This delicious baked oatmeal recipe is loaded with fresh berries! It's a quick and easy make ahead breakfast for meals on the go that are healthy.

3 c. old fashioned rolled oats
1 1/2 tsp baking powder
1/2 tsp salt
2 eggs (lightly beaten)
2 1/2 c. unsweetened vanilla almond milk (plus additional for serving)
1/2 c. pure maple syrup
2 tsp pure vanilla extract
3 Tbsp unsalted butter or coconut oil (melted)
3 c. fresh berries (larger berries chopped or sliced (I used strawberries, blueberries and raspberries))

Steps:

  • Preheat oven to 350°F. Grease a 2 ½ or 3 quart baking dish. Set aside.
  • Combine oats, baking powder and salt. Place half the oat mixture in the baking dish, top with half the berries, and then top with the remaining oat mixture.
  • Whisk the eggs, almond milk, maple syrup, vanilla, and melted butter/coconut oil. Pour over the oats.Top the oats with the remaining berries. Gently shake the baking dish back and forth from side to side to allow the wet mixture to get down into the oats.
  • Bake uncovered for about 25-40 minutes, until oats are tender, and the mixture is set.
  • Serve immediately with a splash of milk, or cool, then cover and refrigerate to reheat later.

16 oz berries (about 2 cups)
1 cup old-fashioned rolled oats
1 tsp cinnamon
1/2 tsp baking powder
pinch salt
1 egg (beaten)
1 cup unsweetened almond milk
1/4 cup maple syrup
2 tbsp unsalted butter (melted)
1 tsp vanilla

Steps:

  • Preheat oven to 350F. Lightly grease the baking dish.
  • Add 3/4 of mixed berries to the bottom of the baking dish.
  • In a large bowl add oatmeal, cinnamon, baking powder, salt. Mix well. Sprinkle the oatmeal mixture evenly over berries.
  • In the large bowl add 1 egg and beat it gently. Add almond milk, maple syrup, melted butter and vanilla. Mix well. Gently pour over top of oatmeal mixture and jiggle to help the liquid move through the oatmeal throughout.
  • Add remaining mixed berries evenly over the oatmeal mixture. Bake for 35-40 minutes or until oatmeal has cooked and turned a subtle golden brown. Remove from oven and serve.

3.5 cups whole milk
0.25 cup pure maple syrup, plus more for serving
2 teaspoons pure vanilla extract
0.5 teaspoon ground nutmeg
0.25 cup (1/2 stick) unsalted butter, melted and cooled, divided, plus more for greasing
4 cups old-fashioned rolled oats
2 teaspoons baking powder
1 teaspoon kosher salt
2 cups mixed berries, sliced if strawberries
0.5 cup sliced almonds, lightly toasted

Steps:

  • Preheat oven to 400°F. Grease a 13-by-9-inch baking dish with butter. Whisk eggs, milk, syrup, vanilla, nutmeg, and 2 tablespoons melted butter in a large bowl. Add oats, baking powder, and salt; stir to combine. Transfer to baking dish; spread in a mostly even layer using a spatula. Top with berries and almonds.
  • Bake until lightly golden and firm in center, 40 to 45 minutes. Let rest for 10 minutes. Drizzle or brush with remaining 2 tablespoons melted butter. Serve with more syrup.

1 large egg

1/3 cup skin-on sliced almonds
1/3 cup old-fashioned rolled oats
1/3 cup light brown sugar
2 tablespoons unsalted butter, melted
1 tablespoon whole-wheat pastry flour or unbleached all-purpose flour
1/8 teaspoon ground cinnamon
Kosher salt
12 ounces frozen mixed berries, thawed (2 1/2 cups frozen; 1 1/2 cups thawed)
Two-percent Greek yogurt or low-fat milk, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart baking dish or 8-inch square baking pan with the butter.
  • For the oatmeal: Stir together the oats, sugar and 1/8 teaspoon salt in a large bowl. Whisk together the almond milk, egg, vanilla and almond extract in a medium bowl. Pour the milk mixture into the oat mixture and stir well to combine.
  • For the topping: Stir together the almonds, oats, sugar, butter, flour, cinnamon and 1/8 teaspoon salt in a medium bowl until evenly combined.
  • To assemble: Pour the oatmeal into the prepared baking dish. Arrange the berries (including any juices) over the oatmeal. Sprinkle with the topping. Bake until lightly browned and just set, about 50 minutes. Let cool on a rack for 10 to 15 minutes. Serve warm with a dollop of yogurt or a splash of milk if using.

Irish Steel Cut oatmeal is what I use in this recipe not the quick cooking You can use what oatmeal you enjoy just adjust the water to oatmeal ratio. This is super healthy, very low fat, no sodium, and cholesterol free. Important not to overcook so you get that nice nutty flavour with a slightly chewy texture. In the U.S.A., new dietary guidelines recommend that consumers eat at least half their grains as whole grains - for adults this means three or more servings of 16g of whole grains (48g in total) per day. Helping to reduce the risk of heart disease and may prevent certain cancers.

1/2 cup low-fat milk, soy milk, almond beverage or rice beverage

Steps:

  • Bring the water to a boil in a medium-size saucepan. Add the salt, cinnamon, honey and oatmeal. Reduce the heat, and simmer uncovered for five minutes or until most of the water has been absorbed. Add the blueberries, orange zest and milk (or alternate beverage). Bring to a simmer, and simmer five more minutes or until the oatmeal is thick and creamy and the blueberries have begun to pop. Cover and let stand for five minutes, then serve.
