1 tablespoon vegetable oil
1 large onion, halved and thinly sliced
2 cloves garlic, chopped
Coarse salt and ground pepper
1 can (15 1/2 ounces) chickpeas
1 can (14 1/2 ounces) diced tomatoes, with juice
1/4 cup fresh mint, thinly sliced

Steps:

  • Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add 1 halved and thinly sliced large onion and 2 chopped garlic cloves; season with coarse salt and ground pepper. Cook, stirring frequently, until onion begins to soften, 5 to 7 minutes.
  • Add 1 can chickpeas (15 1/2 ounces), drained and rinsed, and 1 can (14 1/2 ounces) diced tomatoes with juice. Simmer until thickened but still saucy, 6 to 8 minutes; remove from heat. Season with salt and pepper; stir in 1/4 cup thinly sliced fresh mint.

4 plum tomatoes, peeled, seeded and diced
2 tablespoons olive oil
2 to 4 garlic cloves, crushed
1 teaspoon balsamic vinegar
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 tablespoon minced fresh marjoram or 1 teaspoon dried marjoram
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
1 tablespoon minced fresh parsley
1/8 teaspoon salt
1/8 teaspoon pepper
4 ounces uncooked bow tie pasta

Steps:

  • In a small bowl, combine the tomatoes, oil, garlic, vinegar, herbs, salt and pepper. Cover and let stand at room temperature for 30 minutes. , Cook pasta according to package directions; drain. Return pasta to the pan; stir in tomato mixture. Cover and let stand for 2-3 minutes or until slightly heated. Toss and serve immediately.

This is just one example of how a good pesto can be used so well in so many ways. People always rave about this combo and I can't blame 'em - it's one of those matches made in heaven. The pesto coats the warm pasta to make a creamy, rich sauce, which is accented by the crumbled feta and contrasted by the sweet and tart cherry tomatoes.

Number Of Ingredients 6

1 pound bow tie pasta (farfalle)
3/4 cup Pesto, recipe follows
1/2 pint cherry tomatoes, halved
1 cup crumbled feta cheese
Kosher salt and freshly ground black pepper
Olive oil, as needed

Steps:

  • Bring a large pot of salted water to boil. Stir in the bow ties and cook, stirring occasionally, until al dente, about 10 minutes. Drain the pasta and run it under cold water just until it stops steaming. Bounce the pasta around to get rid of as much water as you can.
  • Dump the pasta into a large serving bowl. Stir in the pesto until the pasta is coated. Toss in the cherry tomatoes and the crumbled feta. Taste the salad and season it as you like with salt and pepper. You can make the salad up to about 1 hour before you serve it. Check out the salt and pepper just before you serve the salad. If it's looking a little dry, add some olive oil and stir it around.
  • Pesto:
  • 5 big handfuls basil leaves (about 2 hefty bunches)
  • 1/2 cup pine nuts or 3/4 cup walnuts
  • 1/2 cup fresh grated Parmesan or Pecorino cheese
  • Juice of 1 small lemon
  • 2 cloves garlic, peeled
  • Kosher salt
  • About 20 grinds freshly ground black pepper
  • 3/4 cup extra-virgin olive oil
  • Place all ingredients with 1/2 cup of the oil in a blender and blend. Gradually drizzle in the remaining 1/4 cup of oil until pesto is thick and smooth.
  • Yield: about 1 1/2 cups

2 tablespoons olive oil
1 small red onion, chopped
1 tablespoon minced garlic
1 cup mixed olives, pitted and roughly chopped
Juice of 1 lemon
4 ripe tomatoes, cored and cut into thick wedges
Black pepper
1/4 cup bulgur
8 ounces whole wheat bow-tie or other cut pasta
3 cups torn arugula leaves
1/2 cup chopped almonds

Steps:

  • Bring a large pot of water to a boil and salt it. Put oil in a large, deep skillet over medium heat. When hot, add onion and garlic and cook, stirring until softens, about 5 minutes. Stir in olives, then add lemon juice and tomatoes. Sprinkle with salt and pepper and cook until tomatoes are just heated through. Turn off heat.
  • When water comes to a boil, add bulgur. Let water return to a boil, then add pasta. Cook bow ties until tender but not mushy (start tasting after 5 minutes). Reserve some cooking water, then drain in a strainer to trap grains with pasta.
  • Toss pasta and bulgur with tomato mixture, adding some cooking water if needed. Stir in arugula and almonds, taste and adjust seasoning. Let rest for up to 15 minutes. Stir again and serve.

