CRUSTLESS LOW-CARB QUICHE



Crustless Low-carb Quiche image

This easy Crustless Low Carb Quiche is light, fluffy, and absolutely delicious! You only need 7 ingredients to whip up this recipe for the perfect breakfast, brunch, or week of meal prep.

6 large eggs
1 1/2 cup milk
1 1/2 cup grated cheese ((cheddar cheese, Swiss cheese, or mozzarella))
1 lbs. bacon ((cooked))
1 red onion ((chopped))
Handful of fresh spring onions ((chopped))
1 teaspoon ground nutmeg
Salt & pepper to taste

Steps:

  • Preheat your oven to 375F (190°C). Grease a 9 inch (23 cm) tart pan with butter and set aside.
  • Cook the bacon in a pan until it's slightly crispy.
  • Chop the bacon, red onion, and green onion.
  • Combine the milk and eggs in a large mixing bowl. Whisk together well.
  • Add the remaining ingredients and seasoning to the egg and milk mixture. Stir to combine.
  • Pour the mixture into the prepared tart pan. If necessary, stir to make sure the fillings are evenly distributed throughout the quiche batter.
  • Bake the quiche for 45 - 50 minutes until golden and set.
  • Remove from the oven and allow to cool for at least 30 minutes before slicing and serving.

I've had this recipe written down for ever...it's out of an old low carb cookbook...hubby and I love it...this would be requested every time it was my turn to bring in "Friday Breakfast" at work...hope you enjoy!

1 -2 teaspoon butter (for quiche pan)
6 large eggs
1 cup heavy cream
hot pepper sauce (several drops)
salt
pepper
3 ounces diced green chilies
1/4 lb chorizo sausage, crumbled, fried and drained
1 cup muenster cheese, diced
1/3 cup fresh cilantro, chopped
1/3 cup scallion, chopped (including the firm part of the green)

Steps:

  • Preheat the oven to 350°F.
  • Have ready a buttered 8-inch quiche pan.
  • Beat the eggs in a bowl with cream, hot pepper sauce, salt and pepper.
  • Mix in the remaining ingredients and pour into the quiche pan.
  • Bake 40 minutes, or until golden brown on top.
  • Serve hot, warm, or at room temperature.

A low carb but not low fat version of a quiche using meat as a crust. It's actually pretty tasty and can definitely be used during an induction phase of a low carb diet.

1 lb ground beef
1/2 onion, chopped
4 slices crisp bacon, crumbled
1 clove garlic, minced
3 eggs
1/2 cup mayonnaise
1/2 cup half-and-half
6 ounces shredded sharp cheddar cheese

Steps:

  • Preheat oven to 350*, Brown ground beef in skillet with onion and garlic.
  • Drain off fat and mix in crisp crumbled bacon.
  • Mix well to break up any large clumps.
  • Press this mixture in the bottom of a deep dish pan or plate.
  • Combine eggs, mayo,half and half and mix well.
  • Sprinkle cheese over beef crust mixture.
  • Pour egg mixture over the beef mixture.
  • Bake 40-45 minutes at 350*, until browned and set.

DD gave me this idea when she made a crustless quiche using real eggs, cream and a variety of veggies. I substituted egg beaters and my own variety of fresh veggies. It made a hit with DH and me at breakfast this morning.

1 1/2 cups mushrooms, sliced
3/4 cup low-fat cheddar cheese
2 1/2 cups chopped fresh spinach
2 green onions, chopped
1 1/2 cups Egg Beaters egg substitute
salt and pepper

Steps:

  • Chop and slice the veggies.
  • Grate the cheese Combine all the ingredients in a bowl and stir.
  • Spray an 8" round cake pan with cooking spray.
  • Pour the quiche in the cake pan.
  • Put in a preheated 350º oven and bake for 20-25 minutes.
  • Quiche is done when a toothpick inserted in the center comes out clean.
  • Enjoy!
