Best-Ever Grilled Ribs image

Grilled BBQ ribs might sound intimidating, but they're actually so easy to make. There's no pre-cooking required and they come out smoky and flavorful every time.

1/4 c. light brown sugar
2 tbsp. smoked paprika
1 1/2 tsp. onion powder
1 1/2 tsp. garlic powder
1 1/2 tsp. kosher salt
1 tsp. ground black pepper
1/2 tsp. ground cayenne pepper (optional)
2 racks baby back ribs (about 5 to 6 pounds total)
3 tbsp. vegetable oil, plus more for oiling the grates
1/2 c. chicken stock
1/4 c. apple cider vinegar
1 1/2 c. BBQ sauce

Steps:

  • Preheat a grill (charcoal or gas) to 300˚, with the coals or flames only under one half of the grill.
  • For the spice rub: In a small bowl, mix the brown sugar, smoked paprika, onion powder, garlic powder, salt, black pepper and cayenne (if using) to combine.
  • Place the rack of ribs on a large sheet tray and remove the membrane from the underside of the ribs. Rub the vegetable oil all over both sides of the ribs, then sprinkle evenly with the spice rub.
  • Place the ribs on the sheet tray, with the curves of the bones facing down. Add the chicken stock and vinegar to the tray. Wrap the tray tightly with aluminum foil and place on the grill over the side with no coals/flame. Cook over indirect heat until the internal temperature of the ribs reads 180˚ to 190˚, about 80 to 90 minutes.
  • Increase the grill temperature to 375˚ and oil the grill grates well. Transfer the ribs directly over the grill grates and brush the tops with the BBQ sauce. Cover and cook for 5 minutes. Carefully turn the ribs over and baste the other side with the BBQ sauce. Cover again and cook for an additional 5 minutes. Continue basting and turning the ribs until the BBQ sauce has created a sticky coating and the ribs are charred in spots, 10 to 20 minutes longer.
  • Transfer the ribs to a cutting board, cut into pieces and serve.

PARBOILED BABY BACK RIBS



Parboiled Baby Back Ribs image

1 full rack baby back ribs
2 lemons
1 cup kosher salt
2 tablespoons black peppercorns
2 bay leaves
Prepared glaze, for finishing, optional

Steps:

  • Put the ribs in a large stockpot and fill with enough cold water to cover. Squeeze the lemons into a bowl and strain the juice into the pot; add the lemon rinds as well (remove any seeds). Add the salt, peppercorns and bay leaves and bring to a boil. Boil until the ribs are slightly soft but not falling apart, about 25 minutes.
  • Prepare a grill for high heat.
  • Transfer the ribs to the grill, meatier-side down. Grill for 10 minutes; brush with glaze if you like and then grill another 3 minutes. The finished ribs should be at least 165 degrees F in the center; you don't want to char the meat, but you want it to fall apart.

2 ½ pounds country style pork ribs
1 tablespoon garlic powder
1 teaspoon ground black pepper

1 cup barbeque sauce

Steps:

  • Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

6 racks baby-back ribs
4 stalks celery, coarsely chopped
2 medium carrots, coarsely chopped
1 large onion, coarsely chopped
1 clove garlic, halved
Coarse salt and freshly ground pepper
Pierre's Barbecue Sauce

Steps:

  • Divide ribs between 2 large pots. Cover with cold water. Bring to a boil. Reduce to a simmer, and cook 3 minutes, skimming any foam that rises to the surface. Drain; rinse under cold water. Cover ribs with cold water again.
  • Divide celery, carrots, onion, and garlic between pots; add 1 tablespoon salt to each pot. Bring to a boil. Reduce to a simmer, and cook until ribs are tender, about 1 hour. Drain; discard vegetables.
  • Preheat grill to medium (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 5 to 6 seconds). Season ribs generously with salt and pepper; brush with barbecue sauce. Grill, turning frequently and brushing with sauce occasionally, until heated through and marked by grill, about 15 minutes. Cut into servings of about 3 ribs each; brush with more sauce. Serve immediately.

