Moroccan Lamb, Lentil, and Chickpea Soup image

I made this for my make-ahead cooking group "The Make-Ahead Mamas'" holiday soup swap. The wonderful traditional Moroccan cinnamon-spice combination is lovely with the ground lamb and sweet potatoes, and the chopped apricots or cranberries add a surprising tart sweetness with every few bites. Whenever I make this recipe, I make a double (or triple!) batch and freeze a few portions.

1 pound ground lamb
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon kosher salt
½ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
¼ teaspoon ground turmeric
⅛ teaspoon curry powder
1 tablespoon butter
1 sweet onion, chopped
2 (10.5 ounce) cans beef consomme
1 (14.5 ounce) can diced tomatoes with juice
1 (14 ounce) can organic beef broth
1 (14 ounce) can organic chicken broth
1 tablespoon honey
3 large carrots, halved lengthwise and thinly sliced
2 sweet potatoes, peeled and diced
1 (15 ounce) can garbanzo beans, rinsed and drained
1 cup lentils, rinsed and drained
½ cup chopped dried apricots
⅛ teaspoon cayenne pepper, or to taste
1 pinch ground black pepper to taste

Steps:

  • Mix ground lamb, cinnamon, cumin, salt, ginger, cloves, nutmeg, turmeric, and curry powder together in a bowl. Cover and put in the refrigerator for 2 hours to overnight.
  • Melt butter in a soup pot over medium-high heat; stir in onion. Cook, stirring frequently, until the onion has softened and turned translucent, 5 to 10 minutes. Reduce heat to medium and add spiced lamb mixture. Cook and stir until browned and crumbly, 5 to 7 minutes.
  • Add consomme, diced tomatoes, beef broth, chicken broth, and honey. Stir in carrots, sweet potatoes, garbanzo beans, lentils, apricots, cayenne pepper, and black pepper.
  • Bring soup just to a boil over medium-high heat, then reduce heat to low, and simmer until lentils and vegetables are tender, 15 to 20 minutes.

1 cup Toor daal
2 pounds (1 kilogram) of lamb (boneless and cubed)
3 tablespoons vegetable cooking oil
1 teaspoon cumin seeds
2 onions sliced
1 tablespoon ginger paste
2 tablespoons garlic paste
2 teaspoons coriander powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
4 large tomatoes chopped fine or 1 (14.5 ounce) can of chopped tomatoes
Salt to taste
Juice of 1/2 a lime
Coriander leaves to garnish

Steps:

  • Gather the ingredients.
  • Heat the cooking oil in a deep pan (on medium heat). When hot, add the cumin seeds. Fry till the spluttering stops.
  • Add the onions and fry (stirring often) till they begin to turn pale golden in color.
  • Now add the ginger and garlic pastes and fry for a minute.
  • Next, add the coriander, cumin, turmeric, red chili, and garam masala powder and fry till the oil separates from the masala. Stir often to prevent the masala from sticking to the vessel and burning.
  • Add the tomatoes and fry for two to three minutes, stirring often.
  • Now add the lamb, salt to taste, and stir well. Fry till browned.
  • Now add the lentils to the pot. Stir well and add three cups of water. If you are using a pot to cook the Daal Gosht , you need to let the daal /lentils come to a boil after adding the water and then simmer, cover the pot, and cook until the daal /lentils are soft. The end consistency of this dish needs to be like thick porridge, so keep checking to see if you need to add more water. Add hot water as required to maintain the right consistency until the daal /lentils are cooked.
  • Once cooked, add the lime juice, stir well, and garnish with coriander leaves. Serve with plain boiled rice and a vegetable side dish.

