This salad-in-a-sandwich can also be made with individual sourdough rolls. There can be many variations on this theme, so use your imagination. You might replace the tuna with grilled leftover chicken or tuck in a bit of salami, mortadella or roast beef. The sandwich is best if made at least two hours before serving.

1/2 cup olive oil
2 garlic cloves, minced
16 ounces sourdough bread, cut lengthwise in half (about 19 inches long by 4 inches wide)
2 (6 ounce) cans solid white tuna, well drained (preferably packed in olive oil)
1 small red onion, very thinly sliced
4 large tomatoes, cut into 1/3-inch-thick slices
1 (2 ounce) can anchovies, drained, chopped
2 tablespoons drained capers
2 (7 1/4 ounce) jars roasted red peppers, well drained
1/2 cup chopped pitted brine-cured black olives (such as Kalamata)

Steps:

  • Mix oil and garlic in bowl. Hollow out inside of both bread halves, leaving 1/2-inch-thick sides. Brush inside of bread halves with garlic oil. Spread tuna evenly over bottom half. Top with onion, then tomatoes, pressing down to compact. Sprinkle anchovies and capers over, pressing to adhere. Layer peppers over, then olives. Top with remaining bread half; press together.
  • Wrap bread tightly in plastic wrap. Refrigerate at least 2 hours and up to 1 day. Cut bread crosswise into six 3-inch-wide pieces.

Here's a traditional French sadwich from "Real Simple, Meals Made Easy" by Reneee Schettler. This certainly brings canned tuna into the realm of "gourmet".

1 baguette
2 (6 ounce) cans tuna, drained
1/2 teaspoon kosher salt
1/4 teaspoon black pepper, freshly ground
2 tablespoons lemon juice, fresh
3 tablespoons extra virgin olive oil
1 head green leaf lettuce (or Boston luttuce)
2 plum tomatoes, sliced crosswise
1/2 small red onion, thinly sliced
1/3 cup kalamata olive, pitted and roughly chopped
1/3 cup fresh basil leaf
3 tablespoons capers, rinsed, drained and roughly chopped (optional)

Steps:

  • Halve the baguette lengthwise, then cut it crosswise into 4 portions.
  • Remove some of the light, fluffy bread from the center and reserve for another use (such as bread crumbs).
  • In a medium bowl, combine the tuna, salt, pepper, lemon juice, and 1 Tablespoon of the oil.
  • Place a few lettuce leaves on both halves of each baguette portion.
  • top the bottom halves with the tuna mixture, tomatoes, onion, olives, basil and capers (if using).
  • Drizzle with the remaining oil.
  • Cover with the top half of each baguette portion and press gently but firmly.
  • Enjoy or wrap and tote to your favorite outdoor activity.

I love making this for a picnic tea. Pressing the sandwich allows the bread to become saturated with the flavours of the ingredients.

1 long baguette
1 clove garlic, pressed
1/4 cup olive oil (extra-virgin is best)
1 tomatoes, thinly sliced
1 cucumber, thinly sliced
1/2 red onion, thinly sliced
1/2 cup pitted and sliced kalamata olives or 1/2 cup other ripe black olives
salt & fresh ground pepper
4 ounces sliced cheese (no processed slices please! Cut it fresh)
2 hard-boiled eggs
1 red capsicum, thinly sliced
1/4 cup capers, rinsed and drained
1 cup artichoke heart
1/2 cup pesto sauce
herbs (eg fresh basil, oregano, thyme...)

Steps:

  • slice the bread in half lengthwise, nearly all the way through.
  • Carefully open the loaf and spread the garlic on one of the cut sides.
  • Drizzle the olive oil on both sides.
  • Layer the tomato, cucumber, onion and olives and any of the optional ingredients on one half of the bread.
  • Sprinkle with salt and pepper to taste.
  • Close the loaf and wrap in tightly in plastic wrap or aluminium foil.
  • Weight the full length of the Pan Bagnat with a heavy book[or several] for 1-3 hours.
  • Slice and serve.

This delightful sandwich from Nice, in the South of France, started out as a Salade Niçoise in which stale bread was crumbled about an hour before it was served. The name literally means "bathed bread" - alluding to the spreading of olive oil on the bread and the softening of the inside of the bread after the filling has been added. It can be made with varying ingredients and various amounts but the basics are listed below, feel free to adapt it to your own preferences. I make these the night before we plan to go on a picnic; I then wrap a piece of greaseproof/brown paper around each roll or baguette sandwich, and tie them with kitchen string - it keeps them all together and looks very "French Rustic"! (It also helps to hold the sandwich together whilst eating them!) A French classic which is essential on the picnic menu.

1 baguette, the wider type such as Pain (or 4 ciabatta rolls)
1 garlic clove, peeled
extra virgin olive oil
salt
black pepper
2 hard-boiled eggs, peeled and thinly sliced
200 g good quality tuna
3 -4 ripe tomatoes, sliced
6 salted anchovies
pitted black olives
1/2 red onion, finely sliced into rings
1/2 cos lettuce, leaves roughly torn (or something similarly crunchy)
white wine vinegar

Steps:

  • Cut the baguette into even size portions.
  • Then cut the baguette pieces or bread rolls in half lengthways, and scoop out some of the bread filling. (You use this for a gratin-type affair later in the week or for breadcrumbs).
  • Rub the garlic over the inside of both halves, drizzle with a generous amount of olive oil and season well.
  • In one hollowed-out half, pack in the egg slices, tuna, tomatoes, anchovies, olives, chopped red onion and lettuce leaves.
  • Drizzle with more oil, and a little white-wine vinegar.
  • Put the other half of the baguette or bread roll on top, wrap snugly in tinfoil and place on a flat surface. Lay some big books on top to weigh it down. (I use a Larousse Gastronomique!).
  • Leave for an hour or two. Then remove the tinfoil and wrap a band of greaseproof or brown paper around the middle of each portion, and tie tightly with kitchen string.
  • These can then be stored overnight in a covered container until next day. (This is not necessary - but can be handy to avoid all the fuss next day!).
  • Take them on your picnic with wine, fruit and good company!
  • Sublime!

1/4 cup extra virgin olive oil
1/3 cup basil leaves
2 (6 ounce) cans tuna in olive oil, undrained
2 plum tomatoes, diced
2/3 cup oil-cured olives, coarsely chopped
1/2 cup vidalia onion, chopped
2 tablespoons fresh lemon juice

Steps:

  • Slice bread in half lengthwise. Scoop out the inside, leaving a 3/4 inch shell of bread and crust.
  • Brush interior of both halves with olive oil and line with basil leaves in single layer.
  • Combine undrained tuna, tomatoes, olives, onion, and lemon juice in bowl to blend. Season to taste with salt and pepper.
  • Spoon salad into bottom bread shell.
  • Cover with top half; wrap in plastic.
  • Place between two plates and add weights to the top (e.g. cans). Let stand 20 minutes.
  • Unwrap, slice, and serve.
