These bars are always a big hit and are a great way to use those fresh summer berries--though frozen blueberries work just as well. They're especially great with a scoop of vanilla bean ice cream on top.

1 ½ cups all-purpose flour
1 ½ cups quick cooking oats
1 ½ cups white sugar, divided
½ teaspoon ground cinnamon
½ teaspoon baking soda
¾ cup cold butter
2 cups blueberries
2 tablespoons cornstarch
2 tablespoons lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, oats, 1 cup sugar, cinnamon, and baking soda in a large bowl. Cut butter into flour mixture until it resembles coarse crumbs. Reserve about 2 cups flour-butter mixture. Press remaining mixture into the prepared baking dish to form a crust.
  • Bring blueberries, remaining 1/2 cup sugar, cornstarch, and lemon juice to a boil in a saucepan, stirring constantly, until mixture is thickened, about 2 minutes. Spread blueberry mixture over crust and sprinkle with reserved oat mixture.
  • Bake in the preheated oven until topping is just browned, about 25 minutes. Cool before cutting and serving.

1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup shortening
1 egg
¼ teaspoon salt
1 pinch ground cinnamon
4 cups fresh blueberries
½ cup white sugar
3 teaspoons cornstarch

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
  • In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and cinnamon, if desired. Use a fork or pastry cutter to blend in the shortening and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
  • In another bowl, stir together the sugar and cornstarch. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
  • Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.

These blueberry bars have delicate flaky layers of a shortbread-like dough that sandwich together a generous filling made from fresh blueberries. Fresh lemon juice and zest add brightness!

7 ounces all-purpose flour ((1 1/2 cups, 198 grams))
1 teaspoon grated lemon zest
1/2 cup granulated sugar ((3 1/2 ounces, 100 grams))
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
4 ounces unsalted butter, (cold and cut into small pieces)
1 large egg yolk
1/4 cup granulated sugar ((1 3/4 ounces, 50 grams))
2 teaspoons cornstarch
1 tablespoon lemon juice ((approximately 1/2 lemon))
1 teaspoon pure vanilla extract
2 cups fresh blueberries, (washed and picked through)

Steps:

  • Place an oven rack on the center shelf and preheat the oven to 375 degrees F. Grease a nonstick 8x8 inch pan with butter or baking spray.
  • In a medium-sized bowl, whisk together the flour and lemon zest, breaking up any clumps. Whisk in the sugar, baking powder, and salt until evenly combined. Use a fork or pastry blender to cut in the butter and egg. The dough will be crumbly. Press half the dough into the prepared pan.
  • In a separate medium-sized bowl, stir together the sugar, cornstarch, lemon juice and vanilla until smooth. Add the blueberries and gently toss with a spatula to combine. Pour the blueberry mixture evenly over the crust. Crumble the remaining dough over the blueberry layer.
  • Bake for 38-42 minutes, until the top is golden brown and the sides are slightly bubbly. Cool to room temperature before cutting into squares. Depending on the desired portions, these can be cut to 9 larger squares, 16 smaller squares, or 12 medium rectangles.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.

1/2 cup flour
1/2 cup light brown sugar, packed
1/4 teaspoon baking soda
1/8 teaspoon salt
6 tablespoons unsalted butter or 6 tablespoons margarine, melted
1 1/2 cups blueberries, rinsed and drained
3 tablespoons sugar
2 teaspoons cornstarch
1 teaspoon fresh lemon juice

Steps:

  • Oven to 350°.
  • Line an 8" square baking pan with foil, letting ends extend above pan on 2 sides.
  • In a large bowl, mix oats, flour, brown sugar, baking soda and salt.
  • Add melted butter and stir with a fork until evenly moistened (mixture will be crumbly). Reserve 1/2 cup crumb mixture for topping.
  • Press remaining mixture evenly and firmly over bottom of ungreased, foil-lined pan. Bake 12 minute to set crust.
  • Filling: In a small saucepan stir berries, sugar, cornstarch and lemon juice over med. heat until simmering.
  • Simmer, stirring occasionally, until juices are no longer cloudy, about 2 minute.
  • Spoon over crust. Crumble reserved crumb mixture over top.
  • Bake for 30 minute.
  • Let cool completely in pan.
  • Lift foil by ends onto a cutting board.
  • Peel off foil; cut into 2" squares.

1-1/3 cups butter, softened
2/3 cup sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
3-3/4 cups all-purpose flour
FILLING:
3 cups fresh or frozen blueberries
1 cup sugar
3 tablespoons cornstarch

Steps:

  • Cream butter, sugar and salt until light and fluffy, 5-7 minutes; beat in egg and vanilla. Gradually beat in flour. Divide dough in half; shape each into a 1-in.-thick rectangle. Wrap and refrigerate 2 hours or overnight., Preheat oven to 375°. Place blueberries, sugar and cornstarch in a small saucepan. Bring to a boil over medium heat, stirring frequently; cook and stir until thickened, about 2 minutes. Cool slightly., Roll each portion of dough between 2 sheets of waxed paper into a 14x10-in. rectangle. Place rectangles on separate baking sheets; freeze until firm, 5-10 minutes. Place 1 rectangle in a greased 13x9-in. baking pan, pressing onto bottom and about 1/2 in. up the sides. Add filling., Cut remaining rectangle into 1/2-in. strips; freeze 5-10 minutes to firm. Arrange strips over filling in crisscross fashion. If desired, press edges with a fork to seal strips. Bake until top crust is golden brown, 30-35 minutes. Cool on a wire rack. Cut into bars.