Slow Roasted Lamb Shanks with Braised Lentils image

2 1/2 cups chopped red onions
1 cup diced celery
1 cup diced peeled carrots
3 tablespoons chopped fresh thyme
3 tablespoons chopped fresh mint
4 large lamb shanks (about 6 pounds total)
5 tablespoons extra-virgin olive oil
8 cups chicken stock or canned low-salt chicken broth
1/2 cup dry red wine
4 juniper berries* (optional)
1 bay leaf
1 tablespoon all purpose flour
1 tablespoon butter, room temperature
Braised Lentils

Steps:

  • Preheat oven to 500°F. Spread onions, celery, and carrots over bottom of large roasting pan. Rub thyme and mint over lamb shanks; sprinkle generously with salt and pepper. Place lamb shanks atop vegetables. Drizzle 3 tablespoons oil over. Roast uncovered 30 minutes. Pour 1 cup chicken stock over lamb and vegetables in pan. Reduce oven temperature to 425°F. Continue to roast uncovered until lamb is very tender and almost falls off bones, adding 1 cup stock to pan every 30 minutes and turning and basting lamb occasionally, about 3 hours longer. Using tongs, transfer lamb shanks to bowl; cover to keep warm.
  • Transfer vegetables and pan juices to large saucepan; skim fat from surface. Add remaining 1 cup stock, wine, juniper berries if desired, and bay leaf to saucepan. Simmer 10 minutes to blend flavors. Strain, pressing on solids to extract as much vegetable pulp and liquid as possible. Return strained liquid to same saucepan; bring to boil. Mix flour and butter to blend in small bowl. Add to saucepan; whisk until sauce thickens slightly and is reduced to 2 cups, about 2 minutes. Season sauce with salt and pepper.
  • Spoon Braised Lentils onto 4 plates. Drizzle remaining 2 tablespoons oil over lentils. Top each serving with 1 lamb shank. Spoon sauce over lamb.

MINCED LAMB & LENTIL PATTIES (SHAMI KEBAB)

Number Of Ingredients 20

80g split Bengal gram (chana dal)
30g ghee
1 onion, finely chopped
500g lamb mince
10 garlic cloves
50g ginger, peeled and finely chopped
1 tsp Kashmiri chilli powder
1 tsp garam masala
½ tsp black cumin seeds (shahi jeera), or ½ tsp ground cumin
1 egg, lightly beaten
1 lime, juiced
4 tbsp roughly chopped coriander
2 green chillies, finely chopped
50ml sunflower oil
150ml full-fat Greek yogurt
1 small garlic clove, crushed
2 tbsp shredded mint leaves
1 tsp ground cumin
1 tsp caster sugar
lime juice, for seasoning

Steps:

  • Put the split Bengal gram in a small heatproof bowl, cover with boiling water from the kettle and leave to soak for 3 hrs or ideally overnight, if you have the time.
  • Melt the ghee in a flameproof casserole over a medium heat and fry the onions for 7-10 mins until starting to turn golden. Add the lamb mince. Peel the whole garlic cloves and tip these into the dish along with the ginger and cook, stirring often, for 10 mins more until any liquid from the lamb evaporates. Drain the soaked Bengal gram and add this to the dish with the chilli powder, garam masala and black cumin seeds or ground cumin.
  • Pour over 300ml hot water to just barely cover the mince, cover with a lid, reduce the heat and simmer for 20-25 mins until the mince is tender. Remove the lid and continue to cook, stirring frequently, until all the water has evaporated and the Bengal gram is tender. By now, the mince will be dry and crumbly in texture. Spread the mixture out on a baking tray and leave to cool completely before transferring to a large food processor.
  • Add the beaten egg, lime juice, coriander and green chillies to the processor and blend until smooth. Using damp hands, roll the lamb mixture into about 20 walnut-sized balls. Flatten each ball in your palm into a 4cm patty (with a thickness of 1cm) using your fingers. Transfer to a baking tray lined with baking parchment and chill for 30 mins.
  • For the mint raita, mix the yogurt with the garlic, mint, cumin and sugar and add enough lime juice to sharpen the flavour. Taste for seasoning, then set aside.
  • Heat 2 tbsp oil in a heavy-based frying pan over a medium heat and fry the kebabs in batches for 3-4 mins on each side until browned. Pour off the excess oil between batches and wipe the pan clean with kitchen towel before adding fresh oil. Drain the kebabs on kitchen paper and serve warm with the mint raita.

hearty lentil stew with lamb that just falls apart

olive oil
800 g lamb on the bone
2 onions, chopped
2 cloves of garlic, crushed
2 carrots, cut into slices
2 sticks celery, chopped
150 g lentils
100 ml red wine
2 cloves
fresh rosemary
1 litre of beef stock
salt
fresh black pepper

Steps:

  • Heat the olive oil in the large pan or a casserole dish. Fry the lamb in the olive oil from each side until golden brown. Then take out and set aside.
  • In the same oil, fry chopped onion and crushed garlic for about 5 minutes until softened. Add sliced carrots and celery, fry for 5 more minutes and then add lentils. Pour in the red wine and stir well.
  • Return the meat back into the pan, pour the stock over and add cloves and rosemary and black pepper.
  • Turn down to very low heat and simmer for about 3 hours, until the meat falls off the bone. Add stock during this time as necessary.
  • Take the meat off the bone (it should be falling off by itself), so just use wooden spoon and serve with crusty bread.

