GOOD OLD COUNTRY STUFFING



Good Old Country Stuffing image

A classic country style bread-and-sausage stuffing with a mushroom gravy.

Number Of Ingredients 17

2 loaves dry white bread
2 cups cooked white rice
1 sleeve crushed saltine crackers
1 lb bulk breakfast sausage
2 cups chopped celery
1 large chopped onion
11 cups divided (or turkey stock) chicken stock
1 tablespoon poultry seasoning
1 teaspoon dried sage leaves
3 beaten eggs
1/4 stick plus 3 tablespoons butter
from one turkey turkey giblets
2 chicken bouillon cubes
3 tablespoons cornstarch
1/3 cup cold water
2 pints sliced button mushrooms
1 hard boiled sliced egg

Steps:

  • Preheat oven to 350 °F.
  • Crumble dried white bread into a large bowl. Add cooked white rice and crushed saltines. Sauté pork sausage. Add celery and onion and sauté until transparent - 5 to 10 minutes. Pour over bread and rice mixture. Add stock - mix, add salt, pepper, sage and poultry seasoning. Add 3 beaten eggs and mix well. Reserve 2 tablespoons of mix for gravy. Add slices of 1/4 stick of butter on top. Pour into greased pan and bake until done - 45 minutes.
  • Mushroom Giblet Gravy:
  • Bring stock and giblets to a boil. Add bouillon and 2 tablespoons reserved stuffing mixture. Make a slurry by whisking together the cornstarch and water and add to the boiling stock; cook 2 to 3 minutes. Meanwhile, sauté mushrooms until browned in 3 tablespoons butter. Add mushrooms to gravy with egg and salt and pepper, to taste.

My grandmom's secret ingredient to her stuffing was stale Italian bread to soak up the stock, and Trisha's grandmother used saltines for a nice crunch. On the show, we cooked up a combination of both of our family traditions!

Number Of Ingredients 10

1 1/2 loaves day-old Italian bread (24 ounces), cut into 1-inch cubes (about 10 cups)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
8 tablespoons (1 stick) unsalted butter, plus more to grease your baking dish
3 medium carrots, preferably rainbow, peeled and diced (about 1 cup)
3 stalks celery, diced
1 large sweet onion, diced
1 tablespoon fresh thyme leaves
2 cups lightly crumbled saltine crackers (1 sleeve or about 40 crackers)
About 4 cups vegetable stock, chicken stock or turkey pan juices

Steps:

  • Preheat the oven to broil.
  • Place the bread cubes on a baking sheet lined with parchment and drizzle over the olive oil. Sprinkle with salt and pepper and toast for 3 to 5 minutes until golden brown. Make sure to watch them so they don't burn. Remove the cubes and switch the oven to 375 degrees F.
  • Melt the butter in a medium skillet over medium heat. Add the carrots, celery, onion and thyme and season with salt and pepper. Saute until softened, about 8 minutes. Remove the vegetables to a large bowl.
  • Add the toasted bread and saltines to the vegetables. Add the stock slowly, tossing gently, until the bread is moist but not too soggy; you may not use all of your stock. Place in a greased 9-by-13-inch baking dish and bake, uncovered, for 45 minutes until golden brown.

Make a simple stuffing filled with herbs, fennel and onions this Thanksgiving.

2 pounds (about 20 cups) country loaf bread
¼ cup extra-virgin olive oil
2 medium yellow onions, finely diced (about 2 cups)
1 medium fennel bulb, cored and finely diced (about 1 cup)
3 celery stalks, finely diced (about 2 cups)
2 garlic cloves, minced
2 fresh bay leaves
Salt and freshly ground black pepper, to taste
½ cup dry white wine
2 tablespoons fresh sage, finely chopped
2 teaspoons finely chopped fresh thyme leaves
¾ cup (1½ sticks) melted unsalted butter, plus more for greasing the baking dish
2 eggs, beaten
3 cups chicken or turkey stock, preferably homemade
1 cup packed fresh parsley leaves, finely chopped

