AUTUMN APPLE-PEAR CHUTNEY



Autumn Apple-Pear Chutney image

This deeply spiced chutney is one of the last things I make each fall. I love it alongside roasted root vegetables and in place of applesauce with Hanukkah latkes. I don't typically peel pears, but if yours have tough, pebbly skin, you might want to peel them.

1 ½ pounds apples - peeled, cored, and diced
1 ½ pounds pears - peeled, cored, and diced
1 large yellow onion, minced
2 cups cider vinegar
1 ½ cups white sugar
1 ½ cups dried cherries
1 lemon, seeded and chopped
2 tablespoons yellow mustard seeds
2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground allspice
½ teaspoon ground cloves

Steps:

  • Submerge 6 empty half-pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine apples, pears, onion, vinegar, sugar, cherries, lemon, mustard seeds, salt, cinnamon, ginger, allspice, and cloves in a wide, nonreactive 4-quart pot over high heat and bring to a boil. Once it bubbles, reduce heat to medium; simmer gently, stirring often, until mixture is thickened and a spoon drug through leaves a trail that doesn't fill in immediately, about 1 hour. Toward the end of the cooking, make sure to stir every minute or so to prevent scorching. Remove from heat.
  • Working with one jar at a time, remove empty jars from canning pot. Using a wide-mouth funnel, carefully ladle jam into jars, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Check headspace again and add more chutney if necessary to bring to 1/2 inch from the top.
  • Wipe jar rims, apply lids and rings (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.

1 ½kg cooking apples, peeled and diced
750g light muscovado sugar
500g raisins
2 medium onions, finely chopped
2 tsp mustard seeds
2 tsp ground ginger
1 tsp salt
700ml cider vinegar

Steps:

  • Combine all the ingredients in a large, heavy saucepan. Bring the mixture to a boil over a medium heat, then simmer uncovered, stirring frequently, for 30-40 mins, or until thick and pulpy. Remove from the heat, leave to cool and transfer to sterilised, clean, dry jars and seal.

1.6kg Bramley apple , peeled, cored and chopped
500g eating apple , peeled, cored and sliced
450g onion , halved and sliced
1 large red chilli , deseeded and chopped
500g light muscovado sugar
250ml cider vinegar
100g raisin
85g chopped stem ginger
1 tsp ground cinnamon
1 tsp salt
85g walnut , roughly broken

Steps:

  • Tip all the ingredients, except the walnuts, into a preserving pan. Warm over a low heat, stirring occasionally, until the sugar dissolves. Turn up the heat a little, then let the mixture boil until the Bramley apples have broken down to a pulp, but the eating apples still hold their shape. This can take from 45 mins to 1 hr. You can tell that it is ready by running your wooden spoon through the mixture. Your spoon should briefly leave a channel in the mixture, and there shouldn't be liquid pooling into the space.
  • Meanwhile, tip the walnuts into a small pan and cook over a low heat until they are lightly toasted, stirring frequently to ensure that they don't burn. Sterilise your jars.
  • When the chutney is ready, stir in the walnuts and cook briefly, then pot the mixture into the jars. Will keep for at least a year.

  • Peel, core and coarsely chop the apples and pears, and place in a large saucepan or preserving pan. Add the orange zest and juice and the lemon juice and stir well (this helps to stop the fruit browning before you begin to cook). Add the onions, garlic, ginger and raisins and stir again.
  • Add the pecans to the pan and stir in both vinegars. Bring to the boil, then reduce the heat and cook gently for 15-20 minutes, until the fruit is soft but holding its shape. Stir in the molasses sugar until dissolved. Bring to a bare simmer and cook for 40-50 minutes, stirring occasionally.
  • Meanwhile, sterilise 5 x 500ml jars. Preheat the oven to 120°C/fan 100°C/gas 1/2. Wash the jars in warm, clean soapy water, then rinse in clean water. Put upside down on a clean baking tray and dry in the oven for 10 minutes. Remove the tray of jars from the oven. Handle the jars with a clean cloth.
  • The chutney is ready when most of the liquid has evaporated and the mixture is quite thick. Remove from the heat and stir in the cinnamon, turmeric and season with salt. Leave to settle and cool for about 10 minutes, then ladle into the sterilised jars. Close the lids to seal, label and date.
