1 cup chopped nuts
5 tablespoons Kentucky bourbon
½ cup butter, softened
1 (16 ounce) package confectioners' sugar
18 ounces semisweet chocolate

Steps:

  • Place the nuts in a sealable jar. Pour the bourbon over the nuts. Seal and allow to soak overnight.
  • Mix the butter and sugar; fold in the soaked nuts. Form into 3/4" balls and refrigerate overnight.
  • Line a tray with waxed paper. Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Roll the balls in the melted chocolate to coat; arrange on the prepared tray. Store in refrigerator until serving.

I've tried several recipes I found online, and the mixture always comes out too wet to form balls. My grandmother used to make these, and I finally figured out my own recipe that's as close to hers as I could get.

1 (12 ounce) package vanilla wafer cookies
8 ounces pecans
1 cup confectioners' sugar
½ cup bourbon whiskey
3 tablespoons unsweetened cocoa powder
2 tablespoons light corn syrup
½ cup flaked coconut, or to taste
¼ cup confectioners' sugar, or to taste, for rolling

Steps:

  • Grind cookies in a food processor into fine crumbs; transfer to a large mixing bowl.
  • Grind pecans in the food processor; add to cookie crumbs. Stir 1 cup confectioners' sugar, bourbon whiskey, cocoa powder, and corn syrup with the cookies and pecans until the mixture holds together; roll into 3/4-inch balls.
  • Spread coconut onto a plate and 1/4 cup confectioners' sugar onto a separate plate. Roll balls in coconut and sugar to coat. Arrange balls onto a platter, cover with plastic wrap, and refrigerate until hardened, at least 1 hour.

1 cup semisweet chocolate chips
½ cup white sugar
3 tablespoons corn syrup
½ cup rum
2 ½ cups crushed vanilla wafers
1 cup chopped walnuts
⅓ cup confectioners' sugar

Steps:

  • Place chocolate chips into a microwave-safe medium bowl. Heat in the microwave for 1 minute, stir and then continue to heat at 20 second intervals, stirring between each, until melted and smooth. Stir in sugar and corn syrup. Blend in rum. Add crushed vanilla wafers and chopped nuts. Mix until evenly distributed. Cover and refrigerate until firm.
  • Roll the chilled chocolate mixture into bite-size balls. Roll balls in a mixture of ground nuts and confectioner's sugar, or just plain confectioner's sugar. Store in a covered container for a week before serving to blend the flavors.

3 1/2 cups vanilla wafer cookies (about 8 ounces), such as Nilla Wafers
1 1/4 cups pecan halves
1/3 cup unsweetened cocoa powder
1/3 cup confectioners' sugar
1/4 cup bourbon
1/4 cup dark corn syrup
1 teaspoon pure vanilla extract
Pinch kosher salt
6 ounces bittersweet chocolate, chopped
1 tablespoon coconut oil or vegetable shortening
25 pecan halves

Steps:

  • For the bourbon balls: Pulse the vanilla wafer cookies and pecan halves in a food processor until the mixture turns to fine crumbs. Add the cocoa powder, confectioners' sugar, bourbon, corn syrup, vanilla and salt, then pulse until the mixture is thoroughly combined and holds together when squeezed.
  • Scoop the mixture into 1-inch balls (each about 1 tablespoon; about 25 total) on a parchment-lined baking sheet. Roll each ball between the palms of your hands so they're smooth and compact. Transfer to the refrigerator to chill and firm up slightly, about 10 minutes.
  • For the coating: Meanwhile, put the chocolate and oil in a medium microwave-safe bowl. Microwave on high, stirring halfway through, until completely melted and smooth, about 1 1/2 minutes.
  • Working one a time, use 2 forks to gently lower each bourbon ball into the chocolate mixture, turning to make sure the entire ball is coated. Let any excess chocolate drip off, then return to the baking sheet. Top with a pecan half. Return to the refrigerator until the chocolate is just set, about 5 minutes.

