Steps:
- Mix together soy sauce, bourbon, brown sugar, and garlic. Pour over pork, cover, and refrigerate at least 2 hours, turning occasionally.
- Preheat oven to 325 degrees F (165 degrees C). Remove pork from marinade, and place on rack of shallow roasting pan.
- Bake for 45 minutes or until a meat thermometer registers 145 degrees F (63 degrees C).

ROASTED PORK TENDERLOIN WITH BOURBON-BARBECUE SAUCE

Steps:
- Preheat oven to 400 degrees.
- Heat olive oil in an oven-proof skillet over medium-high heat.
- Sprinkle and massage a generous amount of kosher salt and pepper all over the pork. Sear the pork on all sides until deep brown.
- Transfer the skillet to the oven. Roast for 30 to 40 minutes, or until a thermometer reads 140 degrees. Turn over once halfway through roasting. Remove the pork from the skillet and wrap in tin foil. Allow the pork to rest in the foil for 10 minutes.
- Meanwhile, make the sauce. Using the same skillet, place it over medium-high heat on the stove top. Deglaze with the bourbon, scraping up the brown bits from the bottom of the pan. Whisk in the soy sauce, ketchup and brown sugar. Bring the sauce to a boil. Reduce the heat to low and cook for 2 minutes.
- Remove the pork from the tin foil. Whisk any drippings that have collected in the tin foil into the bourbon-barbecue sauce.
- Slice the pork and pour the sauce over all.

BOURBON PORK LOIN CHILI
This is a sweet and spicy pork chili with a kick!from the bourbon! It is simple to make, but feeds a crowd!

Steps:
- Make one day before serving for optimal flavor.
- Heat 4 Tablespoons of vegetable oil over high heat in large heavy pot or dutch oven. Generously season pork with kosher salt and freshly ground black pepper. Add pork loin in batches to sear on all sides. Remove pork and set aside.
- Turn heat down to medium. Add remaining 4 Tablespoons of vegetable oil to pot. Add red bell pepper, jalepenos, onion cumin, chili powder, cayenne pepper, salt and pepper. Sweat vegetables until onions are soft.
- Add in the garlic and saute for 1 minute just until you smell the garlic cooking.
- Add the bourbon and let cook for 2 minutes.
- Add in the honey, kidney beans, black beans, and tomatoes. Turn up the heat until mixture is bubbling.
- Turn the heat down to lowest setting and simmer for at least 3 hours. Or until the pork is buttery and tender.
- Place cooked chili in refrigerator overnight to allow flavors to meld.
- Slowly reheat over medium low heat before serving.
- Top with cheddar cheese, sour cream, avoocados, and cilantro.

BOURBON BASTED PORK LOIN
While I was thumbing thru my Chili Pepper magazine, I decided to make a pork loin! It needs to stay in a plastic bag, casserole dish with a lid or roasting pan with a lid for no longer than of 24 hours so the dry ingredients blend into the loin.

- Rub the pork with with all the dry ingredients. Refrigerate for no longer than 24 hours in a covered dish, plastic bag or roasting pan.
- Combine all ingredients for the baste in a plastic bag, casserole dish or roasting pan.
- Remove loin and place in dish or what ever way your cook the loin. To make on a smoker, maintain a heat of 270-320°F for 5-6 hours. To grill, heat grill to medium low and cook for 1 1/2-2 hours. To bake, maintain a temperature of 350°F for 1-1 1/2 hours.
- Baste every 30 minutes all over the loin. Make sure either way you cook it, that the internal temperature is 160°F.

PAN ROASTED PORK LOIN WITH BOURBON-PAPRIKA AND MUSTARD BRINE

- Preheat oven to 400 degrees. In a shallow bowl, mix together all ingredients. Add the pork loin and let marinate overnight. Transfer the pork to a hot heavy-bottomed skillet and saute until browned, about 5 minutes. Transfer the pan to oven and finish cooking for 4 minutes. Serve with vinegar based cole slaw or honey mustard and crusty rolls.
