundt cake, which is really just like an oversize muffin baked in a fancy pan, is easy to whip up. The booze bath helps keep it fresh, meaning you can bake it ahead and eat the leftovers for days.

2 sticks unsalted butter 226 grams, at room temperature, plus more to grease pan
2 1/2 cups all-purpose flour 315 grams, plus more to dust the pan
3 tablespoons (30 grams) plus 1/2 cup (80 grams) bourbon or rye whiskey
1/2 cup (90 grams) candied ginger, chopped
1 3/4 cup (330 grams) light brown sugar
4 large eggs, at room temperature
2 teaspoons (8 grams) baking powder
1 teaspoon (5 grams) baking soda
1 1/2 teaspoons (3 grams) ground cinnamon
1 teaspoon (5 grams) fine sea salt
1/2 teaspoon grated nutmeg
1 cup (227 grams) sour cream
1 tablespoon (15 grams) vanilla extract
1 1/2 teaspoon (5 grams) finely grated lemon zest
2 medium Granny Smith apples about a pound, 454 grams, peeled, cored, and coarsely grated

Steps:

  • Heat the oven to 325 degrees. Grease and flour a 12-cup bundt pan. In a small bowl, combine 3 tablespoons bourbon and the candied ginger. Let stand 10 minutes.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat together the brown sugar and remaining butter on medium-high speed, until light and fluffy, about 5 minutes. Beat in the eggs, 1 at a time, until incorporated.
  • In a separate bowl, whisk together the remaining flour with the baking powder, baking soda, cinnamon, salt and nutmeg. In a separate bowl, whisk together the sour cream and vanilla. Pour in the bourbon from the ginger mixture (reserve ginger) and whisk until smooth. Stir in zest.
  • With the mixer on medium speed, add the dry mixture and sour cream mixture to the wet mixture in three additions, alternating between the two. Fold in the ginger, apples and pecans. Scrape the batter into the prepared pan. Bake until the cake is golden brown and a skewer inserted into the cake comes out dry, about 1 hour 10 minutes. Cool in the pan 20 minutes, then run a paring knife around the sides of the pan to release the cake; cool, flat side down, on a wire rack.
  • While the cake cools, combine the 1/2 cup granulated sugar and 1/2 cup whiskey in a small saucepan. Over low heat, gently stir until the sugar dissolves. Stir in the lemon juice and take off the heat.
  • While the cake cools, make 10 slits on top with a paring knife and pour half the bourbon-sugar mixture on the still-warm cake. When the cake is fully cool, flip it and pour the rest of the glaze on the other side, then flip again to serve.

1 teaspoon pure vanilla extract
2 3/4 cups all-purpose flour
3/4 cup milk
1/3 cup bourbon or apple juice
1 tablespoon baking powder
1 teaspoon pumpkin pie spice
3/4 teaspoon salt
Nonstick cooking spray with flour
3 tablespoons chopped pecans
Bourbon Syrup

Steps:

  • Preheat oven to 325 degrees.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix together brown sugar, butter, and eggs until very light and fluffy. Add sweet potato and vanilla; beat to combine. Add flour, milk, bourbon, baking powder, pie spice, and salt; mix until just incorporated. Lightly spray a 10 or 12 cup Bundt pan with cooking spray. Sprinkle bottom and up sides of the pan with pecans. Pour in cake batter.
  • Bake until a toothpick inserted in the center of the cake comes out clean, 50 to 60 minutes. Let cool 10 minutes. Remove from pan; cool completely on wire rack. Brush cake with bourbon syrup. Serve cake slices with any remaining syrup.

flour, for flouring the pan
1 teaspoon baking powder

5 eggs, at room temp
2 teaspoons vanilla
3/4 cup buttermilk
1/4 cup Bourbon
2 cups toasted pecans, chopped
1/3 cup Bourbon
1/3 cup confectioners' sugar

Steps:

  • preheat oven to 350.
  • in a large bowl mix flour, baking powder and sida and salt.
  • butter and flour a 12 cup bundt pan.
  • in a stand mixer add butter and whip for 2-3 minutes.
  • add sugar and mix 3 minutes more.
  • add eggs one at a time, scraping down bowl a few times.
  • add vanilla and mix until combined.
  • mix buttermilk and bourbon.
  • alternately add flour mix and buttermilk mix, starting and ending with flour.
  • add nuts and stir in well.
  • pour mixture into bundt pan and bake for 70 minutes until cooked.
  • cool in pan 15 minutes.
  • meanwhile make the glaze, heat bourbon and sugar together in micro for 1 minute or on stovetop to simmer, brush over warm cake.