1/2 cup unsweetened Dutch-processed cocoa, divided
1 cup confectioners' sugar, divided
1/4 cup light corn syrup
1/4 cup bourbon

Steps:

  • Preheat oven to 325 degrees F.
  • Spread the pecans on a cookie sheet, and place in the oven for 3 minutes. For even toasting, turn the tray, front to back. Toss the nuts with a metal spatula and bake for another 3 minutes. You'll know they're done when they give off their fragrant aroma, and be sure to check them so they don't become overbaked or charred.
  • In a food processor, chop the vanilla wafers into crumbs. Add the pecans and process just until they are finely chopped. In a medium bowl, mix together the crumb-pecan mixture, 1/4 cup of the cocoa, and 1/4 cup of the confectioners' sugar. Add the corn syrup and bourbon. Mix thoroughly. Sift the remaining 1/4 cup cocoa and 1/4 cup confectioners' sugar onto a large plate. Form the crumb mixture into 3/4-inch balls and roll them through the cocoa-sugar to coat. Store in a sealed container for up to 5 days. If necessary, touch them up with a light dusting of the remaining confectioners' sugar.

2 cups crumbled chocolate wafers (about one 8-ounce package)
2 cups finely chopped pecans
3/4 cup confectioners' sugar
1/4 cup light corn syrup
3 tablespoons bourbon
2 tablespoons cocoa powder
1 tablespoon pure vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon kosher salt

Steps:

  • Mix the crumbled wafers and 1/2 cup of the pecans in a large bowl (reserve the remaining pecans for rolling). Add the sugar, corn syrup, bourbon, cocoa powder, vanilla, cinnamon, ginger and salt. Mix well to combine. If the dough is too soft, add more cookie crumbs 1 tablespoon at a time until thickened.
  • Scoop the dough into tablespoon-size portions and roll into balls. Roll each ball in the reserved pecans, pressing the pecans into the dough. Place in a single layer on a parchment-lined baking sheet. Refrigerate 1 hour before serving. After chilling, the balls may be transferred to an airtight container. Refrigerate for 2 weeks or freeze for up to 6 months.

I make these for Christmas presents, and for my husband when he gets the cravings for them. Everyone loves them and it's the first thing they ask me at Christmas. "Are you making the Bourbon Balls?" This is one of my biggest requests.

1 lb powdered sugar
1/2 cup butter
3/4 cup pecans, finely chopped
2 ounces Bourbon
1 (12 ounce) package milk chocolate chips
2 teaspoons paraffin wax

Steps:

  • Mix the whole pound of sugar and butter together.
  • Add Bourbon and pecan chips, then add extra powdered sugar to your mixture till you are able to roll into balls easily. I usually add up to an extra 1/2 pound, depends.
  • I usually have to let them sit in the fridge for an hour before I roll them, that all depends on how much extra powdered sugar I add.
  • Roll into balls. Put back in the fridge to harden 1 hour or until you get your chocolate melted.
  • Melt Chocolate Chips and Parrifin wax in double boiler. Use milk chocolate or semi sweet chips, whatever your taste. Milk Chocolate can be very sweet. As for the wax, add enough wax to make the chocolate thin and coat easily. 1 package of Chips should coat all the bourbon balls.
  • Dip balls in chocolate, let set up on wax paper.
  • These get better with age. My husband says they are great after they've sat a week. They get stronger tasting as they sit.

Steps:

  • Combine the crushed wafers and pecans in a large bowl. Place the chopped chocolate in a separate bowl.
  • In a small saucepan, combine the cream, corn syrup, and cinnamon, place over medium heat, and bring to just a boil, stirring constantly. Immediately pour the mixture over the chopped chocolate and whisk to blend in the cream as the chocolate melts. Let cool for 1 to 2 minutes, then whisk in the bourbon.
  • Pour the chocolate mixture over the crumb-nut mixture and stir well to combine. Place in the refrigerator to chill for 30 minutes. Form the mixture into balls with a small melon baller (about 2 teaspoons), roll in coatings if desired, and arrange on a parchment-lined baking sheet. Store in an airtight container in a cool place for up to 1 week.
