This is a real treat at our house. I don't make them often, but when I do it is usually for the kids' sleepovers. Source: Prevention's Eat Up, Slim Down cookbook.

1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup oat bran
1/2 cup chopped pecans
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup molasses
1 cup boiling water
1 cup non-fat vanilla yogurt
2 large eggs
1 tablespoon canola oil
1 cup fresh blueberries or 1 cup frozen blueberries, rinsed and drained

Steps:

  • Coat a large nonstick skillet with nonstick spray and set over medium heat.
  • In a small bowl, combine all-purpose flour, whole wheat flour, oat bran pecans, baking soda, and salt.
  • In a large bowl, combine molasses and water. Stir in yogurt, eggs, and oil.
  • Pour molasses mixture into flour mixture. Mix just until moistened. Gently stir in blueberries.
  • Pour batter by 1/3 cupfuls into the skillet, making a few at a time.
  • Cook 2-3 minutes, or until bubbly and the edges look dry.
  • Turn and cook 1 minute, or until underside is golden.
  • Serve immediately.

HOMEMADE PANCAKE MIX



Homemade Pancake Mix image

A stack of fluffy, homemade pancakes is only minutes away when you have this mix already in your pantry. The recipe yields 9 cups of pancake mix, enough to make 4 batches of the pancake recipe that follows.

6 1/2 cups all-purpose flour (see Cook's Note)
1 cup cornstarch
1 cup confectioners' sugar
1/4 cup baking powder
1 teaspoon baking soda
2 teaspoons kosher salt
2 1/4 cups Pancake Mix
1 1/4 cups whole milk
3 tablespoons unsalted butter, melted, plus more for serving
1/2 teaspoon vanilla extract (optional; omit if making savory pancakes)
2 large eggs, lightly beaten
Maple syrup for serving

Steps:

  • For the pancake mix: Sift the flour, cornstarch, confectioners' sugar, baking powder, baking soda and salt together in a medium bowl then whisk thoroughly to combine. Store pancake mix in an airtight container or resealable plastic bag in a cool, dry place for up to 3 months.
  • To make pancakes: Preheat the oven to 200 degrees F. Line a baking sheet with two kitchen towels stacked on top of each other and place in the oven. This will keep your cooked pancakes warm.
  • Whisk the milk, butter, vanilla and eggs together in a large bowl. Add 2 1/4 cups pancake mix and whisk vigorously to form a thick batter (it's okay if there are some lumps). Let the batter rest for 5 minutes.
  • Heat a large nonstick skillet over medium heat. (Alternatively, heat a nonstick electric griddle to medium.) Ladle about 1/4 cup of the batter onto the skillet, spreading it into a 4 1/2- to 5-inch round; repeat to make a second pancake. (If using a griddle, make as many pancakes as will fit on your griddle plate at one time.) Cook until the pancakes are golden on the bottom and bubbly on top, 45 to 60 seconds. Flip the pancakes and cook until the undersides are golden and the batter is cooked through, 45 seconds more. Transfer the pancakes to the baking sheet in the oven, tucking them between the kitchen towels. Repeat with the remaining batter to make more pancakes. Serve pancakes with butter and maple syrup.

Steps:

  • Spray electric waffle iron with cooking spray. Heat iron to medium heat.
  • Combine ingredients.
  • Pour amount of batter directed by manufacturer onto grids of waffle iron. Close lid quickly. (Do not open until waffle is done.) Cook according to manufacturer's directions. When done, lift waffle off grid with fork. Repeat with remaining batter.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a large sheet pan or jelly roll pan with parchment paper. Spray the parchment paper with cooking spray.
  • Mix the baking mix, milk, eggs, vanilla extract, and cinnamon together in a large mixing bowl. Pour onto the parchment paper-lined pan. Sprinkle blueberries evenly on top of the batter.
  • Bake in the preheated oven until golden brown, 15 to 18 minutes.
  • Remove the pan from the oven, then lift the parchment paper with the pancake from the pan and set it onto a cutting board. Slice the pancake into squares using a pizza cutter or into your desired shapes with a cookie cutter.

1 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup granulated sugar or 1/4 cup light brown sugar
1/2 cup dried blueberries
2 tablespoons unsalted butter, plus
2 teaspoons unsalted butter
1 egg, beaten
1 1/4 cups milk

Steps:

  • Combine flour, baking powder and salt in a medium bowl.
  • Pour into 1 pint wide mouth jar with tight fitting lid and pack down lightly. Layer maple sugar and dried blueberries attractively. Pack down lightly before adding each layer.
  • Seal jar.
  • Cover top of jar with fabric. Attach gift tag/recipe with raffia or ribbon. Attach large spatula if desired.
  • Add instructions - melt butter in large heavy bottomed skillet or griddle over medium heat.
  • Pour into medium bowl leaving thin film of butter on skillet.
  • Mix beaten egg and milk into butter in bowl; set aside.
  • Pour Blueberry Pancake into large bowl.
  • Stir well.
  • Add liquid mixture and stir to mix (Do not beat).
  • Pour 1/4 cup portions of batter into skillet.
  • Cook over medium heat 2-3 minutes on each side or until golden.
  • Dust with powdered sugar (optional).
