Blueberry Pineapple Bread image

My favorite recipe from my Auntie Mary, my godmother. So good! I sure do miss her, but every time I make this I think of her.

Number Of Ingredients 12

3 c flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 c corn oil
1 1/3 c sugar
4 eggs
1/2 c milk
1 1/2 tsp lemon juice
1 c crushed pineapple, drained
1 c pecans, chopped
2 cups blueberries

Steps:

  • 1. Sift dry ingredients together. Set aside. In a large bowl combine oil, sugar, eggs, milk, lemon juice and pineapple. Mix thoroughly. Add dry ingredients and blend well. Fold in berries and nuts. Pour dough into 2 greased and floured loaf pans. Bake at 350 degrees for 40 to 45 minutes, until done. Remove from pans at once and cool on rack.

1 ½ cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
⅛ teaspoon salt
½ cup milk
¼ cup vegetable oil
1 egg
½ teaspoon vanilla extract
1 ½ cups blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix flour, sugar, baking powder, and salt in a large bowl. Stir milk, oil, egg, and vanilla extract into flour mixture until batter is just blended. Gently fold blueberries into batter; pour into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes.

I get fresh blueberries from my mom every year and am always looking for new ways to use them. Found this recipe in "The Church Supper Cookbook." I've also made this omitting the pineapple and using 1 cup of blueberries. Best eaten within 24 hours. Credited to Arlene Gilman, Woodstock Baptist Church, Woodstock, NH.

3/4 cup sugar
1 egg
2 tablespoons melted butter
3/4 cup pineapple juice
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup drained crushed pineapple
1/2 cup blueberries (fresh or frozen)
1/2 cup nuts (any kind)

Steps:

  • Combine sugar and egg; cream with butter. Add pineapple juice.
  • Combine flour, salt, and baking powder, and add to sugar mixture; stir in pineapple, blueberries and nuts.
  • Pour into a greased 8x4-inch loaf pan and bake at 350°F for 1 hour.

1/2 cup milk
4 eggs
1/2 teaspoon lemon juice
1 cup crushed pineapple, drained
3 cups flour

2 cups blueberries
1 cup nuts, chopped
1/2 cup flaked coconut (optional)

Steps:

  • Preheat oven to 350F; grease 2 loaf pans.
  • Cream shortening & sugar.
  • Mix milk, eggs, lemon juice & pineapple: add to creamed
  • mixture.
  • Sift together flour, baking powder, soda and salt, beat into

  • Fold in blueberries, nuts & coconut, then pour into loaf pans.

2/3 cup butter, softened
1-1/4 cups sugar blend
2 large eggs
4 large egg whites
1-1/2 teaspoons lemon juice
3 cups all-purpose flour
3-3/4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup fat-free milk
2 cups fresh or frozen blueberries
1 cup canned unsweetened crushed pineapple, drained
1/2 cup chopped pecans or walnuts
1/2 cup sweetened shredded coconut

Steps:

  • In a large bowl, cream butter and sugar blend until light and fluffy. Beat in the eggs, egg whites and lemon juice. Combine the flour, baking powder and salt; gradually add to creamed mixture alternately with milk, beating well after each addition. Fold in the blueberries, pineapple, pecans and coconut. , Transfer to two 8x4-in. loaf pans coated with cooking spray. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1 can (21 ounces) apple pie filling
1 can (8 ounces) unsweetened crushed pineapple, drained
1 package (12 ounces) frozen unsweetened blueberries
1/2 cup sugar
1 package white cake mix (regular size)
2/3 cup butter, melted
1 cup chopped walnuts
1/2 cup sliced almonds

Steps:

  • Preheat oven to 350°. Mix pie filling and pineapple in a greased 13x9-in. baking dish until combined. Toss blueberries with sugar; spoon over pie filling mixture. Sprinkle with cake mix; drizzle with butter. Top with walnuts and almonds (do not stir)., Bake until golden brown and bubbly, 45-55 minutes. Serve warm.
