SIMPLE LAYERED SPINACH SALAD



Simple Layered Spinach Salad image

I'm always on the lookout for new spinach salads, and I particularly like this one. It can be prepared ahead of time and it travels well, too!

Number Of Ingredients 8

1/2 to 3/4 pound fresh spinach
1/2 medium cucumber, thinly sliced
1/2 cup thinly sliced radishes
1/4 cup thinly sliced green onion
2 hard-boiled large eggs, sliced
3/4 cup Ranch-style salad dressing
5 slices bacon, crisply fried and crumbled
1/2 cup Spanish peanuts

Steps:

  • Remove and discard spinach stems. Rinse leaves well; drain and pat dry. Tear spinach into bite-sized pieces and arrange evenly in salad bowl. Evenly layer cucumber slices, radish, green onion and eggs. Spread dressing over top. Cover; chill up to 24 hours. Just before serving, sprinkle with bacon and peanuts.

1 medium head iceberg lettuce, torn
1 medium green pepper, chopped
1 small sweet red pepper, chopped
1 medium onion, sliced and separated into rings
2 cups frozen peas (about 10 ounces)
1 cup mayonnaise
2 tablespoons sugar
1 cup shredded cheddar cheese
12 bacon strips, cooked and crumbled
3/4 cup dried cranberries

Steps:

  • In a 4-qt. or 13x9-in. glass dish, layer the first 5 ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover., Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight.

5 cups torn mixed salad greens
5 cups fresh baby spinach
1/2 pound sliced fresh mushrooms
6 hard-boiled large eggs, chopped
1 bunch green onions, sliced
1/2 cup bacon bits
3/4 cup mayonnaise
1/3 cup sour cream
3-1/2 teaspoons ranch salad dressing mix
1 tablespoon minced fresh parsley

Steps:

  • In a 3-qt. glass serving bowl, layer the first six ingredients in order listed. In a small bowl, combine the mayonnaise, sour cream and dressing mix. Spread over salad. Sprinkle with parsley. Cover and refrigerate until serving.

1 head of your choice lettuce (she uses Iceberg)
1 (12 ounce) bag fresh spinach (clean real well and pat dry)
12 -16 hard-boiled eggs, sliced
1 lb cooked bacon, broken in pieces
1 -2 bunch sliced green onion
1 (8 ounce) package frozen peas
2 cups mayonnaise
2 (1/2 ounce) packages Hidden Valley® Original Ranch® Dressing
1 (8 ounce) package cream cheese
4 -8 tablespoons milk (to reach desired consistency of a thick sour cream)

Steps:

  • Layer in the order given in the recipe list.
  • Make the dressing.
  • Spread it from rim to rim.
  • Wrap tight and refrigerate for at least 8 to 12 hours before eating.

  • Toss together the lettuce, spinach, celery, mushrooms, eggs, peas, bell pepper, green onions, and water chestnuts in a 9x13 inch dish. Mix the mayonnaise, sour cream, and sugar in a bowl, and spread evenly over the salad to the edges of the dish. Sprinkle with Cheddar cheese, and top with bacon. My mother gave me three of these cookbooks and our family has used a lot of the recipes. This book has recipes from people who live all over the state of Minnesota. This is Yummy and great for a crowd, picnic, or holiday get togethers!

1 head lettuce
1 cup celery, diced
4 hardboiled egg, sliced
1 (10 ounce) package frozen peas, thawed
1/2 cup diced green pepper
1 medium sweet onion, chopped
8 slices bacon, fried and diced
2 cups mayonnaise
2 tablespoons sugar
4 ounces grated cheddar cheese

Steps:

  • Tear the cleaned crisp lettuce into small bite sized pieces and place in the bottom of 9x12 inch cake pan.
  • Layer the rest of the ingredients in the order given, do not cook peas.
  • Add the sugar to the mayonnaise and spread over the top as you would frosting.
  • Top with grated cheese.
  • Cover and refrigerate for 8 to 10 hours.
  • Bacon bits can be used for bacon.
