3 tablespoons butter
8 eggs
¼ cup honey
2 ½ cups milk
1 teaspoon vanilla extract
.66 cup all-purpose flour
½ teaspoon salt
1 cup blueberries
½ teaspoon ground nutmeg
3 tablespoons confectioners' sugar for dusting

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place butter in a 9x13 inch baking dish and place dish in oven to melt butter.
  • In a blender, combine eggs, honey, milk, vanilla, flour and salt. Blend until smooth. Pour over melted butter in hot dish. Sprinkle blueberries on top.
  • Bake in preheated oven 20 to 25 minutes, until puffed and golden. Sprinkle with nutmeg and confectioners' sugar.

1/2 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1-1/2 cups half-and-half cream
1 teaspoon grated lemon zest
3 large egg yolks, lightly beaten
2 tablespoons butter
1 tablespoon vanilla extract
1 can (15 ounces) blueberries
1 tablespoon cornstarch

Steps:

  • In a saucepan, combine the sugar, flour and salt. Gradually add cream and lemon zest until blended. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat. Stir a small amount of hot mixture into egg yolks. Return all to pan; bring to a gentle boil, stirring constantly. Remove from the heat; stir in butter and vanilla. Pour into four parfait glasses or dessert dishes. Cool. , Drain blueberries, reserving juice. Spoon blueberries over custard. In a saucepan, combine cornstarch and blueberry juice until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Spoon over berries.

This tart may take a bit of time to assemble, but it's worth the effort! With a rich vanilla custard sitting atop a cinnamon-y shortbread crust and finished off with a fresh blueberry topping, it's sure to wow! This is also fantastic with a simple shortbread crust, so feel free to omit the cinnamon and cream of tartar from the crust, if desired. Make sure to allow for plenty of time for cooling!

1 ¼ cups all-purpose flour
⅓ cup white sugar
¾ teaspoon ground cinnamon
½ teaspoon cream of tartar
¼ teaspoon salt
10 tablespoons unsalted butter, melted and cooled
1 large egg, at room temperature, separated
1 teaspoon vanilla extract
1 teaspoon water, or as needed
3 large egg yolks, at room temperature
4 tablespoons white sugar
⅛ teaspoon salt
2 teaspoons vanilla extract
1 cup heavy whipping cream
2 cups fresh blueberries
3 tablespoons white sugar
1 tablespoon lemon juice
2 teaspoons cornstarch

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a 9-inch tart pan with a removable bottom.
  • Mix flour, sugar, cinnamon, cream of tartar, and salt for crust together in a medium bowl until combined. Mix in melted butter, egg yolk, and vanilla until combined. Firmly press 2/3 of the mixture into an even layer in the bottom of the prepared tart pan. Sprinkle remaining 1/3 of the mixture around the edges, then press firmly and evenly into the sides of the pan, creating a slightly raised edge over the top. Lightly prick the bottom of the crust with a fork several times, not going all the way through.
  • Mix egg white and water together until combined. Brush a light layer of egg white over the bottom of the crust. Place the tart pan onto a baking sheet.
  • Bake in the preheated oven just until the crust begins to brown, 25 to 27 minutes. Remove from the oven and allow crust to cool for 15 minutes. Leave the oven on.
  • While crust is cooling, make the custard. Whisk together egg yolks, sugar, and salt until thick and light in color. Mix in vanilla extract. Gradually add heavy cream, mixing gently but thoroughly, to avoid incorporating too much air. Carefully pour custard into the cooled crust. (You may or may not have extra; just don't overfill.)
  • Place tart back into the oven and bake until custard is just set and lightly browned, about 30 minutes. Remove from the oven and cool to room temperature, at least 1 hour.
  • While tart cools, make blueberry topping. Place blueberries and sugar in a medium saucepan over medium heat. Cook, stirring occasionally, until berries begin to burst and release their juices, about 15 minutes. Combine lemon juice and cornstarch in a small bowl or measuring cup. Add cornstarch mixture to the blueberries, stirring constantly, and cook until thickened, 1 to 2 minutes. Remove from heat and allow to cool to room temperature.
  • When both the tart and the blueberries have cooled, carefully spoon blueberries over the top of the tart, and spread gently into an even layer. Place tart into the refrigerator and chill for at least 2 hours. Remove sides of tart pan, slice, and serve.

3 cups fresh blueberries
1 (9 inch) prepared graham cracker crust
1 cup all-purpose flour, divided
½ cup white sugar
⅛ teaspoon salt
⅔ cup sour cream
2 eggs
½ cup brown sugar
½ cup cold butter, cut into cubes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread blueberries over the bottom of the graham cracker crust.
  • Mix 1/2 cup flour, white sugar, and salt together in a bowl.
  • Whisk sour cream and eggs together in a separate bowl. Fold in flour mixture. Pour batter over the blueberries.
  • Combine remaining 1/2 cup flour and brown sugar in a bowl. Cut in butter using a pastry cutter or 2 knives until mixture forms coarse crumbs. Scatter crumb topping over the pie.
  • Bake in the preheated oven until custard and topping are golden brown, 50 to 55 minutes. Transfer to a rack and cool completely before serving.

2 cups blueberries
1 baked 9 inch pie shell, well chilled
1 tablespoon flour
1 cup sugar
1 cup evaporated milk
3 large eggs, lightly beaten
1 teaspoon vanilla

Steps:

  • Preheat oven to 425 degrees.
  • Place blueberries in pie crust; set aside.
  • In a medium bowl, mix flour and sugar; gradually add evaporated milk, stirring until smooth.
  • Whisk in eggs and vanilla until blended; pour mixture over blueberries.
  • If desired, sprinkle with a dash each of cinnamon and nutmeg.
  • Bake 15 minutes; reduce heat to 350 degrees.
  • Bake 35 minutes longer.
  • Cool completely before slicing.

  • Add the sugar, eggs, half-and-half or whipping cream, vanilla, liqueur, lemon zest and salt to a blender and pulse several times to blend the ingredients completely. Add the flour and blend on low speed for 1 full minute to form a silky-smooth batter.
  • Pour the batter into the prepared dish then scatter the blueberries evenly across the top of the batter. Place the dish or skillet onto a rimmed baking sheet (just in case it flows over) and bake for 35-40 minutes. The edges will be golden-brown and the center will be firm to the touch or just very slightly wobbly.
  • Remove from the oven and allow to cool slightly before dusting with powdered sugar and serving.
