COURT BOUILLON FOR POACHING FISH



Court Bouillon for Poaching Fish image

Number Of Ingredients 29

1 onion, peeled and chopped
1 carrot, peeled and sliced 1/2-inch thick
1 stalk of celery, peeled and sliced 1/2-inch thick
1 head of garlic, halved horizontally
3 sprigs parsley
3 sprigs thyme
1 bay leaf
10 peppercorns
2 teaspoons fennel seed
1 teaspoon coriander seed
1/2 cup white vinegar or 1 1/2 cups dry white wine
2 tablespoons coarse salt
2 quarts water
4 6 ounce firm fleshed fish fillets, such as salmon, bass, or snapper, skin removed
1 teaspoon oil or butter
23 cups court bouillon, strained (recipe above)
1 1/2 cups sliced almonds
1 teaspoon canola oil
1 1/2 teaspoons soy sauce
Juice of one lime
1/2 teaspoon cayenne pepper
1/4 teaspoon black pepper, freshly ground
3 garlic cloves, minced
2 scallions, sliced into thin rings, white and light green parts kept separate from dark greens
4 wedges of lime for garnish
1 bunch watercress
1 tablespoon. coarse salt
1/2 cup canola oil
1/2 teaspoon coarse salt and 1/4 teaspoon freshly ground pepper, or to taste

Steps:

  • For the bouillon: Place all ingredients in medium saucepan and bring to a boil. Lower heat and simmer uncovered for 20 to 30 minutes. Strain and reserve. Can be refrigerated 3 days or frozen for months.
  • For the fish: Run fingers over fish fillets to feel for tiny bones; if there are any, remove with needlenose pliers or tweezers. Lightly oil or butter the bottom of a deep skillet big enough to fit fish fillets in a single layer and place fish thus in skillet. Bring court bouillon to a simmer. Gently pour court bouillon over the fish, covering completely. Turn heat on very low so that liquid steams but does not quite simmer for 2 minutes. Turn off heat and let fish sit in liquid an additional 5 minutes per inch of thickness. Start checking fish for doneness: a thin knife inserted in thickest part of fillet should meet with just slight resistance. Fish should still be slightly translucent in center. Remove fish from skillet with slotted spatula, blot the bottom lightly with a paper towel, and serve.
  • For the almonds: Heat large nonstick skillet over medium flame. Add almonds and cook for 2 minutes, tossing frequently, until light brown and smelling toasty. Reduce heat to low. Drizzle oil over nuts and toss well. Sprinkle soy and lime juice over and toss well. Sprinkle cayenne, black pepper, garlic and scallion white/light greens over and toss very well. Continue to cook, stirring and tossing frequently, for 5 minutes or until nuts are dry and scallion and garlic are soft. Add scallion greens, toss again, and serve over poached bass or snapper with a wedge of lime.
  • For the emulsion: Wash watercress and remove the thickest stems. Bring medium pot of water to a boil and add 1 tablespoon salt. Have a medium bowl of ice water at hand for refreshing. When water returns to the boil, plunge watercress in and cook for 30 seconds. Drain watercress and quickly drop in ice water. When thoroughly chilled, drain watercress again and lightly squeeze out water. Chop blanched watercress roughly on cutting board. Place in blender and puree, adding a little water if necessary to get the mixture going. With blender running, gradually pour in oil until emulsion is formed. Add rest of salt and pepper, puree again and taste, adjusting seasoning if needed. Serve over poached salmon.

BRAISED CHUCK ROAST

3 pounds chuck roast
Kosher salt and freshly ground black pepper
2 tablespoons duck fat
3 large Spanish onions, chopped
1 pound carrots, chopped
6 ribs celery, chopped
8 cloves garlic, minced
1 tablespoon fresh thyme
3 bay leaves
1 teaspoon rosemary
2 cups good red wine
4 cups veal stock
2 tablespoons tomato paste
1 1/2 tablespoons butter
1 1/2 tablespoons all-purpose flour
Mashed potatoes, polenta or roasted vegetables, for serving, optional

Steps:

  • Preheat oven to 350 degrees F.
  • Season chuck roast liberally with kosher salt and freshly ground pepper. Heat duck fat in dutch oven and brown chuck thoroughly on all sides. Remove meat from pot and set aside.
  • Add all vegetables and garlic to remaining hot fat in pot and saute until tender. Add herbs and red wine scraping bottom of pot to remove all browned flavor bits from bottom. Reduce 10 minutes. Add veal stock. Paint chuck roast with tomato paste and add roast to braising liquid so that liquid reaches about halfway up the side of meat. (Add more stock if needed)
  • Cover and braise for 1 1/2 to 2 hours or until meat fork slides into meat easily.
  • Remove meat from hot pot, cool, cover and refrigerate for 24 hours. Strain braising liquid pushing it through strainer with back of spoon--reserving all possible liquid. Cool, cover and refrigerate for 24 hours. (Keep it separate from meat)
  • After 24 hours, remove meat and liquid from fridge. Remove fat from liquid and heat liquid in sauce pan until hot.
  • In small sauce pan, make a roux with 1 1/2 tablespoons flour and 1 1/2 tablespoons butter. Cook over low heat from 5 minutes. Add roux to hot liquid, stir and simmer for 2 to 3 minutes. This is your gravy.
  • Slice meat 1/2-inch thick and arrange slices in oven-proof dish. Moisten with some of the gravy, cover and heat until meat is hot enough to eat.
  • Serve with mashed potatoes or polenta and roasted seasonal root vegetables. Serve gravy on side.

One 3-pound arctic char, cleaned
8 ounces button mushrooms, chopped
2 cloves garlic
2 yellow onions, chopped
One 750-ml bottle rosé wine
1 pound chanterelles
1 pound pearl onions

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease a baking dish with butter and lay the fish inside. Add the button mushrooms, garlic, yellow onions and rosé. Cover with parchment paper and braise in the oven for 40 minutes. Transfer the fish to a platter and carefully pour the liquid through a strainer into a saucepan. Reduce the cooking liquid for 5 minutes. (Reserve the button mushrooms and yellow onions for a salad.)
  • Add the chanterelles, pearl onions, butter and the reduced cooking liquid to a sauté pan; cook for 5 minutes.
  • Gently remove the fish bones, and then cover the fish with the chanterelle sauce. Serve hot.

Steps:

  • Combine all ingredients in a saucepan and bring to a boil over high heat. Reduce the heat and simmer for 8 minutes. Strain or use chunky the first time, then strain through a fine mesh and either refrigerate for up to 3 days or freeze for up to 2 months. Either way, be sure to bring to a boil before reusing.

CREAMY BRAISED CHANTERELLES AND POTATOES



Creamy Braised Chanterelles and Potatoes image

The simplicity of this dish may make it sound dull, but its flavors are stunningly earthy, rich and deep. It makes a luxurious fall or winter vegetarian main course. The chef who wrote the recipe for this Russian classic, Bonnie Frumkin Morales, says she knows it is tempting to add garnishes like snipped chives or seasonings like black pepper. But the pure flavor of the mushrooms and cream, which saturates the potatoes, is best appreciated alone. You'll need to buy crème fraîche or smetana (not regular sour cream) and heavy cream that hasn't been ultrapasteurized to ensure the sauce stays stable without separating and becoming greasy.

1 to 1 1/2 pounds fresh chanterelle or shiitake mushrooms
1 tablespoon unsalted butter
1 1/2 cups heavy cream (not ultrapasteurized)
1 1/2 cups crème fraîche or smetana (Russian sour cream)
1 tablespoon kosher salt, plus more to taste
2 pounds Yukon Gold or other all-purpose potatoes, peeled and cut into 1-inch pieces
Crusty bread, for serving (optional)

Steps:

  • Clean the mushrooms: Fill the sink or a large bowl with cold water. Lay out some clean kitchen towels. Working with a few at a time, dunk the mushrooms in the water and gently swish to remove any dirt or debris. Shake off excess water and transfer to the towels to dry until excess water has been absorbed. Use your hands to tear any very large mushrooms into halves or quarters.
  • In a medium-size heavy pot with a lid, melt the butter over medium heat. Add the mushrooms and cook, stirring occasionally. The mushrooms will first give off a lot of liquid and then it will begin to evaporate. Raise the heat as needed to keep the liquid at a fast boil.
  • In a bowl, whisk together the heavy cream, sour cream and salt. When the liquid in the pot has mostly evaporated, stir in the cream mixture and bring to a simmer. Stir in the potatoes and return to a simmer. Partly cover the pot, and let simmer gently for 1 hour. Check and adjust the heat occasionally to make sure the mixture is simmering, not boiling.
  • After 1 hour, test the potatoes. If they are still firm, keep simmering until they are just cooked through.
  • When the potatoes are just cooked through, uncover the pot and raise the heat to a lively simmer. Cook until the braising liquid reduces and begins to caramelize, 10 to 20 minutes. It will turn golden brown and thick, like a cream sauce. Taste and add more salt if necessary. Toward the end, stir often to prevent the liquid at the bottom of the pot from scorching.
  • Serve hot, mopping up the sauce with crusty bread, if desired.