6 cloves garlic, crushed
½ onion, chopped
2 bay leaves
1 teaspoon red pepper flakes
1 tablespoon Chinese five-spice powder
2 tablespoons kosher salt
½ cup rice vinegar
1 (2 pound) slab baby back ribs, cut into individual ribs
1 ½ tablespoons soy sauce
1 ½ tablespoons rice vinegar
1 ½ tablespoons sambal oelek chili paste
1 ½ tablespoons Dijon mustard
1 ½ tablespoons ketchup
1 ½ tablespoons honey
1 ½ tablespoons brown sugar
½ teaspoon Chinese five-spice powder

Steps:

  • Mix together water, garlic, onion, bay leaves, red chili flakes, Chinese five-spice, salt, and rice vinegar in a large pot. Bring to a boil, turn to low, and simmer for 15-20 minutes.
  • Place ribs in the simmering broth. Return to a simmer, turn heat to low, and cook for 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicone baking mat, or coat with cooking spray.
  • Whisk together soy sauce, rice vinegar, sambal oelek chili paste, Dijon mustard, ketchup, honey, brown sugar, and Chinese five-spice powder in a large bowl.
  • Remove the ribs from the broth and transfer them to the bowl with the soy sauce glaze. Toss to coat.
  • Transfer glazed ribs to the prepared baking sheet. Reserve extra glaze for brushing.
  • Bake ribs in preheated oven for 15 minutes. Turn the ribs and brush with more glaze. Cook 15-20 more minutes, brushing occasionally with remaining glaze if desired. Remove and serve.

4 racks of baby back pork ribs or other whole racks (about 450g each)
5 tbsp cider vinegar
2 tbsp smoked paprika
4 tbsp light brown soft sugar
1 tbsp garlic granules
1 tbsp onion granules
1 tbsp Chinese five-spice powder
300g tomato ketchup
2 tbsp honey
1 tbsp soy sauce
1 tbsp Dijon mustard
300ml apple juice

Steps:

  • If there's a thin membrane on the back of the ribs, peel this off as best you can. The length of the ribs will be determined by the size of your roasting tin and barbecue - leave them whole or cut in half or thirds. Tip the ribs into a large, deep roasting tin. Whisk the rest of the ingredients together in a bowl until completely combined, then pour this over the ribs. Toss the ribs in the sauce using your hands to ensure they're completely coated. Cover the tin with foil, shiny-side down. To cook straightaway, simply leave to marinate while the oven heats up, or chill the ribs overnight.
  • Heat the oven to 160C/140C fan/gas 3 and bake the ribs for 2 hrs 30 mins-3 hrs, turning once or twice until the bones are exposed and the meat is pull-apart tender. When the ribs are cooked, leave to cool a little, then lift onto a tray using tongs. Pour the sauce from the tin into a saucepan and bring to the boil. Reduce the heat and simmer for 25-30 mins, stirring occasionally until thickened. Leave to cool. The sauce and ribs can be prepared up to two days ahead and chilled.
  • Light the barbecue and wait until the coals are ashen, or set a gas barbecue to medium. Put as many ribs on the grill as you can fit, then brush generously with the sauce. Working quickly, grill the ribs, basting with more sauce and turning every minute or so until the ribs are well-coated, charred at the edges, caramelised and sticky. Repeat with any remaining ribs and sauce if they didn't all fit on the grill at once. Serve piled high on a platter with the reserved sauce on the side for slathering on top. Any leftover sauce will keep chilled in the fridge for up to a week.

⅔ cup water
⅓ cup red wine vinegar
1 cup ketchup

Steps:

  • Preheat grill for medium heat.
  • Lightly oil preheated grill. Transfer ribs from the oven to the grill, discarding cooking liquid. Grill over medium heat for 15 minutes, turning ribs once. Baste ribs generously with barbeque sauce, and grill 8 minutes. Turn ribs, baste again with barbeque sauce, and grill 8 minutes.
