VEGETARIAN MEATLOAF THAT TASTES LIKE MEATLOAF!
My co-worker made one of these, and I was lucky enough to be able to buy it in an auction. YUMMY! The texture was perfect, and there was no grease, unlike in a traditional meatloaf. I highly recommend it. He got the recipe from a BOCA Ground Crumbles package.

- Heat oven to 350°F
- If crumbles are frozen, microwave crumbles in medium bowl on high for 1-1/2 minute
- Add all remaining ingredients except ketchup; mix lightly. Let stand 5 minute.
- Shape into loaf in 8-inch pie plate; top with ketchup.
- Bake35 minute or until center is done (160ºF).

- Preheat oven to 350.
- Spray a loaf pan with cooking spray.
- In a microwave safe bowl place Boca Ground Crumbles and heat for 1 1/2 minutes.
- To the crumbles add all ingredients except the 2 tbsp BBQ sauce.
- Mix together and let stand 5 minutes.
- Place mixture in loaf pan.
- Top with remaining 2 Tbsp BBQ sauce.
- Bake 35 minutes.

My kids are vegetarians, so I just eat mostly vegetarian. One day though, I was craving the comfort of meatloaf. This version is VERY close in flavor and texture. I kept tweaking and think I've finally found my favorite version. It has become a family and neighborhood favorite! Not to mention, it smells wonderful while cooking!

- preheat oven to 375 degrees and spray or lightly grease a 9" pie plate/pan
- Microwave Boca Crumbles for 2 minutes
- In large bowl combine all ingredients, except the ketchup and mix well, you'll get plenty messy on this step!
- Form mixture into a loaf shape in the Pie plate and top with ketchup.
- Bake about 50-60 minutes, with an internal temp of atleast 160 degress. Remove and let stand atleast 30 minutes. Enjoy!

I have tried and tried meatloaf recipes they all fall apart before you get them out of the pan. This meatloaf is very good and sticks together to be served. Leftover meatloaf makes wonderful sandwiches with mayonnaise.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a food processor or blender, combine the bell pepper, onion and celery. Process until finely chopped, but not liquid. Transfer to a large bowl.
