ROASTED YELLOW SQUASH WITH PARMESAN CHEESE AND HERBS

- Preheat oven to 450° F
- Trim the stem end of the squash and cut them into round slices with equal thickness so they cook evenly. Use paper towels to absorb some excess water from the yellow squash to prevent a mushy texture after cooking.
- Transfer to a large bowl, and season with oil, Italian herbs, cayenne pepper, parmesan cheese, garlic, salt, and pepper. Mix well.
- Transfer the mixture to a shallow baking dish. Cook, uncovered, for about 20-25 minutes.

- Preheat oven to 400°F.
- Place squash rounds in a large bowl. Drizzle with olive oil and season with salt and pepper to taste. Toss to coat.
- Arrange squash in a single layer on a rimmed baking sheet. Top with Parmesan cheese.
- Roast in the oven for 12-14 minutes, or until squash is tender. Transfer to the broiler for 1-2 more minutes, or until the cheese on top is golden brown. Garnish with fresh herbs, if desired. Serve immediately.

- Cook squash and onion together in water until tender; drain well. In a bowl, mix mayonnaise, eggs, saltines, ranch dressing, and shredded cheese together. Mash squash with a fork and combine with ranch mixture. Pour into a greased casserole dish. Mix melted butter with bread crumbs and put on top of casserole. Bake 20-25 minutes in a 350° oven.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large saucepan over medium-high heat. Cook squash and onions until tender. Remove from heat, and stir in Cheddar cheese, mayonnaise, eggs, and crackers. Season with Ranch dressing mix and salt.
- Spread the squash mixture into a medium baking dish. Mix together stuffing and 1/2 cup melted butter, and sprinkle over the squash mixture.
- Bake 20 to 30 minutes in the preheated oven, or until firm and lightly browned.

- Preheat oven to 350 degrees. Slice squash in half lengthwise. Place cut side up in 8 x 8 glass baking dish. Thinly slice onion and sprinkle over squash. Add water and cover with plastic wrap. Make a small slit in plastic wrap and microwave 4-5 min. until slightly cooked. Uncover and drain off any liquids. Level off squash in pan, sprinkle with salt and pepper, and pour just enough evaporated milk over squash to come to the top of squash. Do not completely cover. Dot with butter and bake until cooked through and lightly browned, about 35 to 40 min.
