OLD-FASHIONED APPLE DUMPLINGS

Old-Fashioned Apple Dumplings image

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

Time 1h30m

Yield 6

Number Of Ingredients 9

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

BONNIE'S ULTIMATE APPLE DUMPLING image

I learned how to make these from a chef, named John, and he certainly knew what he was doing! They are easy, and oh, so delicious. Serve warm with a topper of whipped cream or lite cool whip. They are better than apple pie! Definitely company worthy! I am happy to share my recipe with you! Enjoy!

Number Of Ingredients 15

4 - granny smith apples -- or one apple per person, medium size apples, peeled and cored
- pie dough, your own recipe or store bought
- (a package of 2 pie crusts makes 4 dumplings)
- **********************
- filling:
1/2 - cup sugar
1 1/2 - teaspoons cinnamon
pinch - nutmeg
1 - teaspoon butter
- ***********************
- syrup:
1 - cup sugar
2 - cups water
3 - tablespoons butter
1/4 - teaspoon cinnamon

Steps:

  • PREPARE APPLES: Peel and core 4 medium Granny Smith apples. I do this by hand with a sharp paring knife by making a hole in the center of the apple and removing the seeds. Set aside.
  • Pre-heat the oven to 400 degrees. You will need a buttered. 8 inch glass baking dish.
  • MAKE THE SYRUP: In a small sauce pan, combine sugar, water, butter and cinnamon, and heat to boiling, then simmer for 10 minutes on very low heat. Meanwhile,
  • MAKE THE FILLING: Combine 1/2 cup of sugar with 1/2 teaspoon of cinnamon.
  • ROLL THE DOUGH: It will take 2 pie crusts for four dumplings. I roll the dough a little thinner than the crust. Make a square of dough, place the apple in the center of it so that when you bring up two corners of the square, the ends touch. Cut away any excess dough. Fill the center of the apple while it is on the dough with 2 teaspoons of the sugar filling. Top with one teaspoon of butter, bring two ends up around the apple and pinch to close, then bring the other two ends up and pinch to close, pinch the sides and seal so there is no crack anyplace. It should look like my photo of apple dumplings. You may have to "patch" the dough when you roll it for the second dumpling, but as long as it is sealed, that is okay. Finish sealing all the apples in the dough.
  • Place the apple dumplings in the dish, don't let the sides touch, about 1/2 inch apart. Pour the syrup carefully AROUND not OVER the apple dumplings.
  • Bake in the 400 degree oven for 1 hour until dumplings are lightly browned. Serve in a shallow dish with a couple spoons of the syrup around the bottom of the apple, and a big dollop of whipped cream or lite cool whip! Enjoy!

OLD FASHIONED APPLE DUMPLINGS RECIPE

Old Fashioned Apple Dumplings Recipe image

For a comforting, warm treat, try these Apple Dumplings! They are a taste of Grandma's house right from the comfort of your own home!

Provided by Janelle

Time 1h20m

Number Of Ingredients 12

2 cups all-purpose flour (Crust)
1 teaspoon salt (Crust)
2 teaspoons baking powder (Crust)
3/4 cup butter, room temperature (Crust)
1/2 cup milk (Crust)
4 Granny Smith apples, grated with skin on, core removed (Filling)
1/2 teaspoon cinnamon (Filling)
1/2 cup white sugar (Filling)
2 cups water (Caramel Sauce)
2 cups brown sugar (Caramel Sauce)
1/4 cup butter (Caramel Sauce)
1/4 teaspoon cinnamon (Caramel Sauce)

Steps:

  • Preheat oven to 400*F
  • Spray a 9x13 casserole dish with oil. Set aside
  • In a bowl, using a pastry blender, mix flour, salt, baking powder and butter until mixture is crumbly.
  • Add milk ¼ cup at a time, mixing well with a rubber spatula to bind ingredients.
  • Lightly / medium flour a work surface and place dough in the middle. Roll out dough into a 10 x 14 inch rectangle. Think cinnamon rolls.
  • Grate apples and place on top of rolled out dough.
  • Sprinkle apples with ½ teaspoon cinnamon and ½ cup white sugar.
  • Gently roll up dough along the long end - like you would a cinnamon roll. Dough is more like a thick pie crust than a soft cinnamon roll dough. This makes it harder to roll, not to mention this bulky apple layer.
  • Once dough is rolled up into a tight roll, cut like cinnamon rolls, cut in 1 ¼ inch slices, like cinnamon rolls.
  • Place apple dumplings into a prepared casserole dish, filling the dish entirely. Don't overpack, allowing room for rolls to gently expand during cooking.
  • In a small saucepan, bring 2 cups water, 2 cups brown sugar, ¼ cup butter and ¼ teaspoon cinnamon to a simmer.
  • Pour over apple dumplings.
  • Bake for 35 minutes.
  • Remove and serve immediately by itself or with a scoop of vanilla ice cream.

MAMA ROSE'S APPLE DUMPLINGS

Mama Rose's Apple Dumplings image

Flaky biscuit dough is wrapped around crisp apples and topped with a rich butter sauce to create delicious cinnamon-spiced apple dumplings. My grandmother learned this recipe from her grandmother when canned biscuit dough was first invented. And our family has never stopped making it!

Categories     Apple Desserts

Time 40m

Yield 10

Number Of Ingredients 13

nonstick baking spray
¾ stick unsalted butter, melted
½ cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 large Granny Smith apple - peeled, cored, and diced
2 tablespoons warm water
1 (10 ounce) can refrigerated flaky biscuit dough
½ stick unsalted butter
3 tablespoons all-purpose flour
6 tablespoons water
1 tablespoon white sugar
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a square baking pan with nonstick spray.
  • Pour melted butter into a bowl; add sugar, flour, and cinnamon for dumplings and whisk until fully combined with the butter. Toss apples in mixture to coat; add 2 tablespoons warm water and mix to combine.
  • Gently stretch out the biscuits one at a time until they're large enough to fit 1 tablespoon apple mixture. Be careful not to stretch them too thin, you don't want the dough to break.
  • Add 1 heaping tablespoon apple mixture to the center of each stretched-out biscuit. Gently tuck the dough around the mixture to seal each dumpling into a ball shape.
  • Line up the dumplings with the seal facing down. Use a sharp knife to slice a tiny slit into the top of each dumpling to allow them to vent while cooking.
  • Bake in the preheated oven until nearly golden brown, 15 to 25 minutes.
  • While dumplings are baking, melt butter for sauce in a medium saucepan over medium-low. Slowly sprinkle flour into the butter, whisking the entire time. Add water and stir to combine. Remove from heat. Whisk in sugar and vanilla extract.
  • Remove dumplings from the oven and pour sauce on top. Continue to bake until the edges of the corner dumplings start to brown and pull away from the sides of the pan, 5 to 6 minutes more.