Steps:

  • Tear the bread into small pieces and divide among 2 parchment-lined sheet trays. Let the bread dry out overnight, or bake it at 300° until dry, about 15 minutes.
  • In a large skillet over medium heat, add the olive oil. When the oil is hot, add the onions, fennel, celery, garlic, bay leaves and salt and pepper. Cook, stirring occasionally, until all of the vegetables are tender, 15 to 18 minutes. Add the wine and reduce by half, 2 to 3 minutes. Remove the pan from heat and discard the bay leaves. Transfer the onion mixture to a large bowl.
  • Add the bread, sage, thyme, butter, eggs, stock and parsley to the bowl and toss. If the stuffing feels dry, add more stock as needed.
  • Preheat the oven to 400°. Transfer the stuffing to a greased 4-quart baking dish. Cover with foil and bake for 40 minutes. Uncover, increase the temperature to 475° and bake until golden brown and crisp on top, another 15 minutes. Serve warm.

1 loaf country wheat bread
3 tablespoons unsalted butter
One 8-ounce package sliced fresh mushrooms
2 stalks celery, chopped
1 medium onion, chopped
Kosher salt and freshly ground black pepper
One 8-ounce can sliced water chestnuts, drained and rinsed
2 large eggs
1 cup low-sodium chicken broth
1 tablespoon chopped fresh parsley
1 tablespoon soy sauce
1 lemon, juiced
1 lime, juiced
1 orange, juiced

Steps:

  • Cut the bread into large cubes and spread them onto a baking sheet. Leave them uncovered overnight to get stale.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • Put a large skillet over medium heat and add the remaining 2 tablespoons butter. When it is melted, add the mushrooms, celery and onions and season with salt and pepper. Cook until all the vegetables have softened, 6 to 8 minutes. Let cool for a few minutes.
  • In a large bowl, combine the bread, cooked vegetables and water chestnuts. Toss to combine. In a separate bowl, whisk the eggs with the broth, parsley, soy sauce and citrus juices. Fold into the bread mixture. Sprinkle with salt and pepper. If the mixture seems too dry, add more broth or a little water. Spread the mixture into the prepared baking dish. Can be covered and refrigerated overnight until you are ready to bake. Let it come to room temperature first.
  • Cover the pan with foil and put it into the oven for 20 to 25 minutes. Uncover and cook until the top is browned, about another 20 minutes. Let rest for 5 minutes before serving. Reserve 1 cup for another use if desired, such as the Round 2 Recipe Thanksgiving Pie.

Add salt, pepper, sage, and poultry seasoning. Mix well. Add the beaten eggs and melted butter. Mix well. Reserve 2 tablespoons of the stuffing mixture for the Mushroom Giblet Gravy.

1 pound good-quality day-old white bread, torn into 1" pieces (about 10 cups)
2½ cups chopped yellow onions
1½ cups ¼" slices celery
½ cup chopped flat-leaf parsley

1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme

Steps:

  • Preheat oven to 250°F. Butter a 13x9x2" baking dish and set aside. Scatter bread in a single layer on a rimmed baking sheet. Bake, stirring occasionally, until dried out, about 1 hour. Let cool; transfer to a very large bowl.
  • Meanwhile, melt 3/4 cup butter in a large skillet over medium-high heat; add onions and celery. Stir often until just beginning to brown, about 10 minutes. Add to bowl with bread; stir in herbs, salt, and pepper. Drizzle in 1 1/4 cups broth and toss gently. Let cool.
  • Preheat oven to 350°F. Whisk 1 1/4 cups broth and eggs in a small bowl. Add to bread mixture; fold gently until thoroughly combined. Transfer to prepared dish, cover with foil, and bake until an instant-read thermometer inserted into the center of dressing registers 160°F, about 40 minutes.   • Bake dressing, uncovered, until set and top is browned and crisp, 40-45 minutes longer (if chilled, add 10-15 minutes).