1 (12 ounce) package bow tie pasta
2 tablespoons olive oil
1 pound sweet Italian sausage, casings removed and crumbled
½ teaspoon red pepper flakes
½ cup diced onion
3 cloves garlic, minced
1 (28 ounce) can Italian-style plum tomatoes, drained and coarsely chopped
1 ½ cups heavy cream
½ teaspoon salt
3 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
  • Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

In a spread of Greek appetizers, or meze, there's often a warm feta dish like bouyiourdi (baked feta with tomato and hot peppers) or a saganaki (fried cheese). This recipe combines elements of these two classic appetizers into a sheet-pan meal. Softened feta provides a salty, creamy counterpoint to sweet, juicy tomatoes and chickpeas that are sticky from honey and spicy from dried chile. Try this version, then riff wildly: Switch out tomatoes for mini peppers, olives, dates or cauliflower. Swap the hot honey for anchovies, harissa, smoked paprika or turmeric. Eat with pita, grains, salad greens, hummus or yogurt.

3 cups cooked chickpeas (homemade or two 15-ounce cans), drained, rinsed and shaken dry
2 pints (16 to 20 ounces) cherry or Sungold tomatoes
1 shallot, thinly sliced
1/4 cup extra-virgin olive oil
2 tablespoons honey
1 teaspoon mild chile flakes (like gochugaru) or ½ teaspoon red-pepper flakes
Kosher salt (such as Diamond Crystal)
2 (6- to 8-ounce) blocks of feta (see Tip), sliced 1-inch-thick

Steps:

  • Heat the oven to 400 degrees. On a baking sheet, stir together the chickpeas, tomatoes, shallot, olive oil, honey and chile flakes. Season with salt, then spread in an even layer. Arrange the feta among the chickpeas. Roast until the feta and tomatoes are soft and the chickpeas are golden brown, 30 to 35 minutes (no need to stir). Eat right away. (The feta will harden as it cools; reheat leftovers.)

A delicious, light and healthy meal that can be for a light lunch, or served with salad and bread for dinner. The reference to bow ties is the shape of the pasta, and is the multi coloured vegeroni ones, but you can use anything you like.

500 g vegeroni bow tie pasta
200 g mushrooms, sliced
1 large zucchini
1 tablespoon anchovy, chopped (optional)
1 (300 g) can chickpeas, drained
1 (425 g) can tomatoes, crushed
1/2 cup spring onion, chopped (shallots)
2 tablespoons grated parmesan cheese
1/2 cup chopped fresh parsley

Steps:

  • Place pasta in a large pot of boiling, salted water and cook until al dente, then drain.
  • Meanwhile, heat a small non-stick pan and pan fry the muchrooms, zucchini and anchovies for 5 minutes until soft. Add the chickpeas and tomatoes and simmer for 15 minutes. Add spring onions, parmesan cheese and parsley.
  • Toss the drained pasta with the tomato mixture and serve in a large serving bowl. Garnish with more chopped parsley and a sprinkling of black pepper if desired.

28 ounces whole tomatoes
1/4 cup olive oil
1 onion, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1/8 teaspoon cayenne
2 teaspoons salt
1 cup chickpeas, rinsed (garbanzos)
3/4 lb farfalle pasta
1/4 cup chopped flat leaf parsley

Steps:

  • Drain tomatoes, reserving 3/4 cup of juice. Chop the tomatoes.
  • In large frying pan, heat the oil over moderately low heat. Add the onion, garlic, cumin, cayenne and salt. Cook, stirring occasionally, until the onions are translucent, about 5 minutes.
  • Raise the heat to medium. Add the tomatoes and reserved juice and cook until the sauce thickens, about 20 minutes. Add the chickpeas and cook another 5 minutes.
  • Meanwhile, cook the farfalle until al dente. Toss with the sauce and top with parsley.
