CRISPY POTATOES WITH BACON, GARLIC, AND PARSLEY



Crispy Potatoes with Bacon, Garlic, and Parsley image

Number Of Ingredients 7

1 1/2 pounds red-skinned potatoes, quartered with skin (about 1 1/2-inch pieces)
Kosher salt, plus 1 teaspoon
3 pieces bacon, cut into 1-inch pieces
1 to 2 tablespoons unsalted butter or oil
2 tablespoons chopped flat-leaf parsley leaves
1 to 2 large cloves garlic, minced
Freshly ground black pepper

Steps:

  • Put the potatoes and salt in a medium saucepan and cover with cold water. Bring to a boil over high heat and simmer for 1 minute, then drain. Pat dry.
  • Meanwhile, put the bacon in a well-seasoned cast iron skillet or a saute pan over medium-low heat, and cook until nearly all the fat has rendered and the bacon is crispy, aromatic, and browned, about 5 minutes. Remove the bacon with a slotted spoon and set aside on a paper towel lined plate.
  • Add the 1 to 2 tablespoons of butter or oil to the remaining bacon fat. Increase the heat to medium. Add the potatoes, positioning them in the pan so the cut sides get nice and brown. Cook turning only as needed until the potatoes are golden brown, about 15 minutes. Stir in the parsley, garlic, and bacon and stir until fragrant and lightly browned. Season with 1 teaspoon of salt and pepper. Serve.

Potatoes are boiled for all sorts of reasons: to make mashed potatoes, or to slice or quarter for salads. But they are also delicious as is, as demonstrated by this simple side dish. The best potatoes for boil-and-serve are waxy types such as red potatoes or fingerlings; they will hold their shape better than starchy russets.

2 pounds small waxy potatoes, such as red creamer, red bliss, or fingerlings; halved if large
Coarse salt and freshly ground pepper
2 tablespoons unsalted butter
2 tablespoons coarsely chopped fresh flat-leaf parsley

Steps:

  • Boil Place potatoes in a large saucepan and cover with cold water by 1 inch. Add 1 tablespoon salt and bring to a boil over high heat, then reduce heat to a simmer. Cook until the tip of a paring knife inserted into center of potatoes meets only slight resistance, 15 to 20 minutes.
  • Drain and toss Drain potatoes in a colander and return to warm saucepan. Toss with butter and parsley, and season with pepper.
  • Serve Transfer to a serving dish and serve immediately.

This is a recipe that my grandmother made ever since I can remember (I'm 58). I bake the potatoes like she did and serve them with pork or chicken. It's a favorite of my father-in-law who always asks for them when he comes for dinner.

16 small red-skinned potatoes, about 1 1/2 pounds
Salt to taste
8 parsley sprigs
1 bay leaf
3 tablespoons butter
3 tablespoons chopped parsley
1/4 teaspoon ground cumin
Freshly ground white pepper to taste

Steps:

  • Using a sharp knife, peel some of the skin, leaving a band for color.
  • Place the potatoes in a saucepan, and cover them with water. Add salt, the parsley sprigs and bay leaf. Bring to a boil, and simmer for 15 minutes or until tender.
  • Drain the potatoes, discarding the parsley sprigs and bay leaf. Add the butter, chopped parsley, cumin, salt and pepper to the potatoes in the same saucepan. Stir gently to coat the potatoes, and serve immediately.
