1 can (16 ounces) refried beans
1 cup salsa
1 cup cooked long grain rice
2 cups shredded cheddar cheese, divided
12 flour tortillas (6 inches)
Shredded lettuce, optional

Steps:

  • Preheat oven to 375°. In a large bowl, combine beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up. , Arrange burritos in a greased 13x9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. If desired, topped with lettuce.

1 tablespoon canola oil
3 tablespoons chopped onion
3 tablespoons chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
4 flour tortillas (8 inches), warmed
1 cup shredded Mexican cheese blend
1 medium tomato, chopped
1 cup shredded lettuce
Optional toppings: Salsa, sour cream, minced fresh cilantro and cubed avocado

Steps:

  • In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

These burritos are soooo good, you'll want to have them every night.

2 (10 inch) flour tortillas
2 tablespoons vegetable oil
1 small onion, chopped
½ red bell pepper, chopped
1 teaspoon minced garlic
1 (15 ounce) can black beans, rinsed and drained
1 teaspoon minced jalapeno peppers
3 ounces cream cheese
½ teaspoon salt
2 tablespoons chopped fresh cilantro

Steps:

  • Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
  • Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
  • Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
  • Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.

REFRIED BEAN BURRITOS



Refried Bean Burritos image

These are quick and fairly healthy if made with low fat ingredients, add some rice if you want to stretch them farther or just go with basic bean and cheese.

1 (14 ounce) can refried beans (I use fat free)
1 teaspoon chili powder or 1 teaspoon ground dried chile
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
3 -5 dashes garlic powder
hot sauce
1 cup hot cooked rice (I usually omit) (optional)
8 ounces cheddar cheese or 8 ounces monterey jack pepper cheese, shredded or thinly sliced (I use low fat)
your favorite salsa
1 package flour tortilla (10-in. The recipe usually uses 5 tortillas the way I make it)
chopped tomato
shredded lettuce
sliced black olives
sliced scallion
sliced jalapeno
sour cream
guacamole

Steps:

  • Place beans in microwave safe dish.
  • Stir in next 5 ingredients.
  • Heat on medium power for about 3 minutes or until hot, stirring once halfway through.
  • Alternatively, heat over low heat on stovetop until warmed through.
  • If mixture becomes too thick, add water.
  • Mix in rice, if using.
  • Meanwhile, heat the tortillas.
  • Use the method you like best.
  • I usually just heat them one at a time in a dry skillet over medium heat, about 20-30 secs per side, or just until pliable.
  • Place about 1/3 cup bean mixture in each tortilla, add cheese, salsa and toppings, and roll.
  • You can bake them in a 350 degree oven for 10-15 minutes if you want them firmer/crisper.
  • I like to skip this step.
  • That's it!
  • These refrigerate well for a few days.
  • I can't speak for the freezer.
  • I end up with 5 medium sized burritos; if you use the rice or more veggies, you will get more.
  • Since I usually reheat one or two at a time, I add sour cream after reheating.
  • No one would call these authentic Mexican food; they taste more like a fresher and better version of Taco Bell, but they are very good.

3/4 cup rice (brown or white)
2 tablespoons olive oil
2 medium onions, chopped
4 garlic cloves, chopped
1 jalapeno chile, chopped (ribs and seeds removed, for less heat)
1/2 teaspoon ground cumin
Coarse salt and ground pepper
3 tablespoons tomato paste
3 cans (15 ounces each) pinto beans, drained and rinsed
1 bag frozen corn kernels (10 ounces)
6 scallions, thinly sliced
8 burrito-size flour tortillas, 10 inches each
2 cups (8 ounces) shredded Monterey Jack cheese
Salsa and sour cream, optional

Steps:

  • Cook rice according to package instructions; set aside.
  • Meanwhile, heat oil in a large saucepan over medium. Add onions, garlic, jalapeno, and cumin; season with salt and pepper. Cook, stirring occasionally, until golden, 10 to 12 minutes. Add tomato paste, and cook, stirring, 1 minute.
  • Add beans and 1 1/2 cups water; bring to a boil, reduce heat to medium, and simmer, stirring occasionally, until thickened, 10 to 12 minutes. Add corn; cook to heat through, 2 to 3 minutes. Remove from heat; stir in scallions.
  • Heat tortillas according to package instructions; fill with rice, bean mixture, and cheese.
  • Assemble: Mound 1/4 cup rice, 3/4 cup bean mixture, and 1/4 cup cheese on one side of tortilla. Fold sides, and hold them in. Starting from filled end, holding sides in as you work, tightly roll into a bundle. Place on a baking sheet, seam side down, and prepare remaining burritos.
  • Serve immediately, with salsa and sour cream, if using, or wrap per freezing instructions.

2 chicken breasts, cubed
1 (16 ounce) can diced tomatoes (I like the ones with jalapenos in them)
1 (16 ounce) can corn
1 (16 ounce) can black beans
1 (2 ounce) can black olives
1/4 cup sour cream
jalapeno
cilantro
6 burrito-size flour tortillas
1/4 cup salsa
1 (16 ounce) package shredded cheese

Steps:

  • In a large sized skillet, cook chicken.
  • Open cans and drain all items except the tomatoes.
  • After chicken is cooked, add tomatoes, corn, beans, olives, jalapenos, cilantro, ¼ cup salsa, and ¼ cup sour cream.
  • Mix so sour cream is dispersed and let simmer for 10 minutes or until ingredients are heated thoroughly.
  • Then w/ a slotted spoon, divide skillet mixture and cheese into 6 burrito tortillas. Wrap burritos, and place into a 13" x 9" baking dish sprayed with cooking spray.
  • Pour remaining liquid from skillet over burritos, top with cheese.
  • Bake in a 350 degree oven for 20 minutes or until cheese is melted and tortillas have crisped up a bit.
  • Serve and enjoy!

12 fajita-size flour tortillas
9 firm ripe tomatoes
6 cups fresh spinach
6 small white potatoes
1 (8 ounce) package mushrooms
1 carrot
taco sauce
1 teaspoon cumin
1/4 teaspoon red cayenne pepper
Kraft Mexican Style Finely Shredded Four Cheese
1 cup nonfat yogurt
1 cup pitted black olives, sliced
1 romaine lettuce leaf
2 (16 ounce) cans corn kernels, drained

Steps:

  • Bake unpeeled potatoes (6) in microwave oven on high for two minutes. Turn potatoes once and cook for two minutes more. Let cool, peel and discard skin.
  • Chop potatoes, six cups of spinach, 6 tomatoes and one 8 oz. package of button mushrooms. Add 1/2 cup of finely grated carrot. Mix chopped vegetables in large bowl with re-fried beans, 1/2 cup of taco sauce, cheese and spices.
  • Meanwhile, heat tortillas 30 seconds per side on non-stick pan. Place equal amounts of filling at bottom third of each tortilla and roll up tightly.
  • Arrange tortillas on microwaveable plates and cover with a damp paper towel. Heat on high for 90 seconds.
  • Remove towel, and arrange lettuce and additional chopped tomatoes(3) between tortillas and on one side for garnish.
  • Garnish with corn on the other side of totilla. Top each tortilla with two tablespoons of yogurt and sliced olives. Sprinkle with additional cumin.
  • Serve. Enjoy!