2 ½ cups basmati rice
¼ cup cooking oil
8 whole cloves
4 black cardamom pods
4 cinnamon sticks
4 large onions, sliced thin
1 tablespoon garlic paste
1 tablespoon ginger paste
¼ cup chopped fresh cilantro leaves
3 tablespoons chopped fresh mint leaves
1 pound lamb chops
salt to taste
3 tomatoes, chopped
4 green chile peppers, halved lengthwise
2 teaspoons ground red pepper
2 tablespoons plain yogurt
2 tablespoons lemon juice
7 ½ cups water
1 teaspoon salt
1 tablespoon vegetable oil
1 onion, sliced
½ teaspoon saffron
2 tablespoons warm milk

Steps:

  • Place the basmati rice in a large container and cover with several inches of cool water; let stand 30 minutes. Drain.
  • Heat 1/4 cup oil in a large skillet over medium heat; fry the cloves, cardamom pods, and cinnamon sticks in the hot oil until fragrant, about 1 minute. Add the onions; cook and stir until the onions are lightly browned, about 5 minutes. Stir the garlic paste and ginger paste into the onion mixture; cook until the garlic and ginger is fragrant, about 1 minute more. Sprinkle the cilantro and mint over the mixture and cook 1 minute more.
  • Add the lamb chops to the skillet; season with salt. Cook and stir the lamb until the meat begins to brown, about 20 minutes.
  • Stir the tomatoes, green chile peppers, and ground red pepper into the mixture; continue cooking until the oil begins to separate from the gravy, about 10 minutes. Add the yogurt and lemon juice; cover and cook until the lamb is tender, about 15 minutes. Add water as needed to keep the mixture from getting too dry.
  • Bring the rice, 7 1/2 cups water, and 1 teaspoon salt to a boil in a saucepan until the rice is nearly done yet a little chewy, 10 to 15 minutes; drain any excess water.
  • Heat 1 tablespoon oil in a small skillet; fry the sliced onion in the hot oil until lightly browned.
  • Layer about half the rice in the bottom of a deep pot with a lid. Spoon the lamb masala over the rice. Spread the fried onion over the lamb masala. Top with the remaining rice. Stir the saffron and warm milk together in a small bowl; pour over the top layer of rice. Cover the pot with the lid and place the pot over low heat; cook until the rice is thoroughly cooked, about 15 minutes.

1 ½ pounds lamb shoulder arm chops, cubed, round bones reserved
1 teaspoon salt
½ teaspoon ground black pepper
1 onion, chopped
4 cloves garlic, minced
1 cup lentils, picked over and rinsed
2 cups chicken broth, or more as needed
1 (14 ounce) can diced tomatoes
3 carrots, peeled and sliced
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon dried basil
2 cups coarsely chopped fresh spinach
1 lemon, juiced and zested
½ cup ricotta salata cheese, crumbled

Steps:

  • Heat oil in a heavy pot over medium-high heat. Add the lamb cubes and bones and brown on all sides, about 3 minutes. Sprinkle with salt and pepper. Add onion and garlic and continue cooking about 2 minutes, stirring frequently.
  • Stir in the lentils, 2 cups of the chicken broth, tomatoes, carrots and the thyme, sage and basil. Bring to a boil, reduce the heat to low and simmer, covered, until the lentils are tender but not quite done, stirring occasionally. Depending on the type and freshness of the lentils, this will take from 15 to 30 minutes. If the stew seems dry, add more broth (up to one cup additional). Discard the lamb bones.
  • Add the spinach and cook 5 minutes more. Stir in the lemon zest and juice. Garnish individual servings with some of the crumbled cheese.
