I love this recipe for braised red cabbage with apples. It's simple, and can be made in to a festive winter side dish if you add cinnamon and orange.

1 medium orange, halved
1 medium head red cabbage, cored and diced (1-inch pieces)
2 medium Granny Smith apples, cored and cut into 1-inch pieces
½ medium onion, chopped
¼ cup vinegar
1 teaspoon ground cinnamon
1 teaspoon salt
ground black pepper to taste

Steps:

  • Juice one orange half. Remove and discard the peel from the second half, and cube the flesh.
  • Combine cabbage, apples, onion, vinegar, cinnamon, and salt in a large stock pot over low heat. Add orange juice and chopped flesh, then season with pepper. Cover and simmer, stirring occasionally, until cabbage is tender and has reduced, at least 45 minutes.

1 tablespoon butter
1 medium onion, halved and thinly sliced
1 Gala or Fuji apple, halved, cored, and sliced
1 head red cabbage (2 pounds), cored, quartered, and thinly sliced
Coarse salt and ground pepper
3 tablespoons cider vinegar
4 teaspoons sugar
1/2 cup water

Steps:

  • In a large Dutch oven or heavy pot, melt butter over medium. Add onion and apple; cook, stirring, until onion softens, 4 to 6 minutes. Stir in red cabbage and season with salt and pepper. Add vinegar, sugar, and water. Bring to a boil; reduce to a simmer, cover, and cook until cabbage is tender, 20 to 25 minutes. Season with salt, pepper, and sugar.

This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

Number Of Ingredients 8

1 large red cabbage, 2 to 2 1/2 pounds, quartered, cored and cut crosswise in thin strips
2 tablespoons canola oil
1 small onion, thinly sliced
2 tart apples, such as Braeburn or granny smith, peeled, cored and sliced
About 1/3 cup balsamic vinegar
1/4 teaspoon ground allspice
Salt
freshly ground pepper to taste

Steps:

  • Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. Add 2 tablespoons of the balsamic vinegar and cook, stirring, until the mixture is golden, about three minutes, then add the apples and stir for two to three minutes.
  • Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice, another 2 tablespoons balsamic vinegar, and salt to taste. Toss together. Cover the pot, and cook over low heat for one hour, stirring from time to time. Add freshly ground pepper, taste and adjust salt, and add another tablespoon or two of balsamic vinegar as desired.

  • Melt butter in heavy large skillet over medium heat. Add cabbage, apple, onion and bacon. Sauté until cabbage is crisp-tender, about 6 minutes. Add wine and vinegar. Cover and cook until liquid evaporates and cabbage is tender, about 10 minutes. Add potato and honey. Cover and cook until potato is tender, about 3 minutes. Season cabbage mixture to taste with salt and pepper.

Steps:

  • Heat butter in a 6- to 8-quart wide heavy pot over moderately high heat until foam subsides, then cook onion and cabbage, stirring frequently, until wilted and slightly browned, about 20 minutes.
  • Add wine, water, vinegars, apple, sugar, and salt and bring to a boil.
  • Wrap peppercorns, cloves, and bay leaf in cheesecloth and tie with string. Add to cabbage mixture, then cover cabbage directly with a round of parchment or wax paper and cover pot with lid. Reduce heat and simmer until cabbage is very tender, about 2 hours.
  • Discard cheesecloth bundle and season cabbage with salt and pepper.

This dish is super easy to make and picks up tons of flavor from the drippings of any meat you sear, such as fried pork chops. The apples taste wonderful, and they really perk up the cabbage. A fast and simple dish seasoned with just salt and pepper, and a touch of wine. Enjoy!

1/2 - large head of green cabbage
- a pan with meat drippings, prefer pork chops seared
1/2 - cup of white wine
2 - red gala apples unpeeled but cored
- salt and pepper to taste.

Steps:

  • Sear you meat in a large non-stick skillet that has a tight fitting lid, such as thick loin chops, which is what I used to make this dish. Once the chops have a good sear on both sides, transfer them to a glass baking dish, covered tight with foil, and pop them in the oven until the cabbage is done. About 15 minutes at 350 degrees.
  • Put the half head of cabbage flat side down on a cutting board. Slice the cabbage straight across in coarse 1/4 inch slices. Place the slices in the hot pan drippings and add the 1/2 cup of wine, stir gently to pick up any brown pieces. Put the lid on the skillet. Let the cabbage cook while you wash and slice the unpeeled red apples, removing the core. Place the apples on top of the cabbage. Ever so often turn the cabbage and the apples. The apples and cabbage will brown as the cabbage cooks, make sure it doesn't burn. When the cabbage is tender, the apples will be, too. Remove chops from oven, and serve with the cabbage and apples. Enjoy!
